THAI SHRIMP AND CABBAGE STIR-FRY (LOW CARB)

I love this because it's delicious, easy and fits my low carb diet. I bet that some bean sprouts, peanuts and/or water chestnuts would go great in this dish so feel free to experiment. This recipe is courtesy of Taste of Home Cooking magazine.

Number Of Ingredients 10

2 cups shredded cabbage or 2 cups bagged coleslaw mix
6 teaspoons your favorite cooking oil (I have used olive oil, coconut oil and peanut oil)
salt and pepper, to taste
1 medium onion, julienned
2 garlic cloves, minced
20 medium shrimp, uncooked, peeled and deveined
4 tablespoons water
2 tablespoons soy sauce (I use low sodium)
2 tablespoons fresh cilantro, minced or 2 teaspoons dried cilantro
1/4 teaspoon crushed red pepper flakes (more or less depending on how spicy you like it)

Steps:

  • Heat 3 tsp of oil in a skillet or a stir fry pan.
  • Add cabbage and stir fry cabbage for about 2 minutes or until tender.
  • Remove cabbage and keep warmed; sprinkle with salt and pepper, to taste.
  • In the same pan, add 3 tsp of oil and stir fry onions and garlic until tender.
  • Add the shrimp, water and soy sauce; cook until shrimp turns pink.
  • Sprinkle with cilantro and red pepper flakes, stir.
  • Serve shrimp mixture over cabbage.

1 large egg white
1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon plus 1 teaspoon soy sauce
1 1/4 pounds medium shrimp, peeled and deveined
2 teaspoons hoisin sauce
1 1/2 teaspoons sherry vinegar or rice wine vinegar
1/2 cup low-sodium chicken broth or water
2 tablespoons vegetable oil
4 scallions, cut into 1/2-inch pieces, white and green parts separated
1 tablespoon finely grated peeled ginger
1 clove garlic, finely grated
1 pound Napa cabbage (1/2 head), cut into 1-inch pieces
Cooked white rice, for serving (optional)

Steps:

  • Whisk the egg white, 1 tablespoon cornstarch and 1 teaspoon soy sauce in a large bowl until frothy. Add the shrimp and toss to coat. Refrigerate 10 minutes. Meanwhile, whisk the hoisin sauce, vinegar and the remaining 1 tablespoon soy sauce and 2 teaspoons cornstarch in a small bowl, then whisk in the chicken broth. Set aside.
  • Drain the shrimp. Heat the vegetable oil in a wok or large skillet over medium-high heat, then stir-fry the scallion whites, ginger and garlic, about 30 seconds. Add the shrimp and stir-fry until almost cooked through, about 3 minutes. Add the cabbage and stir-fry until wilted and the shrimp are just cooked through, about 2 more minutes.
  • Stir the hoisin sauce mixture, then add to the wok and simmer, stirring occasionally, 2 minutes. Stir in the scallion greens. Serve with rice, if desired.

Here's the Asian way of chopping ginger: Scrape off the skin with the edge of a small spoon. Then cut it into very thin slices across the grain. Lay the slices in a single layer on half of a sheet of plastic wrap; fold the other half over the ginger. Pound the ginger slices with the flat side of a meat mallet. They'll separate into natural fibers. Scrape them together and chop them into small pieces. Cover and store in the refrigerator for up to a week.

1 cup reduced-sodium chicken broth
2 tablespoons reduced-sodium soy sauce

1 to 2 tablespoons Thai chili sauce
1 tablespoon minced fresh gingerroot
1 teaspoon minced garlic
1 pound uncooked medium shrimp, peeled and deveined
2 teaspoons sesame oil
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
3 tablespoons chopped green onions
1 head bok choy, trimmed
Hot cooked rice, optional

Steps:

  • In a small bowl, combine cornstarch and broth until smooth; stir in the soy sauce, vinegar, chili sauce, ginger and garlic. Set aside., In a large skillet or wok, stir-fry shrimp in oil until shrimp turn pink. Remove and keep warm., Stir soy sauce mixture and add to the pan. Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in artichokes and onions; top with bok choy. , Reduce heat; cover and cook for 5 minutes or until bok choy is wilted. Return shrimp to the pan; heat through. Serve with rice if desired.

3 teaspoons vegetable oil (divided)
1 cup onion (sliced)
8 large shrimp (uncooked, cleaned)
2 tablespoons water
1 tablespoon soy sauce
1 tablespoon cilantro (fresh, minced)
1/8 teaspoon crushed red pepper flakes

Steps:

  • In small skillet, stir fry the cabbage in 1 tsp oil for 2 minutes or until tender. Remove and keep warm.
  • In the same skillet, stir-fry onion & garlic in the remaining oil until tender.
  • Add the shrimp, water, & soy sauce; stir-fry for 2-3 minutes or until shrimp turn pink.
  • Stir in cilantro and pepper flakes.
  • Serve over cabbage.

1 tablespoon sesame oil
2 shallots, thinly sliced
1 Thai chili pepper or serrano pepper, seeded and finely chopped
1 can (28 ounces) no-salt-added crushed tomatoes
1/4 cup creamy peanut butter
2 tablespoons reduced-sodium soy sauce or fish sauce
6 cups reduced-sodium chicken broth
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
6 ounces uncooked thick rice noodles
1 cup bean sprouts
4 green onions, sliced
Optional: Chopped peanuts and additional chopped chili pepper
Lime wedges

Steps:

  • In a 6-qt. stockpot, heat oil over medium heat. Add shallots and chili pepper; cook and stir 4-6 minutes or until tender. Stir in crushed tomatoes, peanut butter and soy sauce until blended; add broth. Bring to a boil; cook, uncovered, 15 minutes to allow flavors to blend., Add shrimp and noodles; cook 4-6 minutes longer or until shrimp turn pink and noodles are tender. Top each serving with bean sprouts, green onions and, if desired, chopped peanuts and additional chopped chili pepper. Serve with lime wedges.

1/4 cup fresh lime juice
2 tablespoons fish sauce
2 tablespoons chili paste with garlic
1 teaspoon sugar
1 teaspoon peanut oil
1 teaspoon peeled minced fresh ginger
2 cloves garlic, minced
2 (10 ounce) bags very thinly sliced green cabbage
2 cups red bell peppers, cut in strips
1 1/3 cups peeled shredded carrots
1/4 cup chopped fresh cilantro or 1/4 cup parsley

Steps:

  • Combine the first four ingredients in a bowl; stir well, set aside.
  • Heat peanut oil in a wok or large nonstick skillet over medium high heat.
  • Add ginger and garlic; saute 1 minute.
  • Add cabbage, bell pepper and carrot; saute 2 minutes.
  • Add lime juice mixture; saute an additional 2 1/2 minutes, or until cabbage is tender.
  • Remove from heat and sprinkle with chopped cilantro.
  • This makes 7 servings.
  • For weight watchers this is 1 point.

1 (1 inch) piece fresh ginger root
1 fresh jalapeno pepper, seeded
½ teaspoon salt
½ teaspoon ground turmeric
2 tablespoons vegetable oil
1 medium onion, diced
1 pound medium shrimp - peeled and deveined
2 tomatoes, seeded and diced
1 cup coconut milk
3 tablespoons chopped fresh basil leaves

Steps:

  • Combine the garlic, ginger, jalapeno, salt and turmeric in the container of a food processor or blender. Process to a smooth paste. Set aside.
  • Heat oil in a skillet over medium heat. Add onion, and cook until translucent, stirring frequently. Mix in the spice paste, and cook for a few minutes to release the oils.
  • Add shrimp, and cook for a few minutes until pink, then add the tomatoes and coconut milk. Cover, and simmer for about 5 minutes, then remove the lid and simmer an additional 5 minutes to thicken the sauce. Stir in the fresh basil during the last minute of cooking.
