2 cups all-purpose flour (or gluten free flour blend)
2 teaspoon ground cinnamon
pinch nutmeg
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs (room temperature)
1/2 cup honey
1/2 cup coconut oil (melted and cooled)
2/3 cup plain yogurt (room temperature)
2 teaspoon vanilla extract
2 cups chopped pears (about 1/2" pieces)
1/2 cup all-purpose flour (or gluten free flour blend)
1/3 cup light brown sugar (or coconut sugar)
1 teaspoon ground cinnamon
5 tablespoons cold butter (chopped)
1/2 cup chopped pecans

Steps:

  • Preheat oven to 425°F. Grease a muffin tin and set aside.
  • Combine flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Add chopped pears to dry ingredients and toss to coat. Set aside.
  • In a separate bowl combine eggs, honey, coconut oil, yogurt, and vanilla.
  • Pour dry ingredients in with wet and stir until just combined.
  • Evenly divide into medium sized muffin tin. Should fill each cavity to the top.
  • For the crumb topping: combine flour, sugar and cinnamon. Add cold butter and combine until fine crumbs. Add pecans.
  • Evenly divide crumb topping between muffins, if using.
  • Bake at 425° for 5 minutes.
  • Turn oven down to 350°F and continue baking for 11 minutes.
  • Muffins should be slightly browned and toothpick comes out clean.
  • Let cool in pan 5 minutes before removing to a cooling rack.

1 cup quick cooking oats
1 egg
¼ cup vegetable oil
1 cup all-purpose flour
¼ cup white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a small bowl, combine milk and oats; let soak for 15 minutes.
  • In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

When we were farming and raising our three children-now all grown-oatmeal was the "main course" for breakfast many mornings. Often, I'd end up with a cup or so of it left over. So I was glad when my sister-in-law, a war bride from England, asked if I'd like to give her recipe for oatmeal muffins a try! They're so nice to have with a cup of coffee if someone stops in to visit. They freeze well, too, and keep moist...I take them to our church bake sales. These days, I also have half a dozen grandchildren to make my muffins for.

1 cup packed brown sugar
1 teaspoon baking powder

1/2 cup vegetable oil

1 teaspoon vanilla extract

  • Preheat oven to 375 degrees F (190 degrees C). Coat top and insides of jumbo muffin pan with cooking spray, or line with muffin papers.
  • In a large bowl, cream together 1/2 cup butter, 1 1/4 cups sugar, vanilla, and salt until light and fluffy. Beat in eggs, one at time. Mix together the 1 3/4 cups of flour, baking powder, and 1/2 teaspoon cinnamon. Stir in the flour mixture alternately with the milk, mixing just until incorporated. Fold in apples and walnuts. Scoop into muffin cups to fill 3/4 full. Lightly sprinkle the tops with cinnamon crumble.
  • To make Cinnamon Crumble: In a small bowl, combine 1/4 cup white sugar, 1/2 teaspoon of cinnamon, 3 tablespoons all-purpose flour, and 2 tablespoons cubed butter. Mix together using a pastry blender, or two butter knives. The crumble topping should resemble small peas.
  • Bake in preheated oven for 30 minutes, or until tops are golden brown, and a toothpick inserted into the center comes out clean. If they are browning too quickly, cover with tin foil. Remove from pans, and cool on wire rack.

1 teaspoon baking powder

2/3 cup pears with juice
2/3 cup soymilk
1 teaspoon lemon juice
1/2 cup Splenda granular
1/3 cup sugar-free maple syrup
1 tablespoon oil
1/4 cup egg white
1 tablespoon Splenda sugar substitute
1/2 tablespoon coconut
1 teaspoon butter

Steps:

  • Heat oven to 400 and spray jumbo muffin tins with cooking spray.
  • Combine flour through salt in large bowl.
  • Combine remaining ingredients (less 2 tbsp oats for topping) in another bowl and let sit for 5 minutes.
  • Mix wet and dry ingredients until just mixed.
  • Spoon batter into tins.
  • Mix reserved oats, Splenda, coconut and butter and sprinkle on muffins.

1 1/2 cups quick-cooking rolled oats, not instant or 1 1/2 cups oats
1 large bosc pears or 1 large Anjou pear, firm but ripe
1 cup fat-free buttermilk
1/2 cup packed brown sugar
1/3 cup maple syrup
2 tablespoons canola oil
1 egg
cooking spray

Steps:

  • Preheat oven to 400 degrees. Prepare muffin cups with a light coating of cooking spray.
  • Combine dry ingredients (flours, baking soda, baking powder, salt and cinnamon) together in a bowl.
  • Core and dice the pears into small chunks. Combine the pears, buttermilk, maple syrup, oil, sugar, egg and all but 2 tablespoons of the oatmeal together in a second bowl. Let sit for 5 minutes.
  • Combine the pecans and reserved oatmeal together to use as a topping for the muffins. Set aside.
  • Combine the wet and dry ingredients together until just mixed. Spoon batter into muffin cups, filling 2/3s full. Sprinkle with the pecan/oatmeal mix. Bake 18 to 20 minutes until a toothpick inserted in the middle comes out clean. Cool 5 minutes and remove from pan.

1 cup (240ml) milk
1 cup (80g) old-fashioned whole rolled oats
1 and 1/4 cups (156g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (115g) unsalted butter, melted and slightly cooled
1/2 cup (120ml) honey
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 cup (190g) fresh or frozen blueberries (see note if using frozen)

Steps:

  • Combine milk and oats. Set aside for 20 minutes so the oats puff up and soak up some moisture. This is crucial to the recipe! (I usually melt the butter now so it has a few minutes to cool.) Don't do this the night before as that's too long for soaking. If you find the oats haven't soaked up any moisture after 20 minutes, give it a stir and wait 10 more minutes.
  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners.
  • Whisk the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl until combined. Set aside. Whisk the melted butter, honey, egg, and vanilla extract together in a medium bowl until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the soaked oats (milk included, do not drain) and blueberries. Fold everything together gently just until combined.
  • Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.

2-3 large very ripe bananas
1/2-3/4 cup sugar, white or brown
2 large eggs
2-4 Tbsp. canola or olive oil
1 tsp vanilla (if you have it)
1 ½ cups all-purpose flour, or half all-purpose and half whole wheat
1 tsp baking soda
pinch salt
1 ripe pear, roughly chopped (don't bother peeling it)
½ cup chopped walnuts

Steps:

  • Preheat oven to 375F.
  • In a medium bowl, mash together the bananas, sugar, eggs, oil and vanilla with a potato masher or spatula until blended and the bananas are well mashed - don't worry about getting all the lumps out. Add the flour, baking soda and salt, and stir just until the batter starts coming together; add the pear and walnuts, or whatever additions you are using, and stir just until combined. Don't overmix, or your muffins could be tough.
  • Spoon the batter into muffin tins that are lined with paper liners or sprayed with nonstick spray, filling them about 3/4 full. If you like, sprinkle the tops with coarse sugar. Bake for20-30 minutes, depending on the size of your muffins, until golden and the tops are springy to the touch.

These made a lovely breakfast this morning! Fairly heavily modified from a recipe in a cute little "all muffins" cookbook I got years ago. The original recipe says this makes 12 but I have old/small muffin tins and I got 24. If you have large muffin tins you'll probably only get 12.

1/2 cup sucanat (or use brown sugar)
2 eggs
1 1/4 cups nonfat vanilla soymilk
3/4 cup maple syrup
1 1/4 cups whole wheat flour
1 1/2 cups quick-cooking oatmeal

1 teaspoon baking soda
1/4 teaspoon salt (optional)
2 tablespoons quick-cooking oatmeal

Steps:

  • Preheat your oven to 400 degrees. Spray your muffin tins with nonstick spray.
  • In a large bowl beat together the sucanat and eggs until well mixed.
  • Add the soymilk and maple syrup and mix well.
  • On top of the liquid add the whole wheat flour, the 1 1/2 cups oatmeal, baking powder and baking soda.
  • When all has been added, mix well being careful not to overbeat.
  • Spoon your batter into your muffin cups. Once they are full, sprinkle a little bit of the oatmeal on top of each muffin. The original recipe calls for a teaspoon on each but we don't like that much oatmeal on top.
  • Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
