1/2 pound asiago cheese, not too dry
2 teaspoons minced garlic
2 teaspoons dried oregano
1 teaspoon red pepper flakes
2 tablespoons chopped green onion
1 1/2 cups extra-virgin olive oil
1 teaspoon freshly ground black pepper

Steps:

  • Remove any rind from the cheeses and chop the cheeses into rough 1-inch chunks.
  • Place the cheese in a food processor with the garlic, oregano, and red pepper flakes and pulse until reduced to the size of fine pea gravel.
  • Stir in the green onion, olive oil and black pepper and pulse again. Cover and let stand at room temperature for at least 4 hours before using.

1 -3 large chopped garlic clove (or to taste)
1 teaspoon fresh ground black pepper
2 tablespoons chopped fresh basil (fresh)
2 tablespoons chopped scallions
1 1/2 teaspoons chili pepper flakes (optional)
4 ounces extra virgin olive oil
1 lb parmesan cheese, broken into 1-inch chunks (Parmigiano-Reggiano)

Steps:

  • Place all of the ingredients in the bowl of a food processor. Pulse for about 10 seconds, to break the cheese into small granules. (Use a rubber spatula to scrape down and recombine between every couple of pulses.).
  • Let sit under refrigeration over night for best flavor.
  • Bring to room temperature before serving.
  • Transfer the salsa to a sealed container and refrigerate for up to a Month. If it lasts that long!
  • Note: This is addicting! Serve it as a topping for bread, toss with pasta, spoon over fresh sliced tomatoes, the possibilities are endless.

1 teaspoon paprika
1 teaspoon freshly black pepper, plus more for seasoning
1/2 cup chopped pancetta
1 cup diced Roma tomatoes
2 tablespoons julienne fresh basil leaves
Salt
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl combine Parmesan, paprika, and freshly ground black pepper.
  • On a parchment lined cookie sheet, add the Parmesan mixture in 2 tablespoon dots, 2 inches apart.
  • Place in preheated oven and cook until cheese melts.
  • Remove from oven and when cheese is cool enough to handle but still moldable, remove and form into small taco type shells
  • In a small saute pan cook pancetta until crispy, remove and let cool. When cool, crumble with your hands.
  • In a small bowl add tomatoes, basil, salt, freshly ground black pepper, olive oil, and toss gently to combine.
  • Add tomato mixture to Parmesan crisps and top with pancetta.

Preparation time includes letting the tomatoes stand at room temperature for 20 minutes.

I made this up the other night after I started to make Mirjam's Penne Arrabiatta (#22941) but discovered I was missing a few ingredients. Like the Italian dish I meant to make, this one is also spicy and loaded with garlic. I'm sure it would be even more flavourful with fresh herbs, but dried ones were all I had on hand.

4 -5 fresh and juicy tomatoes, chopped (preferrably vine-ripened)
3 cloves garlic, minced
1 small onion, chopped
3 -4 large button mushrooms, sliced
1 tablespoon hot sauce
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon fresh parsley
1/8 cup water
1/4 cup of your favourite cooked salsa
1 chicken breasts, cooked and diced or 1 cup quorn pieces (vegetarian substitute)
2 teaspoons olive oil
fresh ground black pepper

Steps:

  • Heat oil in a frying pan and sauté the onions and mushrooms until soft, about two minutes.
  • Add the water, tomatoes (with all their seeds and juice), garlic, oregano, basil, parsley and hot sauce.
  • Simmer over low heat for 6-10 minutes or until tomatoes are soft and enough water has evaporated to form a relatively thick sauce.
  • Add salsa and chicken.
  • Simmer until heated through.
  • Cook pasta of your choice (I like fusilli or penne) until al dente.
  • Serve sauce over hot pasta, top with parmesan cheese and freshly ground black pepper.
