THE BAKED POTATO

Steps:
- Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
- Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.
OVEN POTATOES
These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

- Preheat oven to 375 degrees.
- Slice potatoes into 1" cubes and place on a baking sheet (preferrably with sides to avoid losing any).
- Drizzle olive oil over the top of the potatoes.
- Sprinkle salt, pepper, basil, thyme and oregano over the top of the potatoes and oil.
- Using your hands mix the oil, spices and potatoes together until evenly coated.
- Make sure that potatoes are in one layer on the pan.
- Place in the oven and bake for 45 minutes.
- At this point take a spatula and move them around in the pan.
- Bake for an additional 15 to 20 minutes.
- If desired, sprinkle a little more salt on them when they are first out of the oven.

- Preheat the oven to 450ºF.
- Clean and cut the potatoes into 1/2"-1" cubes.
- In a large bowl, toss the potatoes with the oil and spices.
- Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
- Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.

- Put a roasting tin in the oven (one big enough to take the potatoes in a single layer) and heat oven to 200C/fan 180C/gas 6.
- Peel 1kg potatoes and cut each into 4 even-sized pieces if they are medium size, 2-3 if smaller (5cm pieces).
- Drop the potatoes into a large pan and pour in enough water to barely cover them.
- Add salt, then wait for the water to boil. As soon as the water reaches a full rolling boil, lower the heat, put your timer on and simmer the potatoes uncovered, reasonably vigorously, for 2 mins.
- Meanwhile, put 100g duck or goose fat or 100ml olive oil into the hot roasting tin and heat it in the oven for a few mins, so it's really hot.
- Drain the potatoes in a colander then shake the colander back and forth a few times to fluff up the outsides.
- Sprinkle with 2 tsp flour and give another shake or two so they are evenly and thinly coated.
- Carefully put the potatoes into the hot fat - they will sizzle as they go in - then turn and roll them around so they are coated all over.
- Spread them in a single layer making sure they have plenty of room.
- Roast the potatoes for 15 mins, then take them out of the oven and turn them over.
- Roast for another 15 mins and turn them over again. Put them back in the oven for another 10-20 mins, or however long it takes to get them really golden and crisp. The colouring will be uneven, which is what you want.
- Scatter with Maldon salt and serve straight away.

GREEK POTATOES (OVEN-ROASTED AND DELICIOUS!)
These potatoes are a staple in our home. Whether accompanying roast lamb or chicken, or just on their own, we have them a couple of times a week. They are delicious and the ones that get overly-brown in the pan and stick a bit are MINE! Clean up is a little tricky with this recipe, unless you line your pans with foil, but I find that just filling the pan up with hot, sudsy water and forgetting for an hour (something I apparently have no problem doing ;-)) helps a lot.

- Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
- Put all the ingredients into a baking pan large enough to hold them.
- Season generously with sea salt and black pepper.
- Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
- The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
- Bake for 40 minutes.
- When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
- Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.

- Do not be afraid of overcooking the potatoes- they will be delicious.
- Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.

- Preheat the oven to 450F. Line a large baking sheet with parchment paper or a silicone mat.
- Prepare the potatoes next. Give them a quick rinse under cold water, then cut larger potatoes into wedges and smaller potatoes in half. If using regular sized potatoes, peel the skin first, then cut into smaller pieces.

- Preheat your oven to either 475 or to 375 degrees fahrenheit (I will explain later!). Place a metal pan in your oven while it preheats. If you have room, a good roasting pan is perfect.
- Now start with the potatoes you like best. My two choices would be Russets (my go-to for most things because they taste more “potato-y” to me) or Yukon golds.
- Drain your potatoes well and put them in a bowl. Add 2 tablespoons olive oil (or, if you have access and are feeling decadent, duck fat, goose fat or beef fat… any of these are an indulgence that’s totally worth it), 2 teaspoons of salt, and ½ teaspoon of black pepper.
