During the past several months, this has been one of Jamin's most popular dishes. The spinach and scallop molds can be prepared several hours in advance, then cooked at the last minute.

Number Of Ingredients 11

2 dozen oysters, with their liquor
6 tablespoons butter
12 scallops, finely minced
Salt and freshly ground pepper
16 to 20 large leaves fresh spinach
1 small fennel bulb, finely minced
1 small onion, finely minced
1/2 cup dry white wine
1 cup creme fraiche
A pinch of saffron
4 teaspoons caviar (optional)

Steps:

  • Combine oysters, their liquor and one tablespoon butter in a small saucepan. Bring quickly to the boil and immediately strain oysters. Reserve liquid and oysters.
  • Season scallops with salt and pepper, and mix with one tablespoon of melted butter.
  • Blanch spinach leaves in boiling water, drain well and line four one-cup molds (round, flat-bottomed porcelain terrines work well) with the spinach, allowing a portion of the leaves to overlap the mold. Fill each cup with minced scallops and cover the top with overlapping leaves. Set aside.
  • Preheat oven to 350 degrees.
  • Prepare sauce: In a small saucepan, combine four tablespoons butter, the fennel and onion, and cook over low heat for 10 minutes. Add wine, oyster liquor and creme fraiche, and cook for two to three minutes. Strain sauce through a sieve (discarding fennel and onion), return to saucepan, add saffron and let reduce for several minutes, or until sauce is light and smooth. If preparing ahead, keep warm in a water bath.
  • Place molds in the oven and cook for 10 minutes. Reheat oysters for four minutes in the same oven.
  • Unmold spinach and scallop molds onto the center of a warmed dinner plate, arrange three oysters on each plate and cover oysters with the sauce. If desired, place one teaspoon caviar on top of each mold and serve immediately.

1 1/2 tablespoons lemon juice
1 teaspoon minced shallot (1 small shallot)
1/2 teaspoon pink peppercorns, crushed
2 tablespoons chilled prosecco
Pinch salt
12 oysters on the half shell
2 ounces hackleback, paddlefish or tobiko caviar

Steps:

  • Combine the lemon juice, shallots and peppercorns in a small bowl. Let sit in the fridge for about 1 hour to let the flavors marry.
  • Just before serving, add the prosecco to the sauce and season with a pinch of salt. Spoon the desired amount of the mignonette sauce over the oysters and top each with a dollop of caviar. Serve immediately.

12 large sea scallops, cut horizontally into 2 rounds
1/4 cup crème fraîche or sour cream
1/2 ounce caviar
4 fresh chives, cut into 1-inch lengths

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Season scallops with salt and pepper. Cook scallops until golden on bottom, about 2 minutes. Turn over; sauté until just cooked through, about 1 minute. Drain on paper towels. Cool to room temperature.
  • Top each scallop with 1/2 teaspoon crème fraîche. Top with caviar. Garnish with chives and serve.

POACHED SCALLOPS WITH CAVIAR SAUCE

1 cup clam juice
1/2 cup heavy cream
1 tablespoon cold unsalted butter
3 cups Court-Bouillon
18 large sea scallops or 6 jumbo live scallops in the shell
Fine sea salt and freshly ground white pepper
3 ounces osetra caviar
1/2 lemon, seeds removed
2 tablespoons thinly sliced chives
6 jumbo scallop shells (reserved from the live scallops or purchased at a gourmet shop) (optional)
Special Equipment
Rock salt (if using scallop shells)

Steps:

  • Bring the clam juice and heavy cream to a simmer in a small saucepan. Add the butter and whisk to incorporate. Set aside.
  • Bring the court-bouillion to a simmer in a pan large enough to accommodate the scallops. Season the scallops on both sides with salt and pepper. Add the scallops to the simmering court-bouillon and poach gently until they are cooked just to rare, about 1 1/2 minutes for large scallops, 2 to 2 1/2 minutes for jumbo scallops.
  • To serve, place a bed of rock salt on each plate and rest a scallop shell on it (if you do not have scallop shells, serve the scallops in shallow bowls). Place 3 large scallops or 1 jumbo in each shell.
  • Meanwhile, gently reheat the sauce. Remove from the heat, add the caviar, and stir until the caviar is just heated through, about 45 seconds. Squeeze the juice of the lemon into the sauce, add the chives, and season with pepper. Spoon the sauce over the scallops, making sure the caviar is evenly distributed. Serve immediately.

1/2 tablespoon unsalted butter or cooking oil
1 medium-size onion, finely chopped
1 small sweet red pepper, cored, seeded and finely chopped
2 large cloves garlic, minced
2 ounces fresh mushrooms, sliced thin
1/2 cup dry white wine
1 cup hot vegetable stock or water
1 teaspoon fresh thyme leaves
1 pound new potatoes, peeled and sliced
1 cup cooked cannellini beans
1 pint Peconic or Nantucket Bay scallops
Salt and freshly ground black pepper
1 tablespoon finely minced parsley

Steps:

  • Heat the butter or oil in a heavy three-quart saucepan. Add the onion and sweet red pepper and saute over medium heat until tender. Stir in the garlic, cook another minute or so, then stir in the mushrooms. Stir for about a minute, then add the wine. Simmer gently for five minutes.
  • Add the stock to the saucepan along with the thyme and the potatoes. Simmer, partly covered, about 15 minutes, until the potato slices are tender.
  • Briefly rinse and drain the cannellini beans and add them. Simmer another five minutes, then add the scallops. Simmer about five minutes longer, until the scallops are just cooked. Season to taste with salt and pepper and serve, sprinkled with parsley.

Cream and oyster liquor (the liquid that surrounds the mollusks in their shells) are a rich, flavorful base for this stew, which is enhanced with velvety mascarpone cheese and topped with salmon roe.

1 1/2 teaspoons very finely chopped shallot
1 leek, white and pale-green parts only, cut into 2-inch julienne, rinsed well
Coarse salt and freshly ground white pepper
1 medium red potato, cut into 1/4-inch dice
1 dozen shucked fresh oysters
1 cup half-and-half
1 cup heavy cream
3 tablespoons mascarpone cheese
Creme fraiche, for serving
4 teaspoons caviar or salmon roe
1/3 cup strained oyster liquor

Steps:

  • Melt butter in a large saucepan over medium heat. Add shallot; cook, stirring, 1 minute. Add leek; cook, stirring, until soft, about 2 minutes more. Stir in 1 teaspoon salt and 1/4 teaspoon pepper.
  • Add potato, and cook, stirring occasionally, 5 minutes. Stir in oyster liquor, half-and-half, and cream. Simmer until potatoes are almost tender, 8 to 10 minutes. Add oysters, and gently simmer until edges of oysters are ruffled and potatoes are tender, 3 to 5 minutes.
  • Remove from heat. Stir in mascarpone; season with salt and pepper. Divide among bowls. Top each with a dollop of creme fraiche and 1 teaspoon caviar.

12 green onions, chopped (white and green parts)
1/4 cup celery, chopped
1 garlic clove, minced

1 quart half-and-half cream
1 tablespoon fresh Italian parsley, chopped

1/2 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon dried basil

  • Melt 2 tablespoons of the butter in a sauce pan over medium heat. Add the green onions, celery and garlic and saute until slightly softened. Remove form the heat.
  • In a seperate pan over medium heat, melt remaining butter and whisk in the flour. Whisk in the half & half, and bring just to a simmer, being careful no to boil it. Reduce heat to low and add the seasonings (parsley through black pepper). Add the vegetable mixture and the oysters and scallops. Simmer for 15 minutes, stirring frequently.
  • Add the Worcestershire and sherry and contimue to simmer until the stew thickens.
  • Ladle into bowls and top with croutons and serve.

SCALLOP AND SOLE RAGOUT

2 cups fish stock (see recipe)
1 1/3 pounds gray sole or flounder fillets
12 bay scallops
1 small carrot, peeled
1 small leek, white only, washed well
1/4 of a small celeriac (celery root), peeled
6 mushrooms
6 tablespoons unsalted butter
1/4 cup Vouvray
Salt and freshly ground white pepper
2/3 cup heavy cream
10 fresh basil leaves, coarsely chopped
Fresh lemon juice to taste

Steps:

  • Place the stock in a small saucepan and boil until it is reduced by two-thirds. Hold in a warm spot.
  • Cut the sole across the fillet into strips about three-quarters of an inch across. Slice the scallops in half horizontally. Set aside.
  • Cut the carrot, leek and celeriac into julienne strips about one inch by an eighth of an inch. Remove the stems from the mushrooms and thinly slice the caps.
  • Over medium-low heat, place the butter and half the Vouvray in a wide, shallow saucepan with a thick bottom or a skillet. When the butter is melted, add the carrot, leek and celeriac and cook until they're al dente, about five minutes. Add the mushrooms and season lightly with salt and pepper to taste.
  • Lay the sole strips over the vegetables and sprinkle with the remaining Vouvray and the fish stock. Season lightly again. Cover the pan and cook over medium heat for two minutes. Add the scallops and cook two minutes longer. The seafood should just turn white. Using a slotted spoon, transfer the fish and scallops to a warm plate. Add the cream and basil to the pan and boil vigorously until the sauce thickens. With the slotted spoon, remove the vegetables to the plate. Taste and season with salt, pepper and lemon juice to taste.
  • Serve on large plates, arranging the fish, scallops and vegetables attractively, then spooning the sauce over.

1/3 cup canned vegetable broth
1 tablespoon fresh lemon juice
1 heart of romaine lettuce, sliced crosswise into 1-inch strips
1 cup frozen peas, thawed
20 sea scallops, side muscles trimmed
4 lemon wedges

Steps:

  • Melt 2 tablespoons butter with oil in heavy large pot over medium-low heat. Add onion and sauté until beginning to soften, about 6 minutes. Add garlic and sauté about 30 seconds. Increase heat to medium-high; add asparagus tips, sugar snap peas and thyme sprigs and sauté 2 minutes. Sprinkle with salt and pepper. Add vegetable broth and lemon juice, then lettuce and peas. Cover and cook until lettuce is wilted, stirring frequently, about 2 minutes. Whisk 1 tablespoon butter into ragout. Remove from heat.
  • Sprinkle scallops with salt and pepper. Melt remaining 2 tablespoons butter in heavy large skillet over medium-high heat. Working in batches, add scallops to skillet and sear until brown and just opaque in center, about 2 minutes per side. Divide ragout among 4 bowls. Top with scallops, dividing equally. Garnish each with 1 lemon wedge.

6 large chanterelle mushrooms, quartered
2 strips applewood-smoked bacon, chopped
½ cup peeled and chopped celery root
1 medium shallot, finely chopped
1 cup vegetable broth
1 cup whipping cream
½ cup dry white wine
2 tablespoons unsalted butter
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon lemon juice
coarse salt and ground black pepper to taste
1 pound large sea scallops

Steps:

  • Heat 2 tablespoons oil in a large cast iron skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, until browned, 5 to 7 minutes.
  • Add bacon, celery root, and shallot to the skillet; cook until shallot is tender, about 5 minutes. Add broth, cream, and wine and bring to a boil. Reduce heat and simmer, uncovered, until liquid is reduced by half, 8 to 10 minutes.
  • Whisk butter into the skillet until melted. Stir in parsley and lemon juice. Season with salt and pepper. Transfer mixture to a bowl and keep warm.
  • Sprinkle scallops lightly with salt and pepper. Wipe out the cast iron skillet and place over medium-high heat. Add remaining oil. Add scallops to hot oil and cook until slightly browned, firm, and opaque, about 2 minutes per side. Serve scallops and ragout together.

Alfred Portale, chef and part -- owner of the Gotham Bar and Grill in New York City, concocted this delicate dish that combines the sweet tenderness of scallops with the exquisite brine of osetra caviar, nestled in a bed of practically luminescent -- green brussels -- sprout leaves and potatoes.

6 small potatoes, unpeeled
4 ounces brussels sprouts
1 cup water
1 medium carrot, peeled and diced
1/4 cup heavy cream
2 tablespoons unsalted butter, cut in pieces
2 tablespoons vegetable oil
12 large (about 1 pound) sea scallops, preferably diver -- harvested, small muscle flaps removed and reserved
Alfred's Scallop-Butter Sauce
2 tablespoons chopped chives
2 ounces osetra caviar

Steps:

  • Bring a stockpot of water to a boil over high heat; add salt. Add the potatoes, and cook until tender, 15 to 20 minutes. Drain potatoes. Cut potatoes into 1/3-inch-thick rounds, and transfer to a bowl. Set aside.
  • Bring a stockpot of lightly salted water to a boil over high heat; prepare an ice-water bath. Trim bottoms from brussels sprouts. Peel away the inner leaves, one by one. Add carrot to boiling water, and cook until tender, about 4 minutes. Using a slotted spoon, transfer carrot to bowl with the potatoes.
  • Add the leaves of the brussels sprouts to the boiling water, and cook until just tender, about 3 minutes. Using a slotted spoon, transfer leaves to the ice-water bath to stop the cooking process. Drain in a colander, and add leaves to bowl with carrots and potatoes.
  • In a medium saucepan, bring 1 cup water to a boil. Add cream, and return to a boil. Boil 2 minutes, reduce heat to low, and whisk in butter, piece by piece.
  • Add the reserved potatoes, carrots, and brussels sprouts. Season with salt and pepper. Cook until the vegetables are heated through, and keep the vegetable ragout warm.

Using kitchen tongs, turn scallops; reduce heat to medium. Cook scallops until other sides have browned, but are still rare inside, about 2 minutes.
  • Reserving 1 cup vegetable ragout, divide equal amounts of the remaining ragout among four warm dinner plates. Arrange 3 scallops on top, then top each with 1/4 cup reserved ragout. Spoon the scallop-butter sauce around the plates, and sprinkle with chives. Garnish each dish with equal amounts of caviar, and serve immediately.
