1 1/2 cup parsley (1 bunch, roughly chopped)
1/2 cup red onion (thinly sliced, into 1/4 half moons)
2 Roma tomatoes (seeded and diced)
1/4 cup feta (crumbled)
2-3 Tbsp currants (died or dried cranberries also work well)
4-6 mint (fresh chopped)
1 green chili (minced, fresh chopped, jalapeño will work: cored and seeded)
3 Tbsp olive oil
1/4 tsp Kosher salt
1 Tbsp lemon (fresh squeezed)
1/8 tsp. pepper (cracked)
1/8 tsp sumac

Steps:

  • In a small bowl mix together olive oil, lemon juice, salt, pepper and sumac. Whisk vigorously to combine.
  • In a salad bowl toss together parsley with the rest of the ingredients.
  • Add the olive oil mixture and toss until completely coated.
  • Serve immediately.

2 small English cucumbers, thinly sliced
1 cup thinly sliced red onion
2 tablespoons white wine vinegar or rice vinegar
1 tablespoon white vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sesame oil

Steps:

  • Place all ingredients in a bowl; toss to combine. Refrigerate, covered, about 1 hour. Serve with a slotted spoon.

1 lemon, juiced

8 red radishes, thinly sliced
2 Delicious apples, quartered cored and thinly sliced
1/2 European seedless cucumber, thinly sliced

Steps:

  • Combine sugar, lemon juice, and sour cream in a medium bowl with a fork. Add radishes, apple, and cucumber.
  • Turn vegetables and fruit in dressing to coat. Season with dill, salt, and pepper, toss again; serve.

1 large red onion , peeled
1 tbsp olive oil
1 large bunch curly parsley (about 50g/2oz)
1 bunch flatleaf parsley (about 25g/1oz)
1 bunch of radishes , well rinsed
1 tbsp balsamic vinegar
1 tsp Dijon mustard
3 tbsp extra-virgin olive oil
2 tbsp groundnut oil (or vegetable oil)

Steps:

  • Cut the whole onion into paper-fine slices. Heat the oil in a medium-sized frying pan over a high heat. Tip in the onion and fry for 4-5 minutes, stirring almost constantly to break up the rings. When the onion is saggy and the oil has been absorbed, remove the pan from the heat and leave the onion to cool.
  • Strip off the little sprigs of parsley, discarding the main stalks or saving them for a stock. Slice the radishes finely.
  • To make the dressing, pour the vinegar into a small jug, add the mustard and season well. Whisk thoroughly to combine, then pour in the oils and continue whisking to a thickish emulsion.
  • Toss the parsley, radishes and onion together; pour over enough dressing to finely coat the leaves. Serve immediately.

500g radish , quartered
1 celery heart, sticks cut into 1cm pieces
1 large red onion , thinly sliced
bunch flat-leaf parsley , roughly chopped
3 tbsp lemon juice
6 tbsp rapeseed oil

Steps:

  • Quarter the cucumber lengthways. Cut each quarter into roughly 1cm chunks, cutting on the angle to give a more interesting shape. Scatter into a serving bowl or onto a platter. Add the radishes, celery, onion and parsley.
  • Put the lemon juice and oil in a glass jar with a lid, season and shake well. When ready to serve, pour the dressing over the salad and toss to combine.

1 cup red onion, thinly sliced
4 large red radishes, thinly sliced
1/4 cup vegetable oil or 1/4 cup canola oil
2 tablespoons white wine vinegar
1 teaspoon sugar
1/2 teaspoon dry crushed red pepper

Steps:

  • Combine first 3 ingredients in large bowl. (Can be prepared 3 hours ahead. Cover; chill).
  • Whisk oil, vinegar, sugar and red pepper to blend in small bowl.
  • Season with salt and pepper.
  • Pour dressing over vegetables; toss.

I often sub the onions with 1 tablespoon chives.

10 -12 cups salad greens, torn into bite-sized pieces (we like romaine)
3/4 cup red radish, cut into 1/16 inch slices
1/4 cup green onion, cut into 1/8 inch slices
1 tablespoon cider vinegar
1 1/2 tablespoons apple juice (100% juice)
1 teaspoon country-style dijon mustard
1 pinch salt
1 pinch pepper
3 tablespoons walnut oil
1 pinch sugar (optional)

Steps:

  • Put salad greens in a large bowl. Arrange radish and onions on top.
  • For the dressing mix all ingredients except oil in a small bowl until blended.Stirring constantly with a fork or small whisker add oil gradually until emulsified. Taste. If too sour add a little sugar.
  • Pour dressing over salad and toss well.
  • Note: Country-style mustard gets hotter when you prepare the dressing in advance. If you do so, you should consider reducing the amount of mustard used.

Steps:

  • In salad bowl, combine beans, onion, radishes, garlic, parsley and vinaigrette; toss to mix.
  • Season with salt and pepper to taste.
  • (Salad can be prepared to this point and refrigerated for up to 1 day.) At serving time, arrange salad on a bed of red lettuce.
  • Makes 4 to 6 servings.
  • CLASSIC VINAIGRETTE: In bowl, whisk together vinegar, mustard, salt and pepper to taste; Stir in fresh herbs (if using).
