RESTAURANT-STYLE BUFFALO CHICKEN WINGS
This is similar to the hot wings recipe served at a popular restaurant chain. If you have ever had them, you have to love them.

Steps:
- In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
- Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
- Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

THE BEST HOT WINGS EVER
My own recipe. I've been making these for years and every time I tweak it up a bit to make it hotter and hotter and to find the right taste. These are very spicy, but of course you can control the heat by adjusting the amount of peppers.

- **To make the sauce:.
- Melt butter. Add hot sauces, soy sauce and peppers. It doesn't matter if the chipotles are dried or in adobo sauce. Either way is good.
- Set aside in a pan.
- **To prepare wings:.
- *Divide wings, discarding the tips.
- *Deep fry in batches, until browned.
- *Drain each batch on paper towels.
- *After each batch is drained, toss into hot sauce mixture.
- Note: Once all the wings are in the sauce, toss, cover and simmer for a few minutes. This step isn't absolutely necessary, but lets the wings absorb more of the sauce.

BEST HOT WINGS
I found this on another website as a Hooter's Clone. It really is the best I have ever tasted and a frequent request from my guests. The Franks Red Hot makes the difference. Oh, and heat the sauce over VERY LOW heat or it will seperate. If you let the wings sit for a bit they will become moist an you can do the second breading without the egg wash. Enjoy!

- Combine breading in a bowl or gallon sized ziplock bag, coat chicken with flour mixture. Then dip floured chicken briefly in beaten egg (add a little bit of water to thin slightly) and again dredge in flour. Set aside.
- Gently melt butter in pan, add Franks Red Hot, pepper and garlic powder. Be careful to keep the heat medium to medium low, and do not boil or butter will separate and the mixture will not stay blended. (If that happens, whisk it real quick and carry on anyway).
- Fry chicken in a single layer (9-10 drumettes at a time) in deep fryer at 375°F for 12 - 13 minutes (so they are nice and crispy). Drain briefly in fry basket.
- Pour half of the sauce into a glass container with a tight fitting lid. Dump in the chicken, put on the lid and carefully shake, coating the entire wing with sauce. Remove from container and set on a plate. The breading will absorb the sauce within a minute or so. Serve with celery sticks and either Ranch or Blue Cheese dressing.
- (Note: When tripling the recipe, only double the sauce and breading. There will be plenty).

- Cut wings into 3 sections; discard wing tip section. In a deep cast-iron or electric skillet, heat oil to 350°. Fry chicken wings, a few at a time, about 9 minutes or until golden. Drain on paper towels; place in a large bowl. , In a small saucepan, combine the next 7 ingredients; cook and stir 5-10 minutes. Pour over cooked wings; let stand 10 minutes. With a slotted spoon, remove wings from sauce and place them in a single layer on greased baking sheets. , Bake at 350° for 15 minutes. Serve hot with vegetable sticks and dressing for dipping.

CAROLYN'S FAVORITE HOT WINGS
Someone asked me the other day how I made hot wings. Didn't have a printed recipe, just always did the same sort of stuff. Had to sit down and work it out. Here's the recipe. Hope you enjoy it as much as I do. Note that I put the minimum marinating time in with the prep time.

Steps:
- Cut wings into pieces discarding tips.
- Wash and pat dry with paper towels.
- Place pieces into a dish or a large baggie, add ½ C hot sauce and seal.
- Marinate at least 30 minutes or overnight is good too.
- Heat oil in deep fryer to 350°.
- Place flour, salt, pepper and cajun seasoning in a large baggie.
- Drain wings but do not pat dry.
- Add wings a few at a time to baggie, shaking to cover, then remove.
- Continue until all pieces are well coated with the flour mixture.
- Make up more if you need it.
- Discard the bag.
- Slowly add 1/2 of the wing pieces to hot oil.
- Fry until golden brown.
- Remove and drain on paper towel.
- Cook remaining wings and drain.
- In the meantime, melt butter in microwave.
- Add remaining ½ C hot sauce.
- Toss fried wings in sauce mixture and serve with your choice of Ranch or Blue Cheese dressing and celery sticks.
