CRANBERRY NOODLE KUGEL
A gluten-free recipe . I stock up on the Kosher for Passover noodles during Passover as they are rice and gluten free. But it is just as good with regular noodles.

Steps:
- Preheat oven to 350f. Bring a large pot of water to a boil. Cook noodles until tender, remove from heat and drain, rinse with cold water. Oil a 9x13 pan.
- In a blender, combine all remaining ingredients except cranberries. When blended. Pour liquid over noodles and add cranberries. Stir well until combined and pour into greased pan. Dust with additional sugar and cinnamon.
- Bake 35-45 minutes until top is golden and egg mixture is slightly firm. Allow to cool for 15 minute before serving.

Steps:
- Preheat oven to 350 degrees.
- Cook noodles uncovered in a large pot of boiling salted water over high heat about 4 minutes or until nearly tender but firmer than usual.
- Drain, rinse with cold water, then drain well again.
- Transfer to a large bowl.
- Heat 3 to 4 tablespoons oil in large skillet over medium-low heat.
- Add onions and saute about 20 minutes or until very tender and light brown, (but not burned!) stirring occasionally.
- Add salt, pepper, and 1 teaspoon paprika, and saute about 5 minutes or until well browned.
- Cool slightly.
- Stir onion mixture into noodles.
- Adjust seasoning, mixture should be seasoned generously.
- Add eggs and mix well.
- Oil a 2 quart baking dish and add noodle mixture.
- Sprinkle with remaining tablespoon oil, then dust with paprika.
- Bake uncovered 1 hour or until set.
- Serve from baking dish.

This is really tasty- a bit lighter than other noodle kugels. Non-dairy. I like this as a side dish.

Steps:
- 1. Cook noodles, in slated water, until soft. Then drain noodles, rinse lightly and return to pot. Keep off stove.
- 2. Add, to same pot, margarine, apples, raisins, apricot preserves and sugar. Mix well.
- 3. Add eggs, and mix well.
- 4. Pour into 9x9 inch pan ( presprayed with non-stick spray).
- 5. Bake at 375 degrees f, covered with foil for 40 minutes then remove foil and bake 15 minutes more.

PEACH NOODLE KUGEL
This recipe was given to me by a friend many years ago. It's a really yummy and creamy noodle pudding with just the right amount of sweetness... and the peaches make it perfect! I could eat the leftovers for breakfast, lunch, and dinner (and for snacks in between!). Enjoy!

Steps:
- Boil noodles.
- Meanwhile, put sugar, vanilla, peaches, butter, and eggs together in a large bowl. Mix well.
- Drain noodles. Add to mixture. Mix well.
- Spray 9" x 11" dish with nonstick cooking spray. Pour mixture into dish and level. Cover with cinnamon.
- Bake uncovered at 375° for 1 hour to 1 hour 10 minutes.

- Beat egg yolks and add sugar, vanilla, juice, apples and wine. Blend into noodles thoroughly.
- Beat egg whites until stiff and fold into noodle mixture.
