SAUCY PORK CHOPS
This pork chop recipe uses off-the-shelf ingredients to create a quick and easy meal your whole family will love. Full of flavor and one you can make any day of the week.

Steps:
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Slice the onion into about 6 pieces. Depending on how big your onion is, they will be about a quarter to a half inch thick. Think onion-ring size. Add the onion slices to the pan and saute for about 12 minutes, flipping halfway through.
- Remove the onions from the skillet and set aside. Turn the heat to medium high and add the other tablespoon of olive oil. Salt and pepper both sides of the pork chops. Add chops to the pan and brown on both sides. Shouldn't take more than a couple minutes per side.
- Meanwhile, in a medium bowl combine the soup, ketchup, and Worcestershire sauce.
- When the meat is browned, place one onion ring on top of each pork chop. Pour the soup mixture evenly over the onions and chops. Turn the heat down to a simmer. Cover and cook for another 30 minutes, or until the meat is no longer pink and a meat thermometer reads 160 degrees. We like to eat this with mashed potatoes.
- Crock Pot instructions: Follow steps until the meat is browned. Then transfer the chops to a crock pot, cover with onions, and pour sauce on top. Heat on high for about 4 hours.

- Whisk flour, mustard, curry powder and 1 cup broth in medium bowl until blended. Add jam and remaining broth; mix well.
- Cook chops in large nonstick skillet on medium-high heat 3 min. on each side or until evenly browned on both sides.
- Stir broth mixture; pour over chops. Bring sauce to boil; simmer on low heat 7 to 8 min. or until chops are done (145°F). Transfer chops to platter, reserving sauce in skillet. Let chops stand 3 min. Meanwhile, add onions to sauce in skillet; cook 3 min., stirring frequently.
- Pour sauce over chops before serving.

- Heat dressing in large skillet on medium-high heat. Add chops; cook 4 min. on each side or until browned on both sides. Remove from skillet; cover to keep warm.
- Add onions and bacon to skillet; cook and stir on medium heat 7 min. or until onions are crisp-tender and bacon is crisp. Drain; return to skillet. Stir in tomatoes, chiles and peppers. Add chops. As you can see from the title this was my Mom's recipe. It makes a wonderful sauce that even kids like. We used to scrape the dish to get the last little bit of it on our chops. I got this recipe out of a cookbook that uses 5 ingredients or less. It's the simplest way to make tender, tasty pork chops. I always hated pork chops growing up, only ever eating a dried out, fried, and breaded chop. I refuse to make them this way. These are delicious and the sauce is very good over the rice.

- Add half of the ketchup and Worcestershire sauce in a ziplock bag with the pork chops.
- Set in refridgerator for 15-45 minutes.
- Mix remaining ingredients in bowl.
- Place pork chops and marinating liquid in an ungreased 13"x9" baking pan.
- Top with sauce mixture.
- Cover and bake one hour at 350 degrees.
- Serve over rice.

- In a resealable plastic bag, combine flour and pepper.
- Add pork chops and shake to coat.
- In a small nonstick skillet coated with nonstick cooking spray, brown pork chops on both sides.

SAUCY PORK CHOPS WITH CRANBERRIES FOR THE CROCK POT!
I found this in a cookbook I took out from the library (title forgotten). This sounds delicious! You can also substitute a boneless pork shoulder butt roast (3 lbs) for the pork chops. Brown the roast on all sides and then proceed as directed. Haven't tried yet.

- In a nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides and transfer to slow cooker. Drain fat from pan.
- Reduce heat to medium. Add leeks and cook, stirring, until softened. Add garlic, salt and peppercorns. Cook, stirring for 1 minute. Stir in port, marmalade and cranberries and bring to a boil.
- Pour mixture over pork. Cover and cook on low for 5 hours or on high for 2 1/2 hours, until pork is tender and just a hint of pink remains. Serve immediately.
