1 whole roasting chicken
4 medium white potatoes
6 whole fresh carrots
1 large onion
1/4 cup olive oil, plus
2 tablespoons olive oil
1/4 cup lemon juice
1 teaspoon lemon pepper
1 teaspoon garlic salt, divided
1/2 teaspoon fresh coarse ground black pepper
nonstick cooking spray, such as Mazola or Pam cooking spray

Steps:

  • Preheat oven to 400 degrees.
  • Thoroughly wash chicken in cold water, especially cavity, pat dry.
  • Using kitchen shears, remove backbone and ribs to "butterfly" chicken.
  • Gently separate, but do not remove, skin over chicken breast, legs and thighs.
  • Wash and cut potatoes (skin on), carrots, and onion into coarse cubes.
  • Spray a 13 by 9 inch baking dish with non-stick spray.
  • Spread vegetables in bottom of dish, drizzle with 2 tablespoons olive oil, sprinkle with 1/2 teaspoons garlic salt and 1/2 teaspoons coarse ground black pepper.
  • Place chicken on top of vegetables.
  • Combine 1/4 cup olive oil, 1/4 cup lemon juice, 1 teaspoons lemon pepper, and 1/2 teaspoons garlic salt with a whisk.
  • Gently lift chicken skin and drizzle olive oil and lemon juice mixture under the skin.
  • Pour any remaining oil mixture over skin.
  • Tent dish with aluminum foil. Place in preheated oven for 40 minutes, remove foil, and roast for 30-45 minutes longer, until chicken juices run clear.

3 tablespoons garlic salt
1 tablespoon ground black pepper

2 (3 1/2) pound frozen whole chickens - thawed, rinsed, and dried
2 stalks celery, roughly chopped
6 large green onions, green parts only, chopped
2 cloves garlic, peeled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine lemon-pepper, garlic salt, black pepper, thyme, and salt in a bowl. Set aside. Slice 2 lemons into rounds for stuffing; reserve 1 for juice.
  • Place both chickens in a roasting pan, not touching. Squeeze 1 lemon over both chickens, making sure juice coats evenly. Split sliced lemons, celery, green onions, and garlic in half and stuff each chicken. Use cooking string to tie legs together, making sure legs are facing up. Pat dry rub all over chickens.
  • Bake, uncovered, in the preheated oven for 1 hour. Rotate the pan and baste chicken with juices. Continue to bake, basting often, for 50 minutes. Increase oven temperature to 375 degrees F (190 degrees C) and continue to baste and bake until juices run clear and chickens are no longer pink in the centers, about 40 minutes more. 2 medium carrots, cut into 1-inch pieces
2 stalks celery, peeled and cut into 1-inch pieces

3 bone-in, skin-on chicken breasts (about 1 3/4 pounds)
1 teaspoon poultry seasoning

Steps:

  • Adjust the oven rack to the top position and preheat to 450 degrees F. Toss together the potatoes, carrots, celery, onions, 1 teaspoon of the olive oil, 1/2 teaspoon salt and a few grinds of pepper on a rimmed baking sheet and arrange in a single layer. Roast until the vegetables brown slightly and the potatoes just begin to soften, about 20 minutes, tossing halfway through.
  • Meanwhile, rub the chicken breast skin with the remaining 1 teaspoon oil and sprinkle with the poultry seasoning and 1/2 teaspoon salt. 3 lemons

  • Preheat the oven to 200°C/390°F.
  • Drizzle the chicken with olive oil then season generously with salt and pepper all over.
  • Make sure to season the cavity of the chicken as well.
  • Place lemon slices and thyme inside the cavity of the chicken and sprinkle thyme leaves over the chicken.
  • Slice the lemons and the tops off of the garlic bulbs. Place them in a roasting dish then place the chicken on top.
  • Pour the chicken stock around the chicken then cover with foil.

2 fresh lemons
4 tablespoons unsalted butter, melted
10 sprigs fresh thyme
kosher salt
1 (5 -6 lb) whole young roasting chickens
fresh ground black pepper
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 350°F. Thinly slice one lemon and set aside; then peel and juice the other lemon. In a small sauce pot, over low heat, add the butter and when melted, add in the lemon peel and 2 sprigs of thyme and cook until fragrant, about 1 to 2 minute Add in the lemon juice and lightly season with salt.
  • Remove neck and giblets from chicken. Rinse the chicken under cold water then pat dry with paper towel. Using a syringe, inject half the butter into several spots of the chicken then brush the remaining butter over the chicken. Generously season inside and out with salt and pepper. Do you ever wonder what to do with the last of the chips and crumbs in a chip bag? My DH and DS for some reason never can finish off a bag before starting a new one and I needed to do something. I saved a sandwich size bag of the crumbs and chips, crushed them up, added some bread crumbs and coated my chicken breasts. 4 ounces potato chips, any flavor 1 sandwich size baggie (I mixed sour cream and onion with regular, but can see this with BBQ chips as well)
10 large chicken breasts, bone in
2 tablespoons Worcestershire sauce
2 tablespoons garlic powder
1/2 cup Italian seasoned breadcrumbs
1 egg, for wash
1/4 teaspoon milk, for wash

Steps:

  • Crush the chips finely.
  • Add enough Italian bread crumbs to mixture for coating chicken (I needed 1/2 cup).
  • Wash chicken and pat dry.
  • Dunk in egg/milk wash.
  • In ziploc bag coat chicken pieces 1 or 2 at a time.
  • Put in large roasting pan.
  • Sprinkle on Worcestershire sauce.
  • Sprinkle on garlic powder.
  • Use salt & pepper to taste (we do not use salt, chips have enough for our taste).
  • Bake in oven 45-55 min at 350°F (ovens vary so check after 35 minutes. I have propane so it burns hot).

2 tablespoon butter (softened)
1 lemon
3-4 cloves garlic (minced)
salt & black pepper to taste
1 whole chicken (approx 3 lbs)

Steps:

  • Zest the yellow rind of the lemon. Cut the lemon in half and juice half of the lemon into a small bowl. Add the rind, olive oil, softened butter, garlic, salt and pepper. Stir well (the mixture should be fairly thick).
  • Gently lift the skin from the chicken breasts and place about 1 tablespoon of the butter mixture under the skin. Massage it evenly across the breasts.
  • Cover the skin of the chicken with the remaining butter mixture. Refrigerate for 30-45 minutes.
  • Preheat oven to 425°F. Slice the remaining lemon half and place it inside the chicken along with ½ an onion. Tie the legs together. Place the chicken in a shallow pan breast side up and place in oven.
  • Turn oven down to 375°F and bake for 1 ¼ hours or until the inner thigh reaches 165°F.

1 bunch or fresh rosemary

  • Preheat oven to 425° F
  • Remove the chicken giblets. Rinse chicken inside and out. Pat dry. Place chicken in a large roasting pan, breast side up.

  • Truss legs (tie them together with kitchen twine).

2 teaspoons grated lemon zest
2 fresh rosemary sprigs plus 1 sprig minced

½ cup white wine

Steps:

  • Preheat the oven to 425°F and position a rack in the lower third of the oven. Mix the butter with minced rosemary, 3 cloves of minced garlic, lemon zest, salt and pepper.
  • Pat the chicken dry and rub half of the butter, garlic and lemon zest mixture under the skin and the rest over the chicken and season with salt and pepper. Generously season cavity of chicken with salt and pepper and stuff with lemon half, ½ head of garlic, 2-3 quarters of onion and 2 rosemary sprigs. 1 stick unsalted butter, at room temperature
Grated zest and juice of 1 lemon
2 cloves garlic
2 teaspoons chopped fresh thyme
2 teaspoons paprika
Kosher salt and freshly ground pepper
2 4-to-5-pound chickens, rinsed and patted dry
1 cup dry white wine

Steps:

  • Preheat the oven to 400 degrees F. Pulse the butter, lemon zest and juice, garlic, thyme, paprika, 2 teaspoons salt and 1 tablespoon pepper in a food processor until smooth.
  • Put the chickens on a rimmed baking sheet. Loosen the skin on the breasts and legs with your fingers. Rub about three-quarters of the lemon-pepper butter under the skin, then rub the rest all over the chickens. Refrigerate, uncovered, 2 hours or up to 8 hours before roasting.
  • Tie the chicken legs together with twine and tuck the wings under the body; place breast-side up on a rack in a large roasting pan. Pour the wine into the pan and transfer to the oven; roast until the chickens are golden and crisp and a thermometer inserted into the thickest part of the thigh registers 170 degrees F, about 1 hour, 50 minutes. (Tent with foil if the skin browns too quickly.)
  • Let the chickens rest 10 minutes before portioning (see below). Season with salt.
  • Grab one of the legs with tongs and pull it away from the body; cut through the skin with kitchen shears.
  • Pull the leg out and back to pop the joint; remove the leg with the shears. Repeat on the other side.
  • Separate the drumsticks from the thighs with the shears.
  • Cut off the wings as close to the body as possible.
  • Insert the shears into the tail end of the chicken and cut along the breastbone.
  • Pull back one of the breasts and cut it off the backbone. Repeat on the other side.

Whole tangerines, peel and all, roast alongside chicken in a sweetened soy sauce that thickens into a glaze and lacquers the bird. The fruit wedges soften in the syrupy sauce while infusing it with their floral bittersweetness. Reminiscent of savory Cantonese soy sauce chicken and tangy American Chinese orange chicken, this dish also combines the warmth of ginger with the bit of heat from ground hot chiles. You can eat the tangerine wedges along with the chicken, which is delicious with its sauce over steamed rice or boiled noodles. Serve with stir-fried brussels sprouts or bok choy.

5 small tangerines or clementines
1/2 packed cup dark brown sugar
1/4 cup soy sauce
1 1/2 teaspoons rice vinegar or distilled white vinegar
1 teaspoon ground cayenne or other hot red ground chile
1 (4-pound) whole chicken
Salt and black pepper
8 slices peeled fresh ginger

Steps:

  • Heat oven to 400 degrees.
  • Squeeze 1/4 cup juice from 2 to 3 tangerines into a small bowl; reserve the spent peels. Cut the remaining tangerines into wedges with their peels intact, and set aside. Add the brown sugar, soy sauce, vinegar and cayenne to the tangerine juice and whisk until the sugar dissolves.
  • Generously season the chicken inside and out with salt and pepper. Tuck the wingtips behind the body. Stuff the tangerine peels and 6 ginger slices into the cavity, then tie the legs together using kitchen twine. Place in a large ovenproof skillet, and scatter the tangerine wedges and remaining 2 slices ginger around the chicken.
  • Slowly pour the juice mixture all over the chicken, then slide the skillet into the oven. Roast for 30 minutes.
  • Using a large spoon or baster, quickly and carefully coat the chicken with the pan sauce. Continue roasting, basting every 10 minutes, until the chicken is browned and cooked through, 20 to 30 minutes longer. An instant-read thermometer inserted in the thickest part of the breast should register 155 degrees and, in the leg, 170 degrees. The chicken will continue to cook while it rests.
  • Transfer the chicken to a cutting board and let rest for about 5 minutes. If the pan sauce isn't already syrupy, bring it to a boil over medium-high heat on the stovetop. Be sure to wear oven mitts or use a kitchen towel to hold the skillet (the handle is hot). Cook, stirring occasionally, until the bubbles grow larger and paler brown, and the sauce is the consistency of syrup, about 5 minutes. Discard the ginger.
  • Serve the chicken whole or carved with the glaze poured all over the meat. Arrange the tangerine wedges from the pan around the bird. You can eat them, if you'd like.

  • Prep Chicken: A night before, or 4 hours before roasting, pat dry the chicken. Rub finger through skin on breast, and thighs to loosen it up. Only up-to where skin does not tear.
  • Place chicken on a large prep plate. Massage with mixture of olive oil, lemon zest, soy sauce, lemon juice, minced garlic, 1/2 tsp salt. Make sure to add some to cavity, under the loose skin wherever you get access easily. Now, insert few slices of lemon and sliced garlic under the skin as deep as your fingers can reach without tearing the skin. Add remaining lemon slices, garlic clove , few thyme sprigs in the cavity.
  • Mix chili flakes, paprika, cumin, remaining salt, black pepper, and thyme from 4-5 sprigs into a small bowl. Massage half over the skin. Insert bird in a large plastic bag or seal-able container. Transfer any liquid from prep plate into the container. Cover and refrigerate overnight, or for at-least 4 hours.
  • Roast: Preheat oven at 375 degrees Fahrenheit. In baking dish, add sliced potatoes, season with sprinkle of salt.. Take chicken out of plastic bag and top on potatoes. Massage remaining spice-blend (saved in step 3) on top skin. Roast for 50 minutes to an hour until temperature in thickest part of thigh is 165 degrees Fahrenheit.
