1 teaspoon sea salt
1/2 teaspoon black pepper
1/3 cup grated parmesan cheese

Steps:

  • Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet lined with parchment paper or silicone sheet. Spread them in one layer.
  • Sprinkle with Parmesan cheese and roast in the oven at 230°C, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes.

2 tablespoons grated reduced-fat parmesan cheese
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh parsley
1 teaspoon garlic powder
1/4 teaspoon black pepper
salt
1/4 teaspoon crushed red pepper flakes (optional)
1 tablespoon extra virgin olive oil
1 teaspoon extra virgin olive oil

Steps:

  • Preheat the oven to 425°F.
  • Trim the broccoli, leaving about 1/2 inch of stem attached to the florets.
  • Toss the broccoli in a large bowl with the Parmesan, parsley, garlic powder, black pepper, and salt to taste.
  • Toss in the red pepper flakes, if using.
  • Drizzle with olive oil and toss again until all of the florets are thoroughly coated.
  • Transfer to a medium nonstick baking sheet an bake for 10 minutes.
  • Then toss the broccoli again and bake for another 5 to 7 minutes, or until the florets are lightly browned and tender.
  • Serve immediately.

Good olive oil
1 1/2 teaspoons kosher salt

2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. 2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the broccoli, garlic, 1 tablespoon oil and some salt and pepper in a medium bowl. Add the remaining tablespoon oil to coat the bottom of a large ovenproof skillet, preferably cast iron. The result is crispy on the outside, tender on the inside and a great new way for me to enjoy one of my favorite veggies. Hope you like it too. The garlic is smashed and diced to get as much garlic flavor as you can from each clove.

1 bunch broccoli, cut into pieces
1/4 cup olive oil
2 -4 garlic cloves, smashed and diced
1/4 teaspoon red pepper flakes (optional)
salt and pepper
1/4 cup parmesan cheese, grated

Steps:

  • Preheat to the oven to 400°F.
  • Mix together the oil, garlic, red pepper flakes, salt and pepper.
  • Toss together the broccoli and the oil mixture in a large bowl.
  • You may have to adjust the oil a bit if your bunch of broccoli is smallish.
  • You don't want it swimming in oil on the cookie sheet.
  • Put broccoli on cookie sheet.
  • Place in the oven for about 10-15 minutes.
  • Be sure and check often to make sure it's not burning, you want it to caramelize but not burn.
  • If you don't like al dente broccoli, cook a little longer.
  • I usually remove after 10-15 minutes.
  • When the broccoli is as done as you like remove from the oven and toss with the cheese.
