2 cups crushed saltine crackers
1 teaspoon seasoned salt
1 pinch garlic powder, or to taste
6 skinless, boneless chicken breast halves
½ cup margarine, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish.
  • Mix cracker crumbs, seasoned salt, and garlic powder in a shallow bowl. Dip chicken breasts into melted margarine and press into cracker mixture until coated. Arrange chicken in prepared baking dish.
  • Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

1 lb boneless skinless chicken breast, cut into 4 oz portions
1/4 cup low-fat mayonnaise
1 teaspoon Dijon mustard
1/3 cup plain breadcrumbs
1 teaspoon dried rosemary, crushed
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°F Cut off any fat from the chicken pieces and pound with a meat mallet to an even thickness; pat dry.
  • Mix mayonnaise with Dijon mustard in a shallow dish. Combine bread crumbs with seasonings and herbs in another shallow dish. Lightly coat baking sheet with cooking spray and preheat in oven for 5 minutes.
  • Meanwhile, coat chicken with mayonnaise mixture, then roll in bread crumbs. Arrange on preheated baking sheet.
  • Bake 8 minutes, then turn and bake an additional 8-10 minutes or until and internal temperature of 165°F.

3 tablespoons hot pepper sauce
1 tablespoon Worcestershire sauce
1 teaspoon black pepper, freshly ground
1 teaspoon salt (optional)
2 cups whole wheat bread crumbs
1 -2 tablespoon vegetable oil (canola, safflower, etc.)

Steps:

  • In a large bowl, whisk together hot sauce, Worcestershire sauce, pepper, and salt (optional).
  • Add the chicken and marinate in the refrigerator for 2 to 12 hours.
  • Preheat oven to 425 degrees.
  • Remove chicken from marinade.
  • Add bread crumbs to marinade and mix well.
  • Coat chicken thoroughly with mixture.
  • Spread oil over the bottom of a shallow 9"x13" baking dish.
  • Arrange chicken in the dish and bake for 15 to 20 minutes.
  • Turn chicken over.
  • Reduce heat to 325 degrees; cook for an additional 15 to 20 minutes or until juices run clear when chicken is pierced with a fork.

1 chicken, cut in pieces
2 egg whites (whole eggs for me) or 1 whole egg (whole eggs for me)
1 cup seasoned bread crumbs (Panko Definitely) or 1 cup panko breadcrumbs (Panko Definitely)
1 cup flour
1 tablespoon freshly chopped parsley
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon paprika (optional)
flour
salt and pepper

Steps:

  • Spray a 9"x13" baking pan or larger with olive oil spray.
  • Beat egg slightly. Add parsley to egg and a pinch of salt, pepper (and a sprinkle of garlic and onion powder).
  • Season the flour with salt and pepper, onion and garlic powder.
  • Roll the chicken in the egg, then in the seasoned flour, turning well to coat. Make sure all the flour is wet. Then roll back in egg mixture then roll in Panko bread crumbs.
  • Spray chicken well all over with the olive oil spray.
  • Bake, in a preheated 350°F oven, for about 1 hour or until chicken is tender, golden, and cooked through.

1 1/2 tablespoons smoked paprika
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1 teaspoon dried basil leaves
1 teaspoon ground thyme
1 teaspoon ground rosemary
1 teaspoon ground sage
1 teaspoon sea salt, ground
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/3 cup hot sauce
2 large eggs
1 cup unbleached all-purpose flour
1/2 cup fine breadcrumbs
1 teaspoon baking powder
3 tablespoons mixed spice
8 pieces chicken (drumsticks and thighs)

Steps:

  • Preheat oven to 400ºF.
  • In a bowl, combine hot sauce and eggs; whisk very well. Place chicken pieces in a large bowl and pour sauce mixture over; coat well.
  • In another bowl, combine flour, bread crumbs, baking powder and spice mix; whisk well. Transfer flour mixture to a re-sealable plastic bag. Add a couple pieces of chicken at a time, close the bag, and shake until well coated.
  • Place floured chicken pieces on a lightly greased rack sitting on a baking sheet lined with foil. Using cooking spray or an oil diffuser, spray chicken pieces on both sides.
  • Transfer to the preheated oven and bake for 50 minutes or until the internal temperature reaches 165ºF, rotating the baking sheet half way through cooking. When time is up, flip chicken pieces and bake for an extra 5 to 8 minutes or until skin is crispy. Remove from the heat and let sit for 5 minutes before serving.

Crispy Baked Chicken Leg Quarters (Very Easy, One Dish) image

This is one that I adapted from Recipe #199636 after I scored 4 huge chicken leg quarters on sale. ($0.39 a pound!). I added a few things and adjusted the cooking time and temp to to what worked for me. The skin got SO crispy and the chicken was moist and retained the flavors. It also fell off the bone. I hope you enjoy! UPDATE 11/13/15: THANK YOU for all of the great reviews! I am so glad it's such a hit! Make sure you check out the reviews for some other ideas on how to switch it up a little (but the original is still my personal favorite).

4 skin-on chicken leg quarters, with bone
1/2 cup soy sauce, divided
1 teaspoon garlic powder, divided
1 teaspoon seasoning salt, divided
1 teaspoon dill weed, divided

Steps:

  • Preheat oven to 375.
  • Line a large glass baking dish with foil. You can also add a baking rack to the pan to keep the chicken out of the grease and to help air circulate and make it crispier.
  • Remove excess fat from chicken quarters.
  • Separate the skin from the chicken, taking care that the skin stays attached at most points on the chicken. (You just want a flap. Do not remove the skin).
  • Brush the chicken (under the skin) with soy sauce.
  • Sprinkle some garlic powder, seasoned salt and dill weed on the chicken under the skin (I estimated the 1 tsp measures. Use as much or as little as you're comfortable with) and rub into the chicken.
  • Arrange the leg quarters in the pan, skin side up, taking care not to crowd. They need space to cook properly.
  • Brush both sides of the leg quarters with soy sauce.
  • Sprinkle the skin with garlic powder, seasoned salt and dill weed (to taste).
  • Place on middle rack in over and bake uncovered for an hour.
  • After an hour, increase oven temp to 400 and bake 15 minutes.
  • Chicken is done when internal temp reaches 165 (insert meat thermometer at thickest part of thigh, taking care not to touch the bone).
  • Let stand for 5 minutes before serving.

10 ounces boneless skinless chicken breasts
1/3 cup nonfat plain yogurt
2 tablespoons 1% low-fat milk
cooking spray
1 1/4 cups all-bran cereal
1/2 tablespoon caribbean jerk seasoning
1/4 teaspoon salt (approximately)
black pepper, about a dash

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the chicken into finger-like strips. Mix the milk and yogurt together until smooth. Add the chicken to the "buttermilk" mixture and refrigerate for about 10-15 minutes, or until your oven is heated and the rest of your ingredients are ready.
  • Pulse the cereal and seasonings until crumbly. (I left a few chunks of cereal, as I didn't want really fine breadcrumbs.) Put the crumbs onto a plate.
  • Remove the chicken from the fridge. Evenly coat the chicken in the crumbs and move to a baking sheet that has been sprayed lightly with cooking spray.
  • Bake for 10 minutes, flip and bake for about another 10 minutes, or until the chicken reaches 165 degrees F.
