VEGAN BLACK BEAN QUESADILLAS

I was inspired to make this after looking around at the other quesadilla recipes on here. So I took a few ideas and kind of smooshed them together to make this amazing meal. I fed it to my non-vegan friends who told me it's the best food I've ever made. **A tip for the soy cheese**-grate the cheese and set it aside before you start cooking. Letting it warm up to room temperature will help it melt a lot easier (and evenly!) in the oven.

1 1/2 cups dried black beans
1 white onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tomatoes, seeded and chopped
1 (15 ounce) can sweet corn, drained and rinsed
1 cup fresh cilantro, chopped
2 garlic cloves, minced
1 tablespoon vegetable oil
1 teaspoon ground cumin
1 -2 teaspoon chili powder
1/2 teaspoon sea salt
10 ounces soy cheddar cheese, finely grated (Follow Your Heart brand is best)
8 large flour tortillas
cooking spray (to coat tortillas) or vegetable oil (to coat tortillas)

Steps:

  • To prepare the beans, rinse them off and pour them into a large bowl or tupperware container. Cover with at least 3 inches of water and let soak for 1-3 days. If they smell or get a foam on top of the water, that's ok, it's gases escaping from the beans. After the soaking is done, drain the beans and rinse them off. Pour into a pot, cover with water, and simmer for 1 hour or until the beans are soft when you bite into them.
  • After the beans are done cooking, pour into a colander to drain. Heat the oil in a large, deep pan over medium heat. Add the garlic and onions and saute until the onions are softened.
  • Next, add the peppers, beans, tomatoes, cumin, chili powder and salt. Stir well and cook for 5 minutes or until the vegetbles are softened.
  • Finally, add the corn and cilantro, stir well to combine and cook for another few minutes.
  • Preheat the oven to 425°F.
  • Lay 2-3 tortillas on a cookie sheet lined with foil. Spoon the bean mixture onto half of each tortilla, top with the grated soy cheese, and fold the other half of the tortilla over. Either spray the top of the quesadilla with cooking spray, or dip your finger in vegetable oil and smear over the top.
  • Do this with each tortilla and bake in the oven for 5-15 minutes, until the cheese is melted and the top of the quesadilla is golden brown. Remove from the oven and let it rest for 5 minutes before cutting into thirds. Serve with vegan sour cream and a side of Spanish rice.

1 (15 ounce) can great Northern beans, drained and rinsed
¾ cup diced tomatoes
1 clove garlic
⅓ cup nutritional yeast
1 teaspoon ground cumin
¼ teaspoon chili powder
salt to taste
1 pinch cayenne pepper, or to taste
½ cup black beans, drained and rinsed
¼ cup diced tomatoes
1 tablespoon olive oil, or as needed
8 whole grain tortillas
cooking spray

Steps:

  • Blend great Northern beans, 3/4 cup tomatoes, and garlic in a food processor until smooth; add nutritional yeast, cumin, chili powder, salt, and red pepper flakes and blend again.
  • Transfer bean mixture to a bowl. Stir black beans and 1/4 cup tomatoes into bean mixture.
  • Heat olive oil in a skillet over medium-high heat.
  • Place a tortilla in the hot oil. Spread about 1/4 cup filling onto the tortilla.
  • Place another tortilla on top of filling; cook until filling is warmed, about 10 minutes.
  • Spray the top tortilla with cooking spray and flip quesadilla to cook the second side until lightly browned, 3 to 5 minutes. Repeat with remaining tortillas and filling.

So much flavor packed into these simple quesadillas! Creamy butternut squash roasted with chipotle peppers, black beans, a good hit of lime and fried up golden-crisp - so good. Don't forget the Avocado Crema sauce on the side!

3 cups cubed butternut squash (about 1/2 of a small butternut squash; roughly 3/4-inch cubes)
2 tablespoons chipotle peppers in adobo sauce, minced (from a 7-ounce can of chipotle peppers in adobo; save the rest for another use)
1 tablespoon olive oil
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
8 flour tortillas
1 batch roasted chipotle butternut squash
1 1/2 cups black beans
1 each lime (halved, for squeezing over the filling before cooking)
4 tablespoons olive, vegetable, or canola oil
avocado crema or your favorite salsa for serving

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Place cubed butternut squash in a medium bowl and add minced chipotles in adobo, olive oil, salt, and pepper. Toss until chipotle is well-distributed. Pour squash onto a large rimmed baking sheet and spread into a single layer. Place in oven.Bake, stirring once or twice, 25-30 minutes until fork-tender and golden in places. Pull from oven and set aside.
  • Place a large saute pan over medium heat to warm up while you assemble your first quesadilla.
  • To assemble the quesadillas, lay out one flour tortilla. Add 1/4 of the squash. Using a fork, mash the squash. Add 1/4 of the beans. Squeeze some lime juice over the beans and squash and cover with the second tortilla, pressing down to help the quesadilla hold together. Repeat with remaining three quesadillas.
  • Cook, one at a time. Add 1 tablespoon of oil to the hot pan. Use a spatula/turner to distribute the oil around the entire surface of the pan. When the oil is hot, carefully transfer the quesadilla to the pan and cook until the tortilla is puffed and golden, then flip, cooking the other side until puffed and golden.
  • Use the spatula to transfer the quesadilla to a cutting board and, using a chef's knife, cut into wedges. Transfer to a plate and serve with avocado crema or salsa.
