Steps:
- Preheat the oven to 450 degrees F.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil and season with salt and pepper.
- Meanwhile, bring a large pot of salted water to a boil. Heat the remaining 1 tablespoon oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer to a large bowl with a slotted spoon. Add the artichoke hearts and cook, stirring, until warm, about 2 minutes; transfer to the bowl with the pancetta.
- Cook the penne in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce, smoked mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and remaining Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

PASTA WITH TURKEY SAUSAGE, TOMATOES & MOZZARELLA
My mother gave this to me when I got married, because it was one of my favorite dinners that she had made. I like to make it with hot sausage, but regular sausage is fine too. I don't know how big of a package of sausage to use-- she left that part out. I just buy a 1 lb. pkg.

- Cook pasta until al dente. Don’t forget to add salt to the water. Check out how to cook pasta for tips. Drain the pasta and transfer into a large bowl.
- In large skillet, heat olive oil and add the sausage and red pepper flakes. Cook, breaking the sausage up with a spoon until the sausage is browned. Add spinach in batches until what you added is just wilted, then add more until all the spinach is added and just wilted. Don’t cook it down to nothing as it will continue to wilt when the sauce is added and it’s baked. Season with some kosher salt.
- Add the tomato sauce into a large bowl and stir in the oregano. Add the sausage mixture, ricotta, cream, and half of the mozzarella and mix until combined. Taste and add salt and pepper, if needed. Add the pasta and mix until combined.

- When the gnocchi is cooked, use a slotted spoon to remove them from the pot and place them directly into the skillet. Carefully fold together the gnocchi and sauce with a spatula. Serve immediately on warmed plates.
