One Pot Cilantro Lime Shrimp Scampi image

Shrimp Scampi is a classic, but this Cilantro Lime Shrimp recipe takes it up a notch. Turn this quick and easy dish into the most delicious shrimp scampi pasta, or eat it alone as a tasty appetizer!

1/2 cup all purpose flour
salt and pepper to taste
2 tablespoons olive oil
1 1/2 pound jumbo shrimp (cleaned and deveined.)
12 tablespoons unsalted butter (divided)
2 cloves garlic (minced)
1/4 cup chardonnay or dry white wine
1/4 cup freshly squeezed lime juice
1/4 cup fresh cilantro (finely chopped)
lime wedges and more cilantro for garnish

Steps:

  • In a shallow bowl, stir together the flour with a pinch salt and pepper. Set aside.
  • Heat a large frying pan over medium/high heat. Add the olive oil and allow to heat up.
  • Toss the shrimp in the flour mixture and add to the pan in batches. Cook for approximately 2-3 minutes, turning/tossing occasionally. When opaque/cooked through, transfer to a plate and set aside.
  • Reduce heat to medium and add in two tablespoons butter. When the butter has melted, add the garlic and sauté for 2-3 minutes or until translucent and fragrant.
  • Slowly add in the wine, lime juice, and cilantro. Bring to a boil and then reduce to a simmer and allow to cook for 2 full minutes, stirring occasionally.
  • Whisk in the remaining butter a bit at a time, allowing it to melt before adding more.
  • add the shrimp back into the skillet and coat completely with the sauce. Sprinkle with more cilantro and garnish with lime wedges.
  • Serve hot served with rice, toasted bread, or pasta.

1 lb shrimp ((not frozen, needs to be thawed))
salt and pepper to taste
1 tablespoon garlic salt
1 lime ((freshly squeezed))
1/2 cup chicken broth ((or you can use water))
2 tablespoons fresh cilantro
1/2 teaspoon red pepper flakes ((you can use 1 tsp for more spice))
8 oz angel hair pasta

Steps:

  • In a large pot of boiling water cook angel hair (or spaghetti) pasta according to directions. You could also serve this with rice if you wanted to.
  • Melt butter in a large skillet over medium high heat.
  • Add shrimp, salt and pepper, garlic salt. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes.
  • Stir in lime juice and chicken broth (you can use water). Bring to a simmer.
  • Stir in fresh cilantro and red pepper flakes.
  • Toss with angel hair pasta and garnish with more cilantro and lime. Serve immediately.

1 lb raw shrimp (peeled and deveined)
2 tablespoons olive oil
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
4 garlic cloves (minced)
1/2 cup cilantro (, fresh, chopped)
1/4 cup chicken stock
1/4 cup white wine ((I used Chardonnay))
2 tablespoons lime juice (freshly squeezed )
4 ounces pasta (linguine or fettuccine)
fresh cilantro (chopped, for garnish)

Steps:

  • Heat large skillet until hot on medium heat. Add 1 tablespoon olive oil - it should run easily but not sizzle or burn. Add shrimp to the skillet, making sure it doesn't crowd, sprinkle 1/4 teaspoon of salt and 1/2 teaspoon of red pepper flakes over shrimp. Cook shrimp, stirring once or twice, on medium heat, about 3-4 minutes total, until pink in color.
  • Add minced garlic, chopped cilantro, chicken stock, white wine, 2 tablespoons freshly squeezed lime juice to the shrimp. Reheat gently on medium heat, stirring to combine, for about 1 minute. Remove shrimp from the skillet.
  • Cook pasta according to package instructions. Drain.
  • Add pasta to the skillet with sauce. Mix to coat. Taste, and add more salt if need.
  • Add shrimp back on top of pasta. Garnish with chopped fresh cilantro.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. 2 tablespoons sesame oil
2 tablespoons lime juice
1/2 teaspoon each minced fresh garlic and ginger
1 fresh jalapeno pepper, seeded and minced
1 pound fresh shrimp (8 to 12 ounces net after peeling and deveining)
Salt
8 ounces dried or fresh black ink pasta
2 tablespoons vegetable oil
1 cup thawed frozen petite peas
2 tablespoons roughly chopped cilantro leaves

Steps:

  • In a mixing bowl combine the sesame oil, lime juice, garlic, ginger and minced jalapeno and marinate the shrimp in the mixture for 30 minutes.
  • While this is marinating bring 1 quart of salted water to a boil for the pasta and peel and devein the shrimp, leaving the little tail on.
  • When the pasta is about 5 minutes shy of being cooked, drain the shrimp, reserving the marinating juices and pat dry.
  • Heat 2 tablespoons of vegetable oil in a skillet. Saute the shrimp for 2 minutes or until done. Add the peas and reserved marinating juices and bring the liquid to a boil. Adjust the seasoning. Drain the pasta, divide it into two serving bowls and top each portion with shrimp. Garnish with cilantro.

8 large shrimp - peeled, deveined, and chopped into bite-sized pieces
2 teaspoons olive oil
¼ small onion, minced
4 (8 inch) flour tortillas
½ cup shredded Mexican cheese blend

Steps:

  • Combine roasted red peppers, cilantro, lime juice, and chili powder in a shallow dish. Toss chopped shrimp in the lime mixture. Chill in the refrigerator.
  • Meanwhile, heat a skillet over medium heat and add olive oil. Saute onion in the hot oil until tender and translucent, about 5 minutes. Add shrimp and lime mixture and saute until shrimp are pink and cooked through, about 3 minutes. Remove mixture from the skillet.

1 1/4 cups packed fresh cilantro, plus 1/4 cup chopped
1/4 cup scant green onion, chopped
3 tablespoons fresh lime juice
2 garlic cloves, pressed
1 tablespoon jalapeno, chopped and seeded
1/2 cup plus 1 tb olive oil
1 lb linguine
1 lb uncooked medium shrimp, peeled and deveined
3 tablespoons tequila
1/4 cup Cotija cheese (or feta)

Steps:

  • Blend 1 1/4 cups cilantro leaves and next 4 ingredients in processor until coarse puree forms. With machine running, gradually add 1/2 cup oil. Season generously with salt. (Pesto can be made 1 day ahead. Cover and chill).
  • Cook linguine in large pot of boiling salted water until tender, but still firm to bite, stirring occasionally. Drain.
  • Meanwhile, heat remaining 1 Tb oil in heavy large skillet over medium-high heat. Add shrimp and cook until almost opaque in center, about 3 minutes. Remove skillet from heat; add tequila. Return skillet to heat and stir until sauce is syrupy, about 30 seconds. Add pesto; stir to coat. Remove from heat.
  • Add pasta to sauce in skillet; toss to coat. Season with salt and pepper. Divide pasta and shrimp among 4 plates. Sprinkle Cotija cheese and chopped cilantro over and serve.

2 limes, juice of
3 -4 canned chipotle chiles in adobo, finely chopped
1 teaspoon ground cumin
