1 tablespoon olive oil
1 small onion (finely chopped)
1 garlic clove (minced)
1 head broccoli (grated)
1 cup shredded cheddar cheese
¼ cup sour cream
2 sheets ready-made pie dough
Egg wash

Steps:

  • Preheat oven to 375 °F. Line a sheet pan with parchment paper.
  • Heat the olive oil in a large skillet, then sauté the onions for 5 minutes until they soften. Stir in the garlic and broccoli and cook for 2-3 more minutes, until the broccoli is crisp-tender.
  • Remove from heat, then stir in cheddar cheese and sour cream, and mix until well blended; set aside.
  • Cut out 3-4" rounds from the ready-made pie dough.
  • Place about 1 tablespoon of the broccoli and cheese mixture in the middle if each round, being careful not to overfill them. Fold the pie dough over to make a semi-circle and press the edges together to seal. You can also use a fork to crimp the edges.
  • Brush the rounds with egg wash. Bake for 20-22 minutes until crispy and golden. This will make about 24.

2 heaped tablespoons butter
4 heaped tablespoons flour
1½-2 cups milk
1 cup grated mature cheddar cheese
pinch of cayenne pepper
salt & pepper to taste
1 small head broccoli (cut into florets and steamed until al dente)
1 roll ready-made puff pastry (cut into 12 squares)
1 egg (beaten)

Steps:

  • To make the sauce, melt the butter in a saucepan and add the flour.
  • Stir for a minute over medium heat then slowly whisk in the milk. The sauce needs to be very thick (but still creamy) in consistency so you might not need all the milk.
  • When the sauce is smooth, creamy and thick, turn the heat down and cook the sauce out for approximately 7-10 minutes, stirring regularly, until the sauce is velvety smooth and all flouriness has been cooked out.
  • When the sauce is cooked, remove from the heat then add the cheese, steamed broccoli, cayenne pepper and seasoning and stir to combine. Cover the surface of the sauce with a piece of plastic wrap to prevent a film from forming then set aside.
  • Pre-heat the oven to 180°c.
  • Place the pastries in the holes of a shallow muffin tin, pressing down properly.
  • Spoon in the broccoli filling then fold over the edges of the pastry.
  • Brush with the beaten egg and place in the oven.
  • Allow the pastries to bake for 20-25 minutes until they pastry is golden, crisp and cooked through.
  • Remove from the oven and allow to rest for 10 minutes before serving.

4 cups finely chopped broccoli florets (about 13 ounces)
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
6 ounces cream cheese, diced
Nonstick cooking spray, for greasing the pan
Two 8-ounce tubes refrigerated crescent roll dough
5 slices Cheddar, cut in half (about 5 ounces)
Ranch dressing, for serving

Steps:

  • Preheat the oven to 375 degrees F. Add the broccoli, oil, crushed red pepper, garlic and 2/3 cup water to a large skillet and stir until combined. Cover and bring to a boil. Let the broccoli steam until bright green and just crisp tender, about 3 minutes. Remove the lid and let the water continue to boil until it is completely evaporated, 3 to 4 minutes. Stir in 1/2 teaspoon salt and a few grinds of pepper and transfer to a medium bowl. Let cool slightly, about 15 minutes. Stir the cream cheese.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the broccoli mixture over the short ends of the triangles closest to the ramekin. Cover the broccoli with the cheese slices and remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the broccoli mixture).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with Ranch dressing for dipping.

1 1/2 cups shredded mozzarella (about 6 ounces)
1 cup crumbled feta (about 6 ounces)
1 cup part-skim ricotta
1/4 cup fresh dill, chopped
2 tablespoons chopped chives
1/4 teaspoon crushed red pepper flakes
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1 large egg
3 sheets frozen puff pastry (from one-and-a-half 17.3-ounce packages), thawed
All-purpose flour, for dusting, optional
1 tablespoon sesame seeds

Steps:

  • Preheat the oven to 400 degrees F. Line 3 baking sheets with parchment paper or silicone baking mats.
  • Cook the broccoli according to the package directions. Transfer to a colander to drain until cool, about 5 minutes.
  • Transfer the broccoli to a large bowl and add the mozzarella, feta, ricotta, dill, chives, red pepper flakes, lemon zest, 1 teaspoon salt and 1/2 teaspoon pepper. Stir together with a large spoon, using the back of it to crush any large broccoli florets. Set aside.
  • Whisk the egg with 1 tablespoon water in a small bowl. Set aside.
  • Roll out a sheet of the puff pastry on a clean work surface into a 12-inch square, dusting with flour as needed to prevent sticking. Cut the puff pastry into sixteen 3-inch squares with a pizza wheel or knife. Place 1 tablespoon of the broccoli mixture in the center of each square. Working with a square at a time, pinch together 2 opposite corners, then pinch together the remaining 2 corners to create a small packet. Transfer the packets to a baking sheet. Repeat with the remaining puff pastry and filling. Brush the packets with the egg wash and sprinkle with the sesame seeds.
  • Working in batches if needed, bake the packets until golden and bubbly, 20 to 22 minutes.

2 tbsp (1 oz.) unsalted butter, melted
3 large eggs
1 cup milk
1 cup all-purpose flour
1 tsp baking powder
½ tsp sea salt
½ tsp black pepper
1 lb. fresh broccoli florets
½ large onion (white or yellow), diced
2 cups cheddar cheese, freshly grated

Steps:

  • Preheat the oven to 350 degrees F. In a 9x13 baking dish, pour the melted butter evenly over the bottom of the baking dish. Set aside.
  • In a large bowl, beat the eggs before whisking in the milk. Add in the flour, baking powder, salt, and pepper. Whisk well until the mixture is smooth and uniform.
  • Place the broccoli ¾ full in a food processor fitted with an S-blade attachment and gently pulse until the broccoli is broken down into small pieces to make broccoli rice (you may need to do this in batches) *(see first note.)
  • Add the broccoli rice, onion, and cheese to the flour mixture. Using a spatula, combine the ingredients well together.
  • Carefully transfer the mixture to the baking dish, making sure that the mixture is evenly distributed and spread flat on top.
  • Bake for 40-45 minutes until set (firm to the touch) in the middle. Let it cool for 15 minutes before slicing into squares. Can be served warm or room temperature.

1/2 cup walnuts, coarsely chopped

1 cup cheddar cheese, shredded

Steps:

  • Heat oven to 375.
  • Grease a 9x9x2" pan.
  • Mix the broccoli, corn, onion and walnuts.
  • Place in the pan.
  • Beat the remaining ingredients except for the cheese until smooth, stopping frequently to scrape down the sides of the mixer if necessary.

5 cups vegetable oil for frying
1 (16 ounce) package chopped frozen broccoli, thawed and drained
4 cups shredded sharp Cheddar cheese
3 ½ cups dry bread crumbs
salt and pepper to taste

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Place broccoli in a medium saucepan with 1 cup boiling water. Return to a boil. Cook covered until firm but tender, about 5 minutes.
  • In a medium saucepan over low heat, melt the Cheddar cheese. Mix in the broccoli. Allow the mixture to cool and thicken approximately 15 minutes.
  • In a medium bowl, mix the bread crumbs, salt and pepper. Spread the mixture onto a large piece of wax paper.

  • Grease a 9x13 baking pan with the butter.

1 head broccoli, blanched and chopped or 16 ounces frozen broccoli, thawed
2 tablespoons butter
2 garlic cloves, minced
1/2 cup flour
1/2 cup heavy cream or 1/2 cup milk
2 cups shredded cheddar cheese, preferably sharp
salt & pepper, to taste
1 bread bowls, top round cut out or 1 loaf French bread, sliced into rounds

Steps:

  • Preheat oven to 350 degrees F. If using a 9x13 baking dish, grease bottom and sides.
  • In a large skillet, over medium-low heat, melt butter and add garlic and cook until fragrant, stirring, about 1 minute. Add flour, stirring constantly, until golden, another minute. Then add the cream or milk and simmer until thickened. Remove from heat and add cheese, stirring until melted.
  • Add chopped broccoli and stir until combined well. Transfer to bread bowl, if using, then place on a baking sheet. Skip to next step for the French bread.
  • If using French bread, place a layer of slices on the bottom of the baking dish. Add about half of the broccoli mixture. Add another layer of bread and finish with the rest of the broccoli mixture.
  • Bake until mixture is warmed through, about 15-20 minutes. Serve the bread bowl with chips, or the casserole into individual servings.

I found this on the back of an insert that was in a box of soup mix, and I haven't made it yet. This looks like an easy appetizer that you could throw together for impromptu guests. My family has made something similiar in the past, but it wasn't a warm dip. Serve the bread cubes, crackers, bagel chips, etc around the outside of the bread bowl on the serving platter.

1 (8 ounce) package cream cheese, softened
1 cup Miracle Whip
1 (1 1/2 ounce) envelope Italian salad dressing mix
1 (10 ounce) package frozen chopped broccoli, thawed, well drained
1 (8 ounce) package shredded cheddar cheese
1 loaf Hawaiian sweet bread (or any other round loaf of similiar size(Pumpernickel is a good substitute)

Steps:

  • Preheat oven to 350°F.
  • Mix cream cheese, Miracle Whip, and dressing mix in a large bowl with electric mixer on medium speed until well blended.
  • Add broccoli and 1 1/2 cups of the cheddar cheese; mix well.
  • Cut slice from top of bread loaf; remove center of loaf; leaving 1-inch thick shell. Cut removed bread into bite-size pieces; cover and set aside for later use.
  • Spoon cream cheese mixture into bread shell; sprinkle with remaining cheddar cheese. Cover with top of bread. Wrap in foil.
  • Bake 20 minute or until dip is heated through and cheese is melted. Serve with bread pieces for dipping.
  • Makes 1 qt or 32 servings; 2 Tbsp each.
