RAW ARTICHOKE AND PARMIGIANO SALAD

Raw Artichoke and Parmigiano Salad image

Provided by Anne Burrell

Categories     appetizer

Time 30m

Yield 6 servings

Number Of Ingredients 7

2 vitamin C capsules
3 lemons, halved
10 baby artichokes
1/4 pound piece Parmigiano-Reggiano, shaved with a peeler
3 cups washed baby arugula
Big fat finishing extra-virgin olive oil (high quality)
Kosher salt

Steps:

  • Set up a bowl of acidulated water: break the vitamin C capsules into a large bowl of water and squeeze in the juice from 2 of the lemons. Toss in the 4 halves of the squeezed lemon as well. Artichokes will turn brown (oxidize) before your eyes so you must, must, must set up this bowl of acidulated water first!
  • Working with 1 artichoke at a time, peel off the tough green outer leaves to reveal the spring green color underneath. Trim off the tough outer layer of the stem and any brown spots. Cut the tip of the choke off. Artichokes have a lot of waste, accept it and move on. Very carefully, using a mandoline, very thin shave the artichokes and put them immediately into the lemon water. The artichokes are best when done at least a couple of hours ahead because they tenderize a little.
  • To assemble the salad:
  • Put the artichokes in a salad spinner to remove they excess water. Put the artichokes, arugula and Parmigiano-Reggiano in a large serving bowl. Dress with the juice of the remaining lemon, finishing oil and salt, to taste. The salad should be well-dressed and full flavored but not soggy.
  • Serve immediately.
  • It's spring on a plate!

1/4 teaspoon red pepper flakes
1 28-ounce can whole peeled San Marzano tomatoes, crushed by hand
Kosher salt and freshly ground pepper

ROASTED ARTICHOKES WITH PARMESAN BREADCRUMBS

Roasted Artichokes with Parmesan Breadcrumbs image

Artichokes were one of those vegetables that really intimidated me. They just seemed so hard to prepare. But, once you get the hang of it, it's really easy. I like to serve mine with a lemon-garlic aioli for dipping.

Provided by Kardea Brown

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 13

2 lemons
2 medium artichokes
Nonstick cooking spray, for the baking dish
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Zest of 1 lemon
2 tablespoons shredded Parmesan
1 tablespoon chopped fresh parsley
1 cup mayonnaise
2 tablespoons lemon juice
2 cloves garlic, minced
Kosher salt and freshly ground black pepper

Steps:

  • For the artichokes: Preheat the oven to 475 degrees F. Cut the lemons in half and squeeze the juice into a bowl. Add water.
  • Trim the top 1 inch off the tops of the artichokes. Use kitchen shears to trim the pointy edges off the leaves. Trim the ends of the artichokes. Cut the artichokes in half through the centers. Use a spoon to scoop out the fuzzy chokes and the purple leaves. Place the artichokes in the lemon water as you work to prevent them from browning.
  • Shake off the water from the artichokes and place, cut-sides down, in a small baking dish coated with cooking spray. Drizzle with 2 tablespoons olive oil and sprinkle with salt and pepper. Bake until the artichokes are tender, 25 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet. Add the panko and cook until toasted, about 2 minutes. Remove to a small bowl and let stand until room temperature, about 10 minutes. Stir in the lemon zest, Parmesan and parsley.
  • Make the lemon-garlic aioli: Stir together the mayonnaise, lemon juice and garlic in a small bowl. Season with salt and pepper.
  • To serve, turn over the artichokes and sprinkle with the panko mixture, stuffing some between the leaves. Drizzle or dip with the aioli.

ARTICHOKE-PARMESAN SAUCE

Artichoke-Parmesan Sauce image

Provided by Nancy Harmon Jenkins

Categories     condiments, side dish

Time 25m

Yield 1 1/2 to 2 cups

Number Of Ingredients 9

1 14-ounce can artichoke hearts
1/4 teaspoon cayenne
1/4 cup creme fraiche or sour cream
1/3 cup chopped fresh dill leaves
2 egg yolks
1 1/2 tablespoons lemon juice
1 stick frozen butter, cut into 6 or 8 pieces
1/2 cup finely grated Parmigiano Reggiano cheese
Herbs, chopped chives and edible flowers for garnish

Steps:

  • Drain and rinse artichoke hearts, squeezing them to remove excess water. Place in bowl of food processor, together with cayenne, creme fraiche and chopped dill. Process until artichokes are finely pureed. Set aside.
  • Bring water to boil in lower half of a double boiler. Turn heat down to just barely simmering. Have a bowl of cold water with a few ice cubes in it standing by. In top half of boiler, place egg yolks and lemon juice. Whisk slightly to combine, then place over, but not in, the barely simmering water. Stir constantly with a wire whisk. Place a piece of butter in the eggs and continue stirring until eggs are warm and butter has melted. Then add another piece of butter and continue in the same manner until all the butter is used. If eggs start to curdle, immediately plunge the top boiler in bowl of icy water, still whisking. (This is an emergency procedure to lower the temperature rapidly.) Return the top boiler to the simmering water and continue adding butter.
  • When all the butter has been added, sauce should be quite thick. Add grated cheese and whisk to mix well. Place boiler in icy water to reduce temperature slightly, then stir in artichoke mixture. Use this sauce to nap the mushroom roulade. May be served immediately or held for an hour or so, but do not refrigerate as it will make the sauce granular.
  • Serve garnished with herbs, chives and edible flowers, passing remaining sauce.
