This is a Pennsylvania Dutch recipe my mom has made all my life and it is my favorite dish. She usually serves it alone or with some small side dish, because everybody fills there plate with the pot-pie. My husband never heard of it till I made it for him. Now it is one of his favorite dishes.

5 lbs ham (with bone in)
water
3 medium potatoes (cubed)
5 cups all-purpose flour
5 eggs
1 cup milk
salt
pepper
chopped parsley

Steps:

  • Place ham in large pot and cover with water.
  • Boil to make ham broth.
  • Cut ham into cubes and set aside.
  • Place potatoes in broth to cook while you are mixing dough.
  • In large mixing bowl, mix flour, eggs, and milk to form soft dough.
  • You may need to add a little more milk.
  • Roll dough to 1/8" to 1/4" thickness (depending on preference).
  • Cut dough into 1" by 3" rectangles.
  • Drop dough into broth one piece at a time.
  • Cook until dough is done.
  • Add ham.
  • Salt and pepper to taste.
  • Add parsley for color.

Made in the Pennsylvania dutch tradition of slippery ham pot pie where there is a boiled dough instead of a top flaky crust.

2 cupa Ham (cooked, chopped)
Ham bone
Water
1 cup Flour
2 Potato

Steps:

  • Start with the ham bone. Put it in a large stock pot.
  • Cover it 1/2-3/4 up the bone with water.
  • Let it simmer for as long as you can. I did mine for 5 hours but that is just because I had the time. If you have 1 hour, good for you.
  • Trim off all the 'skin' and cube it up into bite size pieces.
  • No measurements here.
  • The more ham you have the more ham you will have in your pot pie.
  • Remove the ham bone and pick it if you wish.
  • Peel and cut up 2 potatoes.
  • Take 1 cup of flour and 1/4 cup of water and stir it around with a fork
  • You are going to make a rollable dough that is not sticky. If it is sticky add more flour. If it is dry add more water.
  • Roll out the dough to about 1/8 - 1/4" thickness. Be sure to put extra flour on your work surface to avoid sticking.
  • Use a pizza cutter to cut into squares.
  • Add the cut up potatoes and ham to the simmering stock. Drop the pot pie squares into the simmering stock.
  • The dough will puff up as it cooks and it doubles in thickness.
  • Take 1/2 cup of flour and a heavy splash of water or milk to it and shake it to combine.
  • Pour it in the pot pie.
  • After it comes to a boil it should thicken up slightly.
  • Season with salt if desired and Voila! You have made slippery pot pie.

Pot Pie Squares:
1 lb. Ham Steak, cooked, diced
6 Cups Water
3-4 Potatoes, peeled and cubed
1 Onion, chopped
1/2 Cup Celery, chopped
1/2 Cup Carrots, peeled and chopped
1 Tbs. Dried Parsley
Salt and Pepper to taste
1 Egg, beaten
2-4 Tbs. Water
Pepper to taste
1 Cup Flour

Steps:

  • Add ham and water to a large slow cooker. Cover and cook on low setting for 5 hours. Add remaining ingredients. Cover and cook on low setting for 2 hours longer or until vegetables are tender. About 15 minutes before serving, add potpie squares; stir. Cover and cook for 15 minutes longer, or until squares are fully cooked. Serves 6. Pot Pie Squares: In a large bowl, whisk together egg, water, and pepper. Add flour, a little at a time, until a soft dough forms. On a floured surface, roll out dough 1/4" thick. With a sharp knife, cut into 2" squares.

This is my husband's all time favorite. It is a Pennsylvania Dutch treat that his mother showed me how to make and his eyes light up every time I make it. The ham, onion and potatoes create a union a pure joy and one happy man!

3 cups white onions
3 cups cubed ham
6 cups ham stock or 6 cups chicken broth
4 cups flour
4 tablespoons shortening
1 teaspoon baking powder
1 cup ice water

Steps:

  • Roll out dumpling dough until ¼" thick. Cut dough into 1/2" squares.
  • Boil onion and ham in broth until it boils.
  • Drop dumplings in slowly and consistently.
  • Cook for 1 hours on simmer and stir constantly.

My Grandma was Pennsylvania Dutch and this is the very simple recipe she used to create a savory, mouth watering main dish. These are the dough squares that are added to your favorite broth. Another "comfort food" that brings back fond memories of Mom and Grandma's kitchens. My favorites include: Ham, beef, chicken, or turkey. Some have told me they have also used ground beef but I have yet to try it that way. If you have never made this dish, it may seem difficult at first, but after a couple times you'll be glad you didn't give up, because it really is simple to make and it's delicious.

5 cups flour
1 teaspoon salt
2 cups water
3 lbs chicken or 3 lbs turkey

Steps:

  • PREPARE MEAT.
  • Put meat in roaster and add water so meat is about 3/4ths covered, then roast at 350 for about 2 hours, checking occasionally and keeping water amount as needed to make a hearty broth. Ham, beef, or chicken base can be mixed with additional water if necessary,or use canned broth to yield required amount of about 2 to 3 quarts of broth to cook dough squares, depending on how many you add. 40 to 50 squares should be ample for 4-6 people.
  • Remove meat from roaster and pour broth into medium to large stock pot.
  • When meat has cooled to touch, remove from bone and pull meat apart into bite size pieces. Place back in broth.
  • If desired add several medium size cubed and "par-boiled" potatoes to broth at this time. I usually do this only when making with Beef.
  • When making with ham, I sometimes add soup beans to broth.
  • PREPARE DOUGH. This can be done while meat is cooking. (Remove rings because here's where it gets a little messy).
  • In large mixing bowl, combine 3 cups of flour and the salt. Use remaining flour as needed for "dusting" and clean up as noted herein.
  • Slowly add water and thoroughly mix with hands until dough reaches a "slightly sticky to touch" consistency. You may need to add more flour to get this part right. You may also substitute canned broth or broth made with soup base instead of water when mixing dough. This will give a little extra flavor.
  • HINT: Rub flour between fingers and on palms during and after mixing to help with clean up.
  • Separate dough ball in 2-3 equal pieces and place one at a time on clean work area moderately dusted with flour and large enough to roll out to approximately 9x12-inch sheet. Dust the dough with flour and begin to roll out,flipping over occasionally and lightly dusting the cutting surface and top surface of dough as you continue to roll out.
  • After dough is rolled out to approximately 1/8" thickness, use a sharp knife or pizza cutter to make 2" squares.
  • Lay out squares side by side on cookie sheet that is either lightly floured or lined with wax paper. Try to avoid overlapping squares. Roll out and cut remaining dough and layer. Place wax paper between all layers.
  • Bring broth to a gently rolling boil and add dough piece by piece, stirring into broth about every 10-12 pieces to prevent sticking.
  • Adjust heat as needed to keep a gentle boiling until desired amount of dough is added. Then reduce heat and simmer until dough is thoroughly cooked and "chewy but not gooey".
  • Serve in soup plate or bowl and enjoy.
  • Please note this dough recipe does not call for eggs. My gram always stressed to me their was a difference between egg noodle dough and pot pie dough. I never questioned her cooking practices, but I sure enjoyed the final products !

1 large egg
2 tablespoons water
1 cup unbleached white flour
1/2 teaspoon salt
1 medium onion, diced
2 medium carrots, diced
1 large celery rib, diced
1 large potato, peeled and diced
7 ounces vacuum-packed corn
1 1/2 quarts vegetable broth
2 cups water
1 tablespoon chicken flavor vegetable bouillon granules
12 ounces chicken seitan strips, julienned
3 tablespoons minced fresh parsley

Steps:

  • Noodles: In bowl whisk the egg and water. Add your flour and salt then stir until dough gathers into a ball. Knead 5 to 6 minutes. You want smooth and elastic. Cover and let rest.
  • In a dutch oven combine the onion, carrot, celery, potato, corn, broth, water, bouillon and seitan. Bring to a boil, cover and simmer for 10 minutes.
  • Roll out the noodle dough. Cut into pot pie squares about 1 1/2 inch wide and 1/8 thick. Drop into soup. DO NOT SHAKE OFF THE FLOUR. In fact if the soup isn't thick enough to please you dump some more from the mixing bowl inches Now close the lid.
  • Cook for about 10 minutes and like the dumpling recipe do not peek. Adjust the seasonings [salt, pepper, Mrs Dash] when done. Serve.
  • For PA Dutch "Chicken" and dumplings use the sauerkraut dumpling recipe I posted under Philocrates.
  • For Vegan omit the egg noodles and use eggless. Sorry I don't know of a sauerkraut dumpling that can be made without it. You could try the recipe I posted and omit but no promises.

This recipe is my great grandmother's. An authentic Pennsylvania Dutch recipe. It is not a stew and not covered with crust. The recipe can be made with beef or chicken. I cannot think of a better comfort food recipe. Very simple to prepare. Dad fondly called this recipe "Tire patches".

1 stewing chicken or 1 beef chuck roast
1 egg
1 cup flour
1 teaspoon salt
1 bay leaf
1 cup sliced celery
1 cup chopped carrot

Steps:

  • Cover meat with water. Add bay leaf, celery, carrots and salt and pepper. Stew until the meat falls apart. Shred meat and return to pot. If using chicken, remove bones and skin and return meat to pot.
  • To make pot pie noodles: MIx one cup of flour with one egg and one teaspoon of salt. Mix till soft ball forms. Roll out on a floured table. Cut in to 2" squares. Allow to dry for several hours.
  • Add pot pie noodles, salt and pepper to taste and cook till desired texture. (al dente). Serve over mashed potatoes.
