RIDICULOUS GLUTEN FREE CHOCOLATE HAZELNUT CAKE
This is not an easy recipe, but it is certainly not hard either. The good news is the baking and prep time are not bad - 20 min prep and 35 minutes baking. The effort is pretty typical for a 'from scratch' cake. But a cake this good? I didn't believe it myself until I had some. Make it...eat it...enjoy it.

Steps:
- preheat oven to 375. Spray entire inside of springform pan with cooking spray.
- grind 1 1/2 cups of your hazelnuts (you can use a mini chop prep, food processor, even a coffee grinder).
- cut butter into small pieces and melt butter and chocolate chips in a metal bowl over a pot of simmering water (I simply used my metal mixing bowl from my stand Kitchenaid mixer over a pot of water). Stir occasionally until melted and cool slightly.
- using same bowl (if you can) beat in sugar and eggs one at a time. Mix for a couple minutes.
- mix in vanilla and salt, and gradually add your ground hazelnuts. Sift in cocoa and beat another couple minutes.
- pour into pan and bake for 35 minutes. Cool to room temperature. Refrigerate for 2 hours and then remove side of pan. Move to serving platter and sift powdered sugar over top.
- serve with whipped cream and the remaining 1/2 cup of chopped hazelnuts.

- Melt chocolate and butter in a double boiler. Set aside.
- Preheat the oven to 350°F/360°C degrees.
- Whip egg whites until a stiff peak forms. Set aside.
- In another bowl, mix egg yolks and sugar. Add the chocolate and butter mixture and mix.
- Mix in the hazelnut meal, cocoa powder, and liquor (if using) and mix.
- Fold in the egg whites and mix. Pour in a 7-inch springform pan.
- Bake for 30 minutes.
- Cool and refrigerate for several hours or overnight. Sprinkle powdered sugar on top using a small strainer.
- Infuse love, slice and serve!

FLOURLESS HAZELNUT MASCAPONE CHOCOLATE CAKE (GLUTEN-FREE)
It gets more moist and tastes better if you make the cake on the day before, wrap with plastic wrap and store at room temperature overnight. For heart shape dusting, draw a big heart on a piece of parchment paper using a pencil and cut the heart out. Place the heart in the center of the baked cake and dust cocoa powder around it. Discard the heart paper and place the remaining paper on the cake aligning with the heart shape. Dust powdered sugar to create a white heart in the center.

- If you are using whole hazelnuts, preheat the oven or oven toaster to 350ºF/180ºC. If you are using hazelnut meal, skip to step 4.
- Toast the whole hazelnuts for about 10 minutes until fragrant. Set aside and cool.
- Place the cooled hazelnuts in a food processor and grind to make hazelnut meal. Do not over-process. If you do, it will turn into nut butter.
- In a small pan, melt butter and chocolate under very low heat.
- Preheat oven to 350ºF/180ºC. Spray oil inside a 9-inch springform pan.
- In a bowl, beat mascapone cheese until creamy. Add sugar and beat again.
- Add eggs and beat until creamy.
- Add the chocolate mixture, vanilla and liquor (if using) and mix well.
- Add hazelnut meal, salt, and cinnamon and mix well.
- Bake for about 40 - 45 minutes. Set aside and cool.
- When the cake is cooked, remove the pan and place the cake on a cake plate.
- Dust cocoa powder and powdered sugar using a stencil (see note above).
- Infuse love and serve with whipped cream and/or ice cream if desired.

- First, make the cake. Heat oven to 170C/150C fan/gas 3. Grease and line a 23cm loose bottomed cake tin with baking parchment. Put the chocolate in a heatproof bowl set over a pan of barely simmering water. Allow the chocolate to slowly melt, then set aside to cool a little.
- Meanwhile, blitz the hazelnuts in a food processor until roughly chopped, then add the sugars and blitz again to a fine, sandy consistency. Tip into a mixing bowl and add the 1 whole egg and 5 egg yolks. This will be a very stiff batter, but with a bit of elbow grease, it will combine. When well incorporated, beat in the melted chocolate.
- Put the remaining egg whites in a clean bowl and whisk until they form medium peaks. Scoop a quarter of the egg whites onto the batter and beat it in to incorporate, then gently fold in the rest. Pour the batter into the prepared tin and bake for 35-40 mins. A skewer inserted in the centre should come out reasonably clean, but the best indication that it is done is a smooth top with perhaps a few cracks, and a subtle springiness to the cake when gently prodded. Remove the cake from the oven and allow to cool completely in the tin.
- To make the ganache, put the chocolate in a heatproof bowl. Put the cream and butter in a small saucepan and heat until the butter melts, but don't let it boil. Pour it over the chocolate and leave for 1-2 mins to melt, then stir to form a smooth, glossy ganache. When the cake has cooled, remove from the tin and place it on a cake stand or platter. When the ganache has cooled to a spreadable consistency, spread generously over the entire surface of the cake - as neatly or as messily as desired.
- To make the hazelnut spikes, place a large saucepan over a medium heat to get hot. Add the sugar and continue heating until dissolved. Increase heat and bubble, swirling the pan from time to time, until the caramel turns a gorgeous amber colour - but don't stir as this will cause the caramel to crystallise. Remove the pan from the heat and allow the caramel to cool and thicken to the consistency of golden syrup - if it sets too solid, simply place it over a low heat to melt again.
- Use a cocktail stick or wooden skewer to push into each hazelnut - make sure that you don't push it in where the seam is or the hazelnut will split. Place a sheet of baking parchment on the floor directly underneath your work surface - this will catch any drops of caramel. Dredge the hazelnut through the thickened caramel, coating it very generously indeed. Secure the cocktail stick to the work surface with some sticky tape or wedge under a heavy pan, so that the caramel covered hazelnut hangs over the edge. Allow the caramel to drip, like a stalactite, towards the floor and set hard. Repeat with all the hazelnuts and allow the caramel to set. When hardened, use scissors to gently trim the fine threads of caramel off the more robust, decorative spikes. Arrange the hazelnuts, spikes pointing up, in the centre of the cake.
