1 teaspoon Olive Oil
1/2 Brown / Yellow Onion, diced
5 Garlic Cloves, finely diced or minced
2 tablespoon Tomato Paste
400ml / 14.5 oz Tinned Diced Tomatoes
1/2 cup Water
1 teaspoon Dried Italian Herbs, or sub for 1/2 teaspoon oregano & 1/2 teaspoon basil
1/2 teaspoon Red Chilli / Red Pepper Flakes
Salt and Pepper, to taste
1 tablespoon Olive Oil
1/2 Brown / Yellow Onion, diced
2 Mushrooms, grated {I used cup}
2 Mushrooms, chopped {I used cup}
200 grams / 7 oz Penne Pasta
1/4 cup Heavy Cream / Cooking Cream
1/2 cup Pasta Water (reserve before draining)

Steps:

  • Heat 1 tablespoon oil in a saucepan on medium heat, then add 1/2 onion and garlic and sauté until softened. Add diced tomatoes, tomato paste, Italian herbs, chilli flakes, salt and pepper, and mix well to combine. Reduce heat and allow to simmer for 15 minutes.
  • Bring a large pot of water to a boil. Add penne pasta and a pinch of salt and cook until just shy of al dente. Drain pasta, reserving 1/2 a cup of the pasta cooking water.
  • Approximately 5 minutes before the penne pasta has cooked heat the remaining oil in a large frying pan on medium heat. Add remaining onion and sauté until softened. Add mushrooms to the pan and sauté until cooked and tender.
  • Pour prepared tomato sauce into the frying pan, as well heavy cream and reserved pasta water. Drain the penne pasta and quickly add it to the frying pan too. Stir to combine, then cook, tossing regularly, until the sauce thickens and coats the pasta, approx. 1-2 minutes.
  • Serve with a sprinkling of parmesan cheese on top.

1 pound spaghetti
2 tablespoons olive oil (plus a little for drizzling at the end)
1 shallot (chopped)
4 cloves garlic (minced)
10 ounces cremini mushroom (sliced)
1 cup wine (red or white whatever you prefer)
1 14 ounces can crushed tomatoes
a good handful fresh parsley (chopped)
Salt and pepper (to taste)

Steps:

  • Bring a large pot of water seasoned with salt to a boil. Add the spaghetti and cook according to the directions on the box until al dente. Before draining reserve a half cup of the cooking water.
  • Meanwhile, in a large saute pan, heat the olive oil over high heat. Add the shallot; cook until light golden brown, about 5 minutes. Add the garlic cook another minute to soften. Add mushrooms; cook until they release their liquid and it evaporates (about 8 to 10 minutes).
  • Add wine, tomatoes and chopped parsley. Season with salt and pepper to taste. Reduce heat to medium; cook until the consistency of a thick sauce, about 5 minutes.
  • Transfer the drained spaghetti to the skillet with the tomato sauce, toss until coated. If it seems too thick, add pasta water as needed to loosen and serve.

2 medium onions, diced

0.33 cup dry red wine
4 cups torn escarole (optional)
0.75 cup chopped fresh herbs (such as parsley and oregano)
1 28-ounce can crushed tomatoes
1 cup thinly sliced basil leaves
0.5 cup freshly grated Pecorino Romano or Parmesan

Steps:

  • Cook the penne according to the package directions.
  • Meanwhile, heat the oil in a large saucepan over medium heat. Add the onions, ½ teaspoon of the salt, and ¼ teaspoon of the pepper and cook, covered, until the onions are softened, about 8 minutes.

8 ounces dry pasta (I used Toscani-shaped pasta)
Kosher salt
1/3 cup extra virgin olive
1 tablespoon butter
2 shallots (minced)
5 garlic cloves (minced)
8 ounces Baby Bella Mushrooms (sliced)
8 ounces white mushrooms (sliced)
8 ounces portabella mushrooms (roughly chopped)
black pepper
1 teaspoon rosemary
3 tablespoons of tomato paste
¼ cup merlot wine
½ cup of grated Parmigiano-Reggiano (Parmesan)
½ cup packed parsley
1/3 cup chopped walnuts
Red pepper flakes to taste (optional)

Steps:

  • Cook the pasta to al dante in boiling salted water according to box instructions. Keep 1 cup of the pasta cooking water then drain the pasta.
  • In a large skillet, heat the olive and butter over medium-high heat, add the shallots and garlic and cook, tossing regularly for 2 to 3 minutes (manage the heat so that the garlic does not burn).
  • Add all the mushrooms and toss them around in the pan for a couple of minutes, adding another drizzle of extra virgin olive oil. Season with a good pinch of kosher salt, black pepper and the rosemary. Cook the mushrooms for about 7 to 10 minutes, tossing occasionally, until they turn color and release their juices.
  • Add the tomato paste, wine and about ½ to 3/4 cup of the pasta cooking water. Cook over medium heat for about 4 to 5 minutes (this becomes your mushroom pasta sauce).
  • Add the cooked pasta to the mushroom sauce. Toss to combine. If needed add a little bit more of the pasta cooking water.
  • Stir in Parmesan cheese and finish with a sprinkle of parsley, walnuts and red pepper flakes. Serve immediately!

1/2 pound (8 ounces) uncooked penne pasta
1 tablespoon olive oil
1/2 cup chopped white or yellow onion
1 large garlic clove, minced
1/3 pound shiitake mushrooms, stems removed and caps sliced or 4 large white button or cremini mushrooms, sliced
2 tablespoons tomato paste
1/2 cup vegetable or chicken stock/broth
2 medium tomatoes, seeded and chopped or one (14.5 ounce) canned diced tomatoes, drained
1 teaspoon dried basil (or 1 tablespoon chopped fresh)
1 teaspoon dried oregano (or 1 tablespoon fresh)
1/4 teaspoon salt plus more to taste, preferably kosher
Crushed red pepper flakes, to taste (optional)
2 ounces cream cheese, softened and cut into 8 pieces
1/4 cup grated Parmesan cheese
3 cups fresh spinach leaves
1 teaspoon granulated sugar (optional)

Steps:

  • Bring a large pot of water to a boil. Once boiling, add a big handful of salt then add penne. Cook as directed on the package until al dente, about 11-12 minutes. Drain into colander.
  • Meanwhile, make the sauce: In a large skillet over medium heat, heat the olive oil until hot. Add the onion, mushrooms, and a big pinch of salt. Cook until softened, about 5 minutes. Add the garlic and cook 1 minute.
  • Stir in the tomato paste and cook 30 seconds. Stir in the broth, tomatoes, basil, oregano, 1/4 teaspoon salt, and red pepper flakes (if using). Bring to a boil.
  • Once boiling, turn the heat down to low then stir in the cream cheese and Parmesan cheese until melted.
  • Add the spinach leaves and wait 30 seconds before stirring (as the spinach cooks, it'll shrink and be easier to stir). Cook for another 2-3 minutes or until wilted and bright green.
  • Taste and adjust for seasoning. If the sauce is too acidic, add 1 teaspoon sugar. If it needs more salt, add more Parmesan cheese and/or salt.
  • Add the cooked penne to the sauce and stir until coated.

1 ounce dried porcini mushrooms (about 1 cup)
1 tablespoon extra virgin olive oil
1/4 cup finely chopped onion or shallot
2 to 3 plump garlic cloves, minced

1 (28-ounce) can chopped tomatoes in juice, coarsely pureed in a food processor fitted with the steel blade
1 teaspoon fresh thyme leaves, chopped, or 1/2 teaspoon dried thyme
Freshly ground pepper
3/4 pound fusilli or other pasta of your choice

Steps:

  • Place the mushrooms in a bowl or a pyrex measuring cup and cover with hot water. Let soak 15 to 30 minutes, until thoroughly soft. Line a strainer with cheesecloth and set it over a bowl. Drain the mushrooms and squeeze them over the strainer. Then rinse in several changes of water and chop coarsely. Measure out 1/4 cup of the mushroom soaking liquid.
  • Begin heating a large pot of water for the pasta. Heat the olive oil in a large, wide, heavy nonstick frying pan over medium heat and add the onion or shallot. Cook, stirring, until tender, 3 to 5 minutes. Add the garlic and stir together for minute, until fragrant, then add the mushrooms and stir together for a minute or two, until fragrant. Add the tomatoes and their juice, the mushroom soaking liquid you set aside, the thyme, and 1/2 teaspoon salt. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 20 minutes. Add a generous amount of pepper, taste and adjust seasonings. Keep warm.
  • When the pasta water comes to a boil, add a tablespoon of salt and the pasta. Cook al dente, following the timing directions on the package but checking a minute or two before the time on the package. Remove 1/4 cup of the pasta cooking water and stir it into the mushroom sauce. When the pasta is cooked through but still firm to the bite, remove another 1/2 cup water, drain the pasta and toss with the sauce in the frying pan if possible. If you wish to thin out the sauce or moisten the pasta further, add 1/4 to 1/2 cup of the pasta cooking water or more of the mushroom soaking liquid. Serve hot; pass the Parmesan at the table.

2 pounds mushrooms, minced
kosher salt to taste
3 tablespoons olive oil
1 yellow onion, medium, chopped
1 garlic clove
2 basil sprigs
1 bay leaf
1/2 cup white wine, dry
4 cups tomatoes, canned or fresh, crushed, juices reserved
1/4 cup tomato paste
1 pound pasta

Steps:

  • In a large pot, add the minced mushrooms and season with salt to taste. Add the olive oil and heat the mixture on medium. Add the onion, garlic, basil, and bay leaf, stirring over medium for 5 - 6 minutes, or until the onion is soft. Add the wine. Stir to release any of the drippings that are sticking to the bottom of the pan. Allow the mixture to cook for 5 more minutes, or until the wine is mostly evaporated.
  • Add the tomatoes, and tomato paste. Stir well and bring the sauce up to a gentle simmer over low heat for 3 hours. Partially cover the pot and continue to simmer, stirring occasionally and adding the reserved tomato juices or a bit of water if the sauce seems too thick as it cooks. The finished sauce should have a deep, rich red color. The sauce is ready to add to your cooked pasta now, or will store in the fridge for up to 4 days.
  • Bring a large pot of salted water to a rolling boil. Add the pasta at once and follow package directions until pasta is cooked.
  • Drain the pasta in a colander when finished. Shake well and remove any extra water clinging to the pasta. Pour the pasta in a large serving bowl. Add the sauce and toss together until the pasta is evenly coated.

mushrooms - 9 oz (250 g)
butter - 2 tbsp (30 g)
oil - 2 tsp
onions - 1 head
garlic - 1 - 2 cloves

for the tomato sauce
tomatoes - 17.5 oz (500 g)
onions - 1 head
carrots - 1
celery - 1 sprig
basil
sugar
olive oil

Steps:

  • First, prepare the tomato sauce . Heat the olive oil and stew the onion until soft. Add the grated tomatoes, salt, black pepper, 1-2 pinches of sugar and some basil and boil on low heat to thicken (usually about 30 minutes).
  • Heat oil and fry until the chopped onions are golden brown. Add the mushrooms, cut them into pieces and fry for another 3-4 minutes.
  • Pour the finished tomato sauce in and bring it to a boil. Boil the pasta in salted water until soft. Drain out the liquid from the boiling, place the pasta into a deep dish for serving. Serve with butter and pour the prepared tomato sauce on.
  • You can garnish with 1-2 basil leaves.

Steps:

  • Cook pasta: Bring a large pot of water to a boil. Season water generously with salt. Add the pasta and until 1-minute shy of al dente, 8-9 minutes, or according to package instructions.   • Sauté the sliced mushrooms: Heat 2 tablespoons of oil in a large saucepan over medium-high heat until shimmering. Add the sliced mushrooms and cook, UNDISTURBED, for 4 minutes. Stir. Continue to cook, stirring occasionally, for an additional 3-5 minutes or until mushrooms are golden browned and tender. Season mushrooms with salt and pepper.   • Start mushroom sauce: Reduce the heat to medium and add remaining 1 ½ tablespoons of oil to the pan. Add the diced mushrooms. Cook, UNDISTURBED for 2 minutes.   • Deglaze: Add the wine to deglaze the pan, scraping up any browned bits stuck to the bottom of the pan. Simmer until the wine is mostly evaporated.
  • Simmer: Add the tomatoes (and their juices) and the tomato sauce. Bring sauce to a rapid simmer. Reduce the heat to a simmer and stir in ¼ cup of the cheese. Season with salt and pepper. Simmer for 8-10 minutes, or until the sauce is slightly thickened. Stir in half of the basil.
  • Add the pasta & reserved mushrooms to the sauce. Toss for 1-2 minutes or until sauce is thick and coats the spaghetti. If sauce is too thick, add a splash or two of reserved cooking water. Taste and adjust pasta for seasoning with salt and pepper.
  • Serve: Transfer mushroom spaghetti to serving bowls. Garnish with remaining cheese and remaining fresh basil. Enjoy!

2 tablespoons extra virgin olive oil
1/2 small yellow onion (finely chopped)
8 oz container mushrooms (sliced)
3 cloves garlic (minced)
5 oz fresh baby spinach (chopped)
28 oz can crushed tomatoes with basil
1/3 to 1/2 cup heavy cream
salt, crushed red pepper, parmesan cheese (to taste)
Sliced cooked chicken (optional)

Steps:

  • In a large saucepan, heat olive oil over medium heat. Add onions and mushrooms and cook until the onions have softened and the mushrooms are brown, about 10 minutes. Add garlic and chopped spinach and stir for a couple minutes, until the spinach wilts.
  • Add crushed tomatoes and 1/2 cup water. Simmer, stirring occoasionally, while you cook the pasta.
  • Prepare pasta according to package instructions. Right before pasta is done, finish the sauce.
  • Remove the sauce from the heat and stir in cream. Add salt and crushed red pepper to taste. Toss the drained pasta with the sauce and serve with parmesan cheese. If desired, you can top the pasta with sliced cooked chicken breasts.

  • Cook the pasta according to package directions. Reserve ½ cup pasta cooking liquid.
  • Heat the olive oil over medium heat. Add the onion and cook for 4-6 minutes until becoming translucent. Add the garlic and mushrooms and cook for 3-4 minutes. Add the tomatoes with juice, tomato paste, and red pepper flakes. Stir in the cream cheese and Parmesan. Stir to create a creamy sauce. Add the pasta water as needed to thin out the sauce, start with 1-2 tbsp. and add as needed.
  • Add the spinach and cook 3-4 minutes until wilted.
  • Stir in the pasta and fresh basil.

1 pound whole-wheat pasta, cooked al dente according to package instructions
2 tablespoons butter
8 ounces of white button or baby bella mushrooms, sliced
salt and pepper
2 tablespoons olive oil
half a medium red onion, peeled, quartered and sliced
5 cloves garlic, peeled and thinly sliced
2 cups (about 10 ounces) cherry or grape tomatoes, halved
1/2 cup white wine
3 large handfuls baby spinach leaves
optional toppings: 1/4 cup toasted pine nuts and/or freshly-grated Parmesan cheese

Steps:

  • Cook pasta in a large stockpot of generously-salted boiling water according to package instructions. Drain, once it reaches al dente.
  • While the pasta water is coming to a boil, melt butter in a large saute pan over medium-high heat. Stir in mushrooms mushrooms and season with a pinch of salt and pepper. Saute for 4-5 minutes until they are browned around the edges and cooked through, stirring occasionally. Transfer mushrooms to a separate plate, and return saute pan to the heat.
  • Add olive oil to the pan and heat for 30 seconds, or until shimmering. Add the onion and saute for 3-4 minutes, or until mostly soft, stirring occasionally. Stir in tomatoes and garlic and a few generous pinches of salt and pepper, and saute for an additional 2-3 minutes, stirring occasionally. Add in wine, and stir to combine, being sure to scrape up any browned bits on the bottom of the pan. Add in the spinach one handful at a time, stirring it in and waiting 1 minute or so until it is slightly wilted before adding the next batch.
  • Once the spinach is wilted and the pasta is cooked and drained, pour the vegetable mixture in with the pasta and stir to combine. Serve warm, garnished with optional toppings if desired.

1 garlic clove
1 onion
400 g mixed mushrooms
100 ml white wine
4 -5 tablespoons cream (light is fine, too)
salt and pepper

50 g parmesan cheese (optional)

Steps:

  • Clean the mushrooms and cut them into thin slices. Chop onion and garlic.
  • Heat the olive oil in a large skillet. Saute the onion and the garlic for 1-2 minutes and then add the mushrooms. On fairly high heat saute them until nearly all of their liquid has evaporated. Add the white wine and continue cooking on high heat for some minutes.
  • Reduce the heat and simmer gently until sauce has thickened. Now add the cream and season with salt and pepper to taste (you might also like to add some Italian herbs).
  • If you like add the parmesan cheese to get an even creamier sauce.
  • Serve with pasta and enjoy! :).

4 handful penne rigate pasta
1 tomato (big)
1 tsp basil (died, ground or fresh, chopped)
1 tbsp olive oil (extra virgin)
water
½ tbsp salt
230 g mushrooms (or 7 mushrooms)
1 shallot (peeled)
1 cup milk (full fat)
1 tbsp flour (all-purpose)
½ tsp salt
1 tsp black pepper
1 tsp tarragon (dried, ground)
1 tsp dill (chopped)
1 tsp Italian seasoning ((optional))
1 tbsp shredded cheese

Steps:

  • Chop the mushrooms and shallot, leave aside.
  • Scoop out the liquid part with seeds of tomato and discard it. Chop the tomato.
  • Heat pan with olive oil. Add chopped tomato and basil, cook for 5 minutes, stirring until softens.
  • Meanwhile set a pot with salt and water to boil.
  • Remove cooked tomatoes and leave aside in a bowl.
  • Add more olive oil to the pan, if needed. Add chopped mushrooms, shallot and cook on medium heat, stirring, until browned, for about 10 minutes. Add salt, pepper, tarragon, while cooking.
  • When your water is boiling, add a teaspoon of salt, then adjust the heat to medium and cook pasta for 8 minutes or as instructed on the package.
  • After mushrooms are cooked, add a cup of milk and stir in flour. Cook on small heat, stirring for 4 minutes, until slightly thickened and bubbling. Taste and add more salt or pepper, if needed.
  • When your pasta is cooked, drain it in colander and add to a pan. Stir the pasta with sauce for about 1 minute.
  • Remove from the heat and serve pasta with mushroom sauce. Stir in cooked tomatoes, add grated cheese, chopped dills and Italian seasoning on top.
  • Enjoy the comfort dinner!

1 red onion, quartered
4 cloves of garlic
1/2 zucchini
2 carrots, peeled
8-9 oz mushrooms
2 tomatoes
2 tablespoon olive oil
2 tablespoon vegan butter/margarine
1 tablespoon dried basil
1 tablespoon dried oregano
salt and pepper, to taste
16 ounces sieved tomatoes (about 2 cups)
3/4 cup plant based milk
1/2 tablespoon all purpose flour

Steps:

  • Cook pasta according to package directions. Once cooked, drain, rinse and set aside the pasta for later.
  • Separately, process each vegetable (onions, garlic, zucchini, carrots, mushrooms, and tomatoes) in the food processor to chop them finely.
  • Heat olive oil, over medium heat, in a sauce-pan and add the chopped onion and garlic. Cook for about 1-2 minutes or until the onion becomes translucent.
  • Add the chopped zucchini and carrots and cook for another 2 minutes.
  • Then add the mushrooms and cook them for another 2 minutes before adding tomatoes, tomato paste, dried basil, dried oregano, a sprinkle of salt and pepper, vegan butter and sieved tomatoes.
  • Stir well, reduce heat to low, cover sauce-pan with a lid and cook for about 20 minutes, stirring the sauce regularly.
  • Whisk together the plant based milk and flour in a glass measuring cup (or other medium cup/bowl). Then, add the flour-milk mixture to the sauce. Cook for another minute.
  • Add more salt and pepper if necessary and serve with cooked pasta.

  • Boil a kettle of water and score a large cross into each tomato. Place the tomatoes into the boiling water until the skin begins to peel. Remove the skin from the tomatoes.
  • Place the tomatoes into a food blender to make the tomato puree.
  • In a large frying pan or wok, add olive oil and fry the chopped onion until soft. Add the mushrooms and garlic and continue frying until the mushrooms are also soft.
  • Poor in the red wine and continue frying for one minute. Add the tomato puree along with the herbs and simmer for 15-20 minutes until the sauce is of the desired consistency. Season with salt and pepper to taste.
  • Cook the pasta in boiling water for around 4-5 minutes (depends on brand) and then stir into the sauce. Serve imediataly topped with parmesan.

I didn't have a lot of time to cook for my husband Lulu, so I made a quick and easy mushroom tomato pasta sauce to go with pan-fried store-bought ravioli. Finished with a dash of cream, it's just homemade enough to be proud of!

1 (14.5-ounce) can diced fire-roasted tomatoes
2½ cups button mushrooms
½ yellow onion, chopped
2 cloves garlic, finely minced
1 tablespoon salt
2 tablespoons olive oil
1 tablespoon salted butter
8 ounces store-bought ravioli
¾ cup vegetable broth
2 tablespoons heavy cream
¼ teaspoon black pepper, freshly ground
3 sprigs fresh oregano
2 tablespoons flat-leaf parsley leaves, coarsely chopped

Steps:

  • Boiling the ravioli: Bring about 3 quarts of water to a boil. Add the ravioli, bring back to a boil, then immediately lower the heat to a gentle boil. That way the pasta will cook all the way through. Cook the pasta for about 3-4 minutes total until the ravioli floats to the surface. Drain (do not rinse) and let stand in a colander.
  • Making pasta sauce: Finely chop 1 cup mushrooms and cut the rest into thick slices lengthwise. Heat the oil in a large pot. Add the onions and oregano and cook over low heat for about 8 minutes, stirring frequently to prevent the onions from burning, until the color is evenly golden brown. Add the chopped mushrooms and sauté for 2 minutes. Add the tomatoes and vegetable broth; bring the sauce back to a boil, then simmer for 20 minutes, stirring occasionally, until the sauce thickens. Discard the oregano. Using an immersion blender, purée the sauce until smooth. Season with salt and pepper. Set aside.
  • Cooking the mushrooms: In a large non-stick pan, heat 1 tablespoon olive oil. Add the garlic and sauté them until fragrant. Add the sliced mushrooms and sauté for 2-3 minutes. Transfer to a plate.
  • In the same pan, heat 1 tablespoon oil. Add butter and the ravioli. Toss them by moving the pan in a circular motion (the pan should be lifted at a low angle to facilitate the movement). Season with salt and pepper. Add the mushroom tomato sauce to the pan. Bring to a boil and add a dash of cream. Add parsley. Add the mushroom slices, cover and decrease the heat; let simmer for about 5 minutes. Adjust seasoning if necessary.
  • Serve warm.
