What kid doesn't love fish crackers? Give them these whale-size ones that get their cheesy taste from Parmesan, grated until powdery.

Yield Makes About 2 1/2 Dozen Crackers

Number Of Ingredients 6

1 1/2 cups all-purpose flour, plus more for dusting
8 tablespoons (1 stick) unsalted butter, cut into 5 pieces
1/2 teaspoon table salt
1/2 cup freshly grated Parmesan cheese
5 tablespoons plus 1 teaspoon cold water
1 large egg yolk

Steps:

  • Preheat oven to 425 degrees. Line 2 baking sheets with parchment paper. In food processor, combine flour, butter, salt, and cheese. Pulse until mixture resembles coarse meal. Add the 5 tablespoons cold water; pulse until the dough just comes together. Shape dough into a disk.
  • In a small bowl, whisk together egg yolk and remaining 1 teaspoon cold water; set aside. On a lightly floured surface, roll dough 1/4 inch thick. Cut out shapes using fish-shape cookie cutter; transfer to prepared baking sheets. Bring scraps together, reroll the dough, and cut out more shapes. Brush each fish with the reserved egg wash. Bake until golden, about 10 minutes. Transfer to a wire rack, and let cool. Crackers may be kept at room temperature in an airtight container up to 2 days.

1 tablespoon Old Bay Seasoning
1 teaspoon garlic powder (optional) or 1 teaspoon granulated garlic (optional)
flour, for coating
2 large eggs, beaten
splash heavy cream or half-and-half
extra-virgin olive oil, for frying (EVOO)
4 sole fillets or 4 tilapia fillets, rinsed and patted dry
salt and pepper
lemon wedge, for serving

Steps:

  • Using a food processor, grind the oyster crackers, Ritz crackers, parmigiano-reggiano, parsley, chives, thyme, Old Bay seasoning and garlic powder, if using. Transfer to a shallow bowl. Place the flour in another shallow bowl. In a third shallow bowl, beat the eggs and cream.
  • Fill a large skillet with enough EVOO to reach a depth of 1/4 inch and heat over medium-high heat. Preheat the oven to 200°. Season the fish fillets with salt and pepper. Coat the fish with the flour, shaking off any excess; coat with the egg mixture, then with the cracker crumbs. Working with 2 fillets at a time, fry the fish in the skillet, turning once, until deep golden, about 5 minutes. Transfer each batch to the oven to keep warm.

1 tablespoon extra-virgin olive oil, plus more for brushing
1 pound center-cut cod fillet (or other firm white fish)
Kosher salt
1 cup Italian-style panko breadcrumbs
1/2 cup grated parmesan cheese
1/2 cup all-purpose flour
3 large egg whites
Warm marinara sauce, for serving

Steps:

  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Brush a baking sheet with olive oil; set aside. Cut the cod crosswise into 3/4-inch-thick pieces (about 16). Season generously with salt.
  • Heat the olive oil in a small skillet over medium heat. Add the panko and cook, tossing, until golden brown, 6 to 8 minutes. Transfer to a shallow dish and let cool completely.
  • Add the parmesan to the panko. Spread the flour in a separate shallow dish. Lightly beat the egg whites in a third shallow dish.
  • Dredge the fish in the flour, then dip in the beaten egg whites, letting the excess drip off, then dip in the panko mixture, patting to adhere. Transfer to the prepared baking sheet.

Steps:

  • Preheat the oven to 450 degrees F.
  • Rinse the salmon fillet and pat dry with paper towels. Cut the fish in half to make 2 fillets each about 4 by 4 1/2-inches in size. Starting on the longest edge, slice the fillets into 1/2-inch pieces. Lay the widest pieces, from the center, cut side down, and slice in half lengthways so all the pieces are equally about 1/2 by 1/2 by 4 1/2-inches in size.
  • Place the flour in a medium bowl and season with the salt and pepper. Place the egg whites in another bowl and beat until frothy, about 30 seconds. Combine the Parmesan and bread crumbs in a third bowl.
  • Coat the salmon pieces in the seasoned flour and pat to remove any excess flour. Dip the floured salmon in the egg whites and then into the Parmesan mixture, gently pressing the mixture into the fish. Place the breaded salmon pieces on a liberally oiled baking sheet. 4 skinless fillets of firm white fish
50g butter

  • Mix the breadcrumbs with the grated lemon zest, grated Parmesan, chopped parsley, salt and pepper.

1 cup all-purpose flour

Steps:

  • In a food processor, combine ingredients, and pulse until dough comes together. Turn dough out onto a piece of plastic wrap, and form it into a log 1 1/2 inches in diameter. Chill until firm, at least 2 hours.
  • Heat oven to 325 degrees. Grease two baking sheets. Cut log into 1/4-inch-thick crackers, and place them an inch apart on sheets. Bake until firm, about 12 to 13 minutes.
