12 ounces uncooked whole wheat spaghetti
2 large carrots, julienned
3/4 cup reduced-fat creamy peanut butter
3 tablespoons water
3 tablespoons lime juice
3 tablespoons molasses
4-1/2 teaspoons reduced-sodium soy sauce
3 garlic cloves, minced
1-1/2 teaspoons rice vinegar
1-1/2 teaspoons sesame oil
1/4 teaspoon crushed red pepper flakes
8 cups finely shredded Chinese or napa cabbage
2 cups shredded cooked chicken breast
2/3 cup minced fresh cilantro
3 tablespoons unsalted dry roasted peanuts, chopped

Steps:

  • In a Dutch oven, cook spaghetti according to package directions, adding the carrots during the last 2 minutes of cooking., Meanwhile, in a small bowl, whisk peanut butter, water, lime juice, molasses, soy sauce, garlic, vinegar, sesame oil and red pepper flakes until blended. Drain spaghetti and carrots; place in a large bowl. Add cabbage, chicken and dressing; toss to coat., Sprinkle with cilantro and peanuts. Serve immediately or refrigerate until serving.

1 Pound Whole Wheat Pasta Ingredients
1 Pound Tamarind Pods Ingredients
2 Cups Fresh Peas Ingredients
1 Cup Chopped Bean Sprouts Ingredients
1 Cup Shredded Carrots Ingredients
1/2 Cup Chopped Cilantro Ingredients
2 Bunches Green Onion (chopped) Ingredients
1/2 Cup Chopped Peanuts Ingredients
3 Limes Sauce (approx)
1 Tablespoon Fish Sauce Sauce (approx)
1/4 Cup Mayo Sauce (approx)
2 Tablespoons Brown Sugar Sauce (approx)

Steps:

  • Shell all the tamarind and put into a sauce pot with about 1/4 cup of water. Simmer, stirring occasionally, for about 10 minutes. Let cool slightly, then push through a mesh strainer, retaining the tamarind pulp and discarding the seeds and strings. Be sure to scrape the pulp off the bottom of the strainer and mix it with the rest. Now stir in the sriracha, lime juice, fish sauce, and mayo. Salt and taste the sauce and adjust to your liking.
  • Chop and prep the rest of the ingredients. Drop the pasta in some boiling water. Cook the peas in with the pasta during the last 2 minutes of boiling. When it's ready, strain and immedietly toss in a bowl with the sauce, bean sprouts, and carrots. Put into the fridge to cool. When cool, add the cilantro, green onion, and peanuts and mix well. Taste and adjust your seasonings.
  • I said "about" and "to taste" and "adjust seasonings" a lot in this recipe. That's cause I started with a certain amount of lime, mayo, fish sauce and sriracha, but I wasn't happy with the way it tasted after everything was mixed so I ended up adding a bunch more of all of the ingredients. The final product came out awesome, but it took a lot of tinkering. Just wanted to make sure you understand before making this!

1 pound fusilli
Kosher salt and freshly ground black pepper
4 limes
1/3 cup Thai fish sauce
1/3 cup packed brown sugar
3 tablespoons red wine vinegar
2 tablespoons peanut or vegetable oil
4 garlic cloves, finely chopped
8 ounces small (41/50-count) shelled and deveined shrimp
1 1/4 pounds boneless, skinless chicken thighs, thinly sliced
4 cups (10 ounces) bean sprouts
6 scallions, green parts only, cut into 2-inch lengths, plus thinly sliced for garnish
1 1/2 cups coarsely shredded carrots
1/2 cup roasted, salted peanuts, chopped, plus more for garnish

Steps:

  • 1. Bring a large pot of water to a boil. Generously salt and cook the pasta according to the package's directions for al dente. Drain, shaking occasionally to prevent sticking, until cooled to room temperature. 2. Meanwhile, zest the limes into a large bowl and squeeze in 1/3 cup juice. Whisk in the fish sauce, brown sugar, vinegar, 1 tablespoon oil, and a pinch each salt and pepper. 3. Heat the remaining tablespoon oil a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add to the skillet along with half the garlic. Cook, stirring occasionally, just until the shrimp is cooked through, about 3 minutes. Transfer to the bowl with the dressing. 4. Season the chicken with salt and pepper. Add to the same skillet along with the remaining garlic. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5 minutes. Add the bean sprouts and scallion greens and cook, stirring, until barely wilted, about 1 minute. Transfer to the bowl with the dressing. 5. Add the carrots, pasta, and peanuts to the bowl. Toss until everything is well-coated. Season to taste with salt and pepper. Garnish with the scallions and remaining peanuts. Serve warm, at room temperature, or refrigerate and serve cold.

8 ounces dried pad thai rice noodles
1 medium carrot
1 medium zucchini
1 tablespoon plus 1 teaspoon fish sauce, plus more for serving
1 tablespoon fresh lime juice, plus lime wedges for serving
2 teaspoons light brown sugar
1 1/2 teaspoons oyster sauce
1/2 teaspoon Sriracha, plus more for serving if desired
1/2 pound large shrimp, peeled, tails removed, deveined and halved lengthwise
1 tablespoon plus 1 teaspoon vegetable oil
3 cloves garlic, minced
1/2 red bell pepper, thinly sliced
2 cups bean sprouts
3 green scallions, cut into 2-inch pieces, thick pieces halved lengthwise
2 tablespoons finely chopped roasted unsalted peanuts

Steps:

  • Soak the rice noodles in a bowl of warm water until pliable but not too soft, about 30 minutes. Drain.
  • Run a vegetable peeler along the length of the carrot and zucchini to create noodle-like ribbons. Keep the two separate and set aside.
  • Mix together the fish sauce, lime juice, sugar, oyster sauce and Sriracha in a small bowl. Remove 1 teaspoon of the sauce and toss with the shrimp, let sit at room temperature.
  • Heat 1 teaspoon of the oil in a large nonstick skillet over medium-high heat. Scatter the shrimp in one layer in the skillet. Sear for 1 minute, then remove to a plate.
  • Add the remaining tablespoon of oil to the skillet over medium-high heat. Add the garlic, red pepper slices, carrot ribbons and soaked noodles; stir-fry for 30 seconds. Add the sauce and 1/2 cup water; stir until the noodles have softened, 1 to 2 minutes. Add the zucchini ribbons, bean sprouts, scallions and reserved shrimp. Stir-fry for another minute. If the noodles look too dry, add a little more water.
  • Divide evenly among four plates. Sprinkle with peanuts. Serve with lime wedges, Sriracha and fish sauce on the side.

1 package (6 to 8 oz) linguine-style stir-fry rice noodles (rice stick noodles)*
1/3 cup fresh lime juice
1/3 cup water
3 tablespoons packed brown sugar
3 tablespoons fish sauce or soy sauce
3 tablespoons soy sauce
1 tablespoon rice vinegar or white vinegar
3/4 teaspoon ground red pepper (cayenne)
3 tablespoons vegetable oil
3 cloves garlic, finely chopped
1 medium shallot, finely chopped, or 1/4 cup finely chopped onion
2 eggs, beaten
12 oz frozen cooked peeled deveined medium shrimp, thawed
1/4 cup finely chopped dry-roasted peanuts
3 cups fresh bean sprouts
4 medium green onions, thinly sliced (1/4 cup)
1/4 cup firmly packed cilantro leaves

Steps:

  • In 3-quart saucepan, heat 4 cups water to boiling. Remove from heat; add noodles (push noodles into water with back of spoon to cover completely with water if necessary). Soak noodles 3 to 5 minutes or until noodles are soft but firm. Drain noodles; rinse with cold water.
  • Meanwhile, in small bowl, stir lime juice, 1/3 cup water, the brown sugar, fish sauce, soy sauce, vinegar, red pepper and 1 tablespoon of the oil until well mixed; set aside.
  • In nonstick wok or 12-inch nonstick skillet, heat remaining 2 tablespoons vegetable oil over medium heat. Cook garlic and shallot in oil about 30 seconds, stirring constantly, until starting to brown. Add eggs. Cook about 2 minutes, stirring gently and constantly, until scrambled but still moist.
  • Stir in noodles and lime juice mixture. Increase heat to high. Cook about 1 minute, tossing constantly with 2 wooden spoons, until sauce begins to thicken. Add remaining ingredients except cilantro. Cook 2 to 3 minutes, tossing with 2 wooden spoons, until noodles are tender. Place on serving platter. Sprinkle with cilantro. Garnish with additional chopped dry-roasted peanuts and green onions if desired.

1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces
¼ cup vegetable oil
4 eggs

PAD THAI-STYLE RICE SALAD

My basic technique works like this: Cook the rice as you would pasta, in abundant salted water, tasting as you go; the cooking time will range from around 15 minutes for white rice to as long as 45 minutes for the most stubborn brown varieties (almost all will be done in 30 minutes or so). Drain and rinse; you want to get any remaining surface starch off so the salad isn't too clumpy. When the rice is cool enough to handle, dress it; it will absorb a bit of the dressing. Add herbs and garnishes just before serving.

1 1/2 to 2 cups white rice, preferably jasmine
Salt
5 tablespoons peanut or neutral oil, like grapeseed or corn
2 eggs, lightly beaten
4 garlic cloves, peeled and minced
1/4 pound shrimp, peeled and chopped
1/4 pound chicken meat, chopped
4 scallions, trimmed and cut into 1-inch lengths
1 cup bean sprouts, rinsed and trimmed, optional
2 tablespoons fish sauce (nam pla), or more, if necessary

2 teaspoons sugar, if you use tamarind
1/4 cup lime juice, if you use ketchup
2 chiles, preferably Thai, stemmed, seeded and sliced, optional

1/4 cup chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • Cook rice in abundant salted water, as you would pasta, until it's just done; about 10 to 15 minutes. Drain, rinse in cold water, drain again, then put in a large salad bowl.
  • Put 2 tablespoons of oil in a wok or a large skillet, preferably nonstick, over medium heat. Add eggs and scramble quickly for first minute or so with a fork almost flat against the bottom of pan; you're aiming for a thin egg crepe of sorts, one with the smallest curd you can achieve. Cook just until set and remove crepe to a cutting board. Cut into 1/4-inch strips and add to bowl.
  • Raise heat to high, and add remaining oil. When oil is hot, add garlic and shrimp, and cook, stirring occasionally, until shrimp lose their raw gray color; transfer to the bowl with a slotted spoon; add chicken and sauté until just done. Transfer with a slotted spoon; add scallions and half the bean sprouts; cook, stirring occasionally, for 3 minutes. Again transfer with a slotted spoon.
  • To skillet add fish sauce; chiles; tamarind and sugar, or ketchup and lime juice; and a little water (start with 1/4 cup); stir just to combine and deglaze the pan (add a little more water, if necessary), then drizzle warm dressing over salad. Toss, taste, and adjust seasoning, then top with peanuts, cilantro and remaining bean sprouts. Serve with lime wedges on side.

2 tablespoons sesame oil, divided
2 eggs
1 chicken breast, diced
¼ cup shallot
¾ cup pad thai sauce, we used 2 tablespoons each of fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and sriracha
1 cup bean sprout
½ cup peanuts, crushed, plus more for garnish
¼ cup green onion, plus more for garnish
¼ cup fresh cilantro, plus more for garnish

Steps:

  • Cook the noodles according to the package instructions.
  • Toss with 1 tablespoon of sesame oil and set aside.
  • Add ½ teaspoon of sesame oil to a pot with the lightly beaten eggs. When the eggs are finished cooking, set aside.
  • Pour the remaining ½ tablespoon of sesame oil into the pot and add the diced chicken breast. Cook until no longer pink in the middle, then set aside.
  • Add the shallots to the pot and cook until lightly browned and fragrant. Then, add the noodles, eggs, and chicken back into the pot.
  • Pour in the pad Thai sauce and toss to coat.
  • Top with the bean sprouts, crushed peanuts, green onions, and cilantro, and stir until well blended.
  • Dish up and garnish with extra peanuts, green onions, and cilantro.
  • Enjoy!

This is an easy crowd pleaser. I have been making it for years. This is my first attempt to write it down (I may come back and make some edits to the "dressing". I have always just kind of mixed things together. I have found that using some authentic ingredients does make it stand out. Fish Sauce and sriracha hot sauce are availabe in the Asian section of most supermarket today. White pepper is hit or miss. Spice stores and many ethnic grocery stores carry it. The French use it in white sauces so you get the pepper flavor, but you do not the specs. This is not an exacting recipe. If you want is spicier add more hot sauce. If not, use less. More tart add vinegar, etc. Add grilled chicken or cooked shrimp and make it a meal. Prep time is about 30 minutes. It does need to chill 2 hours before serving.

1 lb spaghetti or 1 lb linguine
1/2 cup smooth peanut butter
1/2 cup peanut oil (or canola or lite olive)
1/3 cup low sodium soy sauce
1/3 cup rice wine vinegar
2 tablespoons fish sauce (substitute with 1/4 cup low sodium soy sauce)
2 tablespoons Asian chili sauce, recommend sriracha
2 tablespoons sesame oil
1 tablespoon sugar
1 teaspoon ground pepper (preferably white)
1/2 teaspoon garlic powder
1 cucumber, seeded and chopped
1 red bell pepper, seeded and chopped
1 bunch green onion, chopped (set aside half of chopped green tops)
vegetables (snow peas - 1 cup, chopped Napa cabbage - 1 cup, bean sprouts - 1 cup) (optional)
2 tablespoons sesame seeds
1/4 cup chopped cilantro (optional)

Steps:

  • Cook noodles al dente (do not overcook - mushy noodles won't work).
  • Strain and rinse under cold water until cooled.
  • Mix or wisk together all "dressing" ingredients (peanut butter through garlic power)until blended.
  • In large bowl stir together noodles, 2/3 sauce (reserve 1/3 for later), and vegetables (reserve 1/2 chopped greens from green onion).
  • Chill minimum 2 hours.
  • Transfer to a bowl or platter, if you you want.
  • Before serving pour reserved "dressing" over noodles.
  • Sprinkle sesame seeds and reserved green onions (and cilantro if used).
