Roasted Vegetables with Feta and Herbs image

A dish bursting with the flavour of roasted Mediterranean vegetables, this recipe from Mary Berry's TV show, Classic, makes for a perfect vegetarian main course.

Steps:

  • 1. Preheat the oven to 220°C/200°C fan/Gas 7 and line two large baking sheets with baking paper (see tip). 2. Place the vegetables in a large bowl, then add the olive oil, season with salt and pepper and toss until coated. Arrange in a single layer on the lined baking sheets. 3. Roast in the oven for 30-40 minutes until golden and a little charred, turning them halfway through if needed. The vegetables will be all be cooked when the squash is tender. Leave to cool on the baking sheets. 4. Place all of the dressing ingredients in a jug, then mix well and season with salt and pepper. 5. Put the roasted vegetables on a serving platter or in a bowl, pour over the dressing and check the seasoning. Scatter with the chopped herbs and the feta (if using). Prepare ahead: The vegetables and herbs can be prepared (sliced and chopped) up to 2 hours in advance. The dressing can be made up to a day ahead. Mary's Classic Tip: The vegetables will fill two large baking sheets, so you will need to use two oven shelves. Make sure they are both positioned in the upper levels of the oven, so the vegetables all cook at roughly the same rate. Turn halfway if needed.

1 pound rainbow carrots, cut on a bias into 1-inch chunks
1 pound multicolored mini creamer potatoes, larger ones halved
1 pound Brussels sprouts, halved
1/4 cup extra-virgin olive oil, plus more for drizzling
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon coriander seeds
8 ounces feta
3 tablespoons Greek yogurt
1 tablespoon honey
Zest and juice of 1 lemon
1/4 cup fresh mint leaves, chopped
1/4 cup fresh parsley leaves, chopped
2 tablespoons fresh chives, chopped
1/2 cup pomegranate seeds
1/4 cup pistachios, toasted and chopped

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Combine the carrots, potatoes and Brussels sprouts in a large bowl. Drizzle with 1/4 cup olive oil and sprinkle with the salt, pepper and coriander. Spread the vegetables on the prepared baking sheet and roast for 15 to 20 minutes. Flip the vegetables and continue to roast until tender and browned all over, 15 to 20 minutes more.
  • Meanwhile, add the feta, yogurt, honey, lemon zest and lemon juice to a food processor and pulse until smooth and creamy, adding a little water if needed to loosen the puree. Add the herbs and pulse until just distributed (you don't want to turn the mixture green; you just want to combine them). Spread the feta mixture on a platter. Arrange the roasted vegetables on top of the feta. Sprinkle the pomegranate seeds and pistachios over the top and finish with a drizzle of olive oil.

Roasting vegetables in foil packets in the coals of a grill brings out their deep flavors and adds just a hint of smoke. The vegetables are served on a platter with a rich zaatar and lemon dressing and a shower of crumbled feta. Make this Mediterranean-inspired combination the centerpiece of a vegetarian summer meal or as a side dish for your next barbecue.

1/2 cup olive oil
2 teaspoons dried oregano
1 teaspoon smoked paprika
3 cloves garlic, minced
2 carrots, cut into 1/4-inch-thick rounds
1 red bell pepper, cut into large bite-size pieces
1 ear corn, cut crosswise into 6 pieces
1 Italian eggplant, halved lengthwise and cut into 1/2-inch-thick half moons
1 large russet potato, quartered lengthwise and cut into 1/2-inch-thick pieces
1 zucchini, halved lengthwise and cut into 1/2-inch-thick half moons
Kosher salt and freshly ground black pepper
1/4 cup freshly squeezed lemon juice (from about 1 1/2 lemons)
1 tablespoon zaatar
1 teaspoon sumac
4 ounces feta (see Cook's Note)

Steps:

  • Prepare a charcoal grill with a hot bed of coals for indirect cooking. The coals are ready when they are ashed over and glowing.
  • Mix together 3 tablespoons of the olive oil, the oregano, smoked paprika and garlic in a large bowl. Add the carrots, peppers, corn, eggplant, potatoes and zucchini to the olive oil mixture and toss to combine, making sure each piece is fully coated with the marinade.
  • Tear off eight 12-by-18-inch pieces of heavy-duty aluminum foil and arrange them in stacks of 2 on a work surface (you should have 4 stacks). Divide the vegetables among the stacks, about 2 heaping cups per pouch.
  • For each stack, bring the 2 long sides of the foil together and fold the edges over each other a few times to seal, leaving room around the vegetables for steam. Fold over the edges of the short sides to seal.
  • Carefully spread the coals using a large pair of tongs, then add the foil packets and cover them with coals. Cover the grill with the lid and cook until the vegetables are tender, 25 to 30 minutes. Check for doneness by inserting a wooden skewer into each packet; it should easily slide all the way through the vegetables.
  • Remove the foil packets to a heatproof work surface and let cool for 5 minutes before carefully opening. Use a spatula or a large spoon to transfer the contents to a platter. Sprinkle the vegetables with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Whisk together the lemon juice, zaatar, sumac, 1/2 teaspoon salt, 1 tablespoon water and the remaining 5 tablespoons olive oil in a small bowl. Drizzle the dressing over the vegetables, making sure they are all well coated. Crumble the feta over the vegetables. Taste and add more salt or pepper, if needed.

325g pack frozen grilled vegetables (we used Ocado essentials)
1 tsp Mexican seasoning
1 small avocado , peeled, stoned and chopped
juice 1 lime
75g cherry tomatoes , halved
2 small flour tortillas
2 handfuls rocket
2 tbsp light feta cheese , crumbled

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a roasting tin, season the frozen vegetables and toss with the Mexican seasoning, then roast in the oven for 15 mins, until hot. Meanwhile, mix the avocado, lime juice and tomatoes with some seasoning, then set aside.
  • Put the tortillas on a baking sheet and cook above the vegetables for the final 5 mins of cooking time until crisp. Transfer the crispy tortillas to plates, scatter with rocket and top with the roasted vegetables. Add some of the avocado salsa and sprinkle over the feta.

1 lb orzo pasta
1 zucchini, chopped into large chunks
10 ounces portabella mushrooms, chopped into large chunks
2 large bell peppers, chopped into large chunks
1 large Spanish onion, chopped into large chunks
4 garlic cloves
8 ounces feta cheese, diced into 1/2 inch chunks
1/4 cup parsley
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
kosher salt
black pepper

Steps:

  • Preheat oven to 400 degrees.
  • Chop vegetables and place in baking sheet. Peel garlic cloves and add (unchopped) to vegetables. Coat with 4 tablespoons olive oil and season liberally with salt and pepper.
  • Roast vegetables for approximately 20 to 25 minutes, or until tender.
  • While vegetables are roasting, bring large pot of salted water to boil over high heat and add orzo. Cook for approximately 10 minutes (or according to box directions).
  • When vegetables are roasted, remove garlic cloves and set aside.
  • Drain orzo and cool down slightly under running water. Put orzo in large bowl and add roasted vegetables.
  • In small bowl, whisk together remaining olive oil and vinegar. Add in roasted garlic cloves and mash with a fork. Whisk again to combine. Set aside. You may not need all of the dressing.
  • Add diced feta cheese and chopped parsley to orzo and vegetable mixture. (Feta will melt slightly) Toss to combine and add in balsamic vinagrette. Salt and pepper to taste.
  • Serve warm or cold. (I prefer warm!).

125 g self raising flour
50 g whole meal flour
75 g chilled butter, diced
3 tablespoons cold water
1 red pepper, cored, deseeded and cut into thick strips
1 onion, cut into wedges
3 tomatoes, halved
1/4 butternut squash, peeled and cut into chunks
1 carrot, cut into chunks
2 garlic cloves, chopped
4 small rosemary sprigs
125 g feta cheese, cubed

Steps:

  • Preheat the oven to 200°C.
  • Mix the flours then rub in the butter. Add the water and mix to a firm dough. Knead briefly then chill for 30 minutes.
  • Mix all the vegetables in a roasting tin and add the garlic and rosemary. Sprinkle over some dried mixed herbs if you like. Roast for 35 minutes.
  • Meanwhile, roll out the pastry and place in a 23cm (9 inch) dish. Cover the pastry with parchment paper and fill the dish with baking beans to hold it down. Bake blind for 15 minutes, then remove the paper and beans and bake for another 5 minutes.
  • Fill the pastry case with the vegetables and arrange the feta on top. Bake for another 10 minutes then serve.

1 teaspoon dry oregano
1 loaf country bread or 1 loaf sourdough bread
1 eggplant
1 tablespoon olive oil
1 (7 ounce) jar roasted red bell peppers or 1 freshly roasted red bell pepper
1 pinch red pepper flakes
salt
pepper
4 ounces feta cheese
2 teaspoons lemon juice

Steps:

  • Cut eggplant crosswise into 1/2" slices.
  • Mix 1/2 tbsp.
  • oil with 1 tbsp.
  • water.
  • Brush mixture on both sides of eggplant slices.
  • Grill or broil until lightly brown and tender (3 to 4 minutes per side).
  • Chop eggplant coarsely and mix with chopped red bell peppers.
  • Season with salt and pepper.
  • In a small bowl, mash feta with fork.
  • Add lemon juice, oregano, red pepper flakes and remaining 1/2 tbsp.

  • Blend until smooth and spreadable.
  • Season with pepper.
  • Slice loaf in half horizontally and scoop out about 1" of soft interior from each half.

3 cups eggplants, peeled and chopped
2 cups yellow onions, chopped
1 1/2 cups mushrooms, diced
1 1/2 cups zucchini, diced
1 cup sweet red pepper, diced
1 tablespoon olive oil
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup crumbled feta cheese (4 oz)
1/2 cup fresh basil, chopped
1 lb frozen white bread dough, thawed
vegetable oil cooking spray
1 egg white
1 tablespoon water

Steps:

  • Combine 1st 8 ingredients on a 15 X 10 X 1" jellyroll pan; stir well, and spread evenly.
  • Bake at 425F for 45 minutes, stirring every 15 minutes.
  • Spoon vegetables into a bowl, stir in cheese and basil.
  • Divide dough into 8 equal portions.
  • Working with 1 portion at a time (cover the rest of the dough so it doesn't get dry), roll each portion into 7" circle on a lightly floured surface.
  • Spoon 1/2 cup vegetable mixture onto half of each circle; moisten edges of the dough with warm water- if you have those handy calzone molds this it the time to pull them out and fold them over-- otherwise continue with these directions on how to do it without!
  • Fold dough over filling; press edges together with a fork to seal.
  • Place calzones on a baking sheet coated with cooking spray Combine egg white and water; brush over calzones.
  • Bake at 375F for 20 minutes or until golden.
  • Let cool on a wire rack.
  • Serve warm or at room temperature.

200g quinoa
3 tbsp olive oil
1 red onion , peeled but left whole, then cut into 1cm thick round slices
2 peppers , red, yellow or mixture, deseeded and cut into chunky long wedges
200g baby courgette , halved lengthways
3 garlic cloves , unpeeled
zest and juice 1 lemon
pinch of sugar
small pack flat-leaf parsley , roughly chopped
200g pack feta cheese

Steps:

  • Cook the quinoa following pack instructions, then drain really well and set aside.
  • Meanwhile heat oven to 200C/180C fan/gas 6. Toss the onion and peppers with 1 tbsp of the oil and seasoning on a roasting tray, then roast for 15 mins.
  • Toss the courgettes and garlic with the rest of the veg and roast for another 15 mins.
  • Squeeze the roasted garlic cloves out of their skins and mash with some seasoning. Stir in the remaining oil, lemon juice and zest and season with sugar to taste. Drizzle over the quinoa and toss together with the roasted vegetables and parsley. Crumble over the feta, toss gently again and serve.

  • Set your oven to 200°C (180°C fan-forced). While the oven is warming, heat an oven-proof frying pan over high heat and add a little of the oil. Fry the eggplant, zucchini, onion and potato in batches until lightly browned on both sides (you can use two frying pans to speed up the process). Add more oil as necessary, but remember that the eggplant will soak up much of the oil you use, so don't add too much. Later, as the eggplant roasts, it will release its oil.
  • When the vegetables are fried, heat about 2 tbsp of oil in the same pan and lightly brown the garlic. Place the tomatoes in a single layer on the base of the roasting pan and top with the fried vegetables in layers, seasoning with salt and pepper and scattering with dried oregano between the layers as you go. Roast for 30-40 minutes, until the vegetables have browned and softened. Remove from the oven and serve in the pan, topped with crumbled feta and the finely shredded parsley.
  • Adam's tip You don't need to salt eggplant before cooking. The eggplant varieties we eat today are much less bitter so salting, which draws out those bitter compounds, is no longer necessary.
