SOPA DE FIDEO RECIPE

Sopa de fideo is the ultimate Mexican comfort food and is super easy to make.

Number Of Ingredients 14

4 Roma Tomatoes
1/4 White Onion
3 Cloves Garlic
3 Peppercorns
1 Jalapeno (Optional)
1 Tsp Oregano
1/4 bunch Fresh Parsley
1/2 Tsp Ground Cumin
7 oz Fideo pasta (or other thin pasta such as angel hair)
1 Potato (Cut into cubes)
1 Chicken Breast (Cooked and shredded)
Salt (to taste)
1 1/2 Tbsp olive oil
4 Cups Chicken Broth

Steps:

  • Roast the tomatoes, onion, garlic, and jalapeno in a frying pan until browned.
  • Saute the fideo pasta with 1 1/2 tablespoons of oil until lightly browned (5-7 minutes), moving constantly
  • Add the roasted tomato, onion, garlic and jalapenos from above to a blender along with the peppercorn, salt, oregano and cumin and blend until smooth. Strain the resulting liquid and add to the pan with the fideo pasta and stir constantly for about 3 minutes.
  • Add the potatoes and add 4 cups of chicken broth. Bring to a boil and cook for about 10 minutes.
  • Add the shredded chicken and the parsley. Let boil for another 10 minutes.
  • Serve hot and garnish with fresh lime juice, and additional jalapeno slices.

This fideo pasta with vegetables is easy to make and can be enjoyed as a side dish or light meal.

Number Of Ingredients 16

1/2 medium size onion (white or yellow) (peeled and coarsely chopped (about 2-inch size pieces))
1 medium size red or green bell pepper (coarsely chopped in about 2-inch size pieces)
1 whole zucchini (Italian Squash) (cut into bite-size pieces)
1 whole serrano hot pepper (stem and seeds removed, and diced)
1 large clove garlic (peeled and diced)
2 tablespoons olive oil
1 package (7 ounces) fideo (short pieces of vermicelli noodles)
3 cups beef broth
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt (or salt to taste)
1 can (14.5 ounces) cut tomatoes
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh oregano (or 2 teaspoons dried oregano leaves)
2 tablespoons chopped fresh cilantro
1 whole lime

Steps:

  • Heat a large skillet on medium heat and add olive oil. To the pan, add onion, red bell pepper, and Serrano peppers.
  • Sauté and stir the vegetables as they cook for 5 minutes. Then add the noodles and garlic, and stir them in with the oil and veggies.
  • To the pan, add the uncooked fideo noodles and garlic. Continuously stir all ingredients.
  • Continue stirring until most of the noodles turn a light golden brown color.
  • Then to the pan, add the cut tomatoes, beef broth, zucchini, oregano, cumin, salt and pepper.
  • Stir together and turn the heat down to low.
  • Cover the pan with a lid for about 8 minutes or until the liquid is absorbed by the noodles.
  • When the liquid is absorbed by the noodles stir in grated Parmesan cheese, lime juice and chopped cilantro.
  • Do a taste test and add more salt if needed. Serve warm as a side or main dish.

2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves
1 (12 ounce) package spaghetti noodles, broken in half
5 roma (plum) tomatoes, chopped
1 large onion, chopped
½ tablespoon ground cumin
2 ½ teaspoons chili powder
salt and pepper to taste
1 ½ cups water
1 cup shredded Cheddar cheese

Steps:

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Cook chicken breasts in the oil until nicely browned on the outside. Remove from the skillet and set aside.
  • Add remaining oil to the skillet, and add the broken spaghetti. Cook, stirring constantly until spaghetti is browned. Drain off any excess oil, and add tomatoes and onion. Dice the chicken breasts, and return them to the skillet. Season with cumin, chili powder, salt and pepper. Pour in water, cover, and simmer over medium-low heat until pasta is tender, and water has been absorbed, about 10 minutes. Check towards the end, and add more water if necessary.
  • Spoon the chicken mixture into bowls to serve, and garnish with shredded cheese.

SHORT CUT MEXICAN FIDEO (VERMICELLI)



Short Cut Mexican Fideo (Vermicelli) image

This fideo is simple, quick and delicious. It's great as a light meal or side dish. There are many ways to prepare fideo but for me, this is the quickest. You can add some tomato sauce and a dash of cumin when you add the chicken stock for extra flavor. Add less water if you want drier pasta.

1 tablespoon canola oil
2 tablespoons minced onion
7 ounces vermicelli pasta
4 cups chicken stock
2 cubes tomato-flavored bouillon

Steps:

  • Heat the oil in a large sauce pan over medium-high heat. Cook and stir the onion in the hot oil for 1 minute. Stir in the vermicelli and cook until golden brown, about 3 minutes. Add the stock and bouillon cubes; cover. Simmer until the vermicelli is tender, 10 to 11 minutes.

This fideo recipe was given to me by my mother in-law. It goes great with any meat dish including carne asada. I use this recipe in place of rice as my side dish.

2 tablespoons vegetable oil
1 (8 ounce) package fideo pasta
½ teaspoon ground cumin
½ teaspoon garlic salt
1 (8 ounce) can tomato sauce
1 tablespoon chili powder
1 ½ cups water

Steps:

  • Heat oil in a saucepan over medium-high heat. Add the fideo, and fry until browned. Pour in half of the can of tomato sauce, and 1 cup of the water. Season with cumin, garlic salt and chili powder, and stir to blend. Bring to a boil, and cook until the liquid has almost evaporated.
  • Stir in the remaining tomato sauce and water. Cover, and cook over medium heat for about 10 minutes, or until the fideo is tender, and the sauce has thickened.
