MACARONI PUDDING
A savory dessert dish with a special, comforting flavor, this macaroni pudding is super easy to make and no special cooking kills are required. Kids and picky eaters will absolutely love this special pasta pudding, loaded with delicious sheep's cheese and egg and flavored with vanilla and lemon!

Steps:
- Boil the pasta, 3 minutes less than indicated on the package. The past will continue cooking in the oven later. Add a pinch of salt and a few drops of oil to the boiling water to prevent the pasta from sticking together. Drain and rinse in cold water.
- Pour the oil over the pasta and stir well.
- Pre heat the oven at 340 F.
- Grate the cheese and mix with macaroni.
- If using, rinse raisins in hot water.
- In a deep bowl beat 5 eggs, sugar and vanilla sugar. Beat well with a fork.
- Add the lemon zest and lemon juice and mix well.
- Add the egg mixture to the macaroni and cheese and mix well to spread evenly. Leave some egg mixture aside for coating the top.
- Add raisins if you opted for and mix one more time.
- Generously coat the baking dish with butter.
- Transfer the pasta to the baking dish, even out using a tablespoon, add the rest of the egg mixture and bake until light brown, 25-30 minutes.
- Leave to cool in the baking dish, then cut into bars with a sharp knife. This recipe can be served hot or warm too but will break a little when removing from the baking dish (in fact, we love it hot, straight from the oven!)
NOODLE PUDDING
This baked pudding is also called kugel. It's made with noodles and often eaten during Jewish holidays. Serve it as a side dish with meat and vegetables.

- Preheat oven to 375 degrees. Butter a 9-by-13-inch baking dish. In a large pot of boiling salted water, cook noodles until al dente, according to package instructions. Drain, and cool.
- In a large bowl, whisk together cream cheese, sour cream, cottage cheese, milk, sugar, and eggs until smooth. Toss mixture with noodles, coating evenly. Season with salt. Transfer noodle mixture to prepared dish; dot with butter. Bake until golden, 45 to 50 minutes.

- Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, beat the cream cheese, butter and sugar until smooth. Beat in eggs. Gradually stir in milk and apricot nectar., Drain noodles; place in a large bowl. Add cream cheese mixture and toss to coat. Transfer to a greased 13x9-in. baking dish., Combine the topping ingredients; sprinkle over noodles. Bake, uncovered, for 25-30 minutes or until a thermometer reads 160°.

You can add a tablespoon of raisins or diced dried fruit to this dish for added flavor. It's similar to a rice pudding type of dessert.

Steps:
- Cook pastina in boiling salted water until al dente.
- Drain and return to saucepan.
- Add in the cream and 2 tablespoons of the sugar.
- Stir over low heat until hot and thickened, about 2 minutes.
- Stir in butter.
- Spoon into bowls.
- Combine the remaining sugar and cinnamon to sprinkle over top of pudding.
GROWN UP ALPHABET PASTA
Steps:
- Melt the butter over high heat in a saucepan. Add the shallot and cook, stirring often, until golden brown, about 6 to 8 minutes. Cook's Note: Be attentive to this. You don't want any brown crispy shallot edges.
- Reduce the heat to medium, and add 2 tablespoons butter along with the alphabet pasta. Cook, stirring often, until the pasta is coated in the butter and is light and golden, about 2 minutes.
- Add 1 cup chicken stock, and bring everything to a boil. Let the liquid get incorporated, then once absorbed add another 2 cups or more stock about a cup at a time. Continue boiling, stirring all the while, until the pasta absorbs the stock, about 10 minutes. If the mixture becomes too thick before the pasta finishes, pour in a little more stock or water.
- Stir in the grated Parmesan, salt and pepper to taste.
- Check the pasta's consistency, and add more stock, if needed. Cook's Note: You are looking for a slightly loose consistency with the pasta having a bit of a bite in its center.
- Fold in the chopped parsley, and add a bit more salt and pepper, if needed.
- Transfer the pasta to warm shallow soup bowls alongside Fried Chicken.
VANILLA PUDDING

- In medium double boiler, cook sugar, cornstarch, milk and salt. When mixture begins to thicken, add part of mixture to egg yolks; mix well, then pour egg mixture back into mixture in double boiler.
- Cook until thick; take off stove, then add butter and vanilla.
- You can use as pudding and top with Cool Whip or use pudding with bananas for banana pudding You can also add 2 unsweetened chocolate squares at the beginning and make a chocolate pie or pudding.
- For butterscotch pie or pudding, use 3/4 cup light brown sugar firmly packed and 1/4 cup sugar instead of 3/4 cup sugar, then cook as directed.
- You can also make a banana plate pie with the vanilla mixture, just cook as directed.
- In baked pie shell, line bottom with bananas; pour a layer of pudding, then a layer of ba nanas, then pudding.
- You can top with Cool Whip or meringue.
