1 pkg. (2-layer size) spice cake mix
3 large carrots, shredded (about 2 cups)
1 can (8 oz.) crushed pineapple in juice, drained
1 cup chopped pecans, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 cups powdered sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter as directed on package; stir in carrots, pineapple and 3/4 cup nuts.
  • Pour into 2 greased and floured 9-inch square pans sprayed with cooking spray.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min. Remove from pans to wire racks; cool completely.
  • Beat cream cheese and sugar in large bowl until blended. Whisk in COOL WHIP.
  • Stack cakes on plate, filling and frosting with cream cheese mixture. Sprinkle with remaining nuts.

flour, for dusting pans
2 cups self-rising flour
2 teaspoons ground cinnamon
2 cups granulated sugar
2 (4 ounce) jars strained carrot baby food
4 eggs
1 1/2 cups vegetable oil
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 (16 ounce) box confectioners' sugar
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 325 degrees F.
  • Grease and flour 3 (8 or 9-inch) cake pans.
  • For the cake:
  • Mix together the flour, cinnamon and sugar in a large bowl.
  • Add the remaining ingredients and blend well with a handheld electric mixer for about 2 minutes.
  • Pour batter into prepared pans.
  • Bake for 25 to 30 minutes, or until golden brown.
  • Allow to cool in pan for 5 minutes.
  • Invert onto lint-free dishcloth, or waxed paper, and allow to cool completely.
  • For the frosting:
  • Mix all ingredients with handheld electric mixer and blend until smooth and creamy.
  • Frost layers, top, and sides of cooled cake.

  • Place the raisins and rum in a microwave safe bowl and microwave on high for one minute. Set aside.
  • Place a cake pan on parchment, open side up and draw a circle around the bottom with a pencil. Cut the circle out and repeat for the second pan. Rub butter all over inside bottom and sides of each pan. Press each circle into the bottom of each buttered pan. Then butter the top of the parchment of each pan. Finally spoon some flour into each pan and turn and shake to completely cover the butter, on bottom and sides, shaking out excess. Set these aside.
