PARMESAN-STUFFED CHICKEN BREASTS
These crisp, flavorful baked chicken breasts are stuffed with a mixture of parsley, breadcrumbs, and Parmesan.

- Preheat oven to 450 degrees. In a small bowl, mix parsley, breadcrumbs, Parmesan, and zest. Season with 1/4 teaspoon each salt and pepper.
- Divide parsley mixture into four mounds. Carefully loosen chicken skin with fingers; tuck parsley mixture under skin. Season chicken with salt and pepper. Place in a 9-by-13-inch roasting pan.
- Bake until skin is crispy, chicken is cooked through, and an instant-read thermometer inserted in the thickest part of the meat registers 165 degrees, about 30 minutes.

Steps:
- Preheat the oven to 350°F.
- Separate skin from the body of the chicken.
- In a bowl, mix olive oil, oregano, basil and salt.
- Rub 3/4 of the mixture between the skin and the meat of the chicken. Rub the rest into the skin.
- Put slices of lemon and cloves of garlic into the chicken.
- Stuff the bunch of the parsley into chicken's rear, stalk first, press it in firmly so that as much parsley as possible would get inside. You will still have a healthy bunch of leaves outside, that's fine.
- Pour the sea salt onto the cooking sheet, spread evenly, like sand on the beach.
- Place the chicken on the salt (with the back downwards).
- Bake for about one hour or until the skin is nicely crispy.

Steps:
- Preheat oven to 375ºF.
- In small mixing bowl combine green onion, parsley flakes, salt, pepper and garlic powder.
- Set aside.
- Place one piece of cheese in center of each chicken breast.
- Top with one-fourth of onion mixture. Starting at narrow edge, roll each breast tightly, tucking in sides to enclose cheese and onion mixture.
- Dredge with flour.
- In small bowl combine breadcrumbs, Parmesan cheese, salt and pepper.
- Dip each rolled breast in beaten egg, then in crumb mixture to coat.
- Spray a 9 x 9 x 2-inch pan with Crisco No Stick Cooking Spray.
- Generously spray each of coated breasts with Crisco No Stick Cooking Spray and arrange in pan.
- Bake for 30 to 35 minutes, or until golden brown.

- Place the lime juice, cilantro or Italian parsley, garlic cloves, sugar, cumin, turmeric, black pepper, and salt in a food processor and give it a few good chops. Preheat oven 375°F. - Put the couscous and spice mix in a small heatproof bowl and pour over 50ml hot water. Cover and set aside for 5 mins. Fluff the grains up with a fork, then stir in the apricots, pine nuts and parsley. Season with salt and pepper.
- Heat oven to 190C/170C fan/gas 5. Make a large slit down one side of each chicken breast to form a pocket. Stuff the couscous mixture inside, then sit the chicken in a small roasting tin.
