Steps:
- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.
OVEN-BAKED ONION RINGS
It's hard to bake an onion ring as good as a deep-fried version. These are pretty good, so check it out! This makes a very crunchy, easy, no-muss, no-fuss onion ring.

This is not my original recipe and I can't remember who to give credit to, but thanks to someone. enjoy!Try using Panko Crumbs- Don't worry if they are not completed coate the crunch will still be there

Steps:
- Preheat the oven to 450 degrees F.
- Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
- Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.
OVEN FRIED ONION RINGS
I saw this is America's Test Kitchen today and they looked so delicious! They used Regular Lay's potato chips and saltine crackers for their breading, but they didn't say how much, I am guessing at least 1/2 cup of each.

OMG OVEN BAKED ONION RINGS
From Appetite For Reduction by Isa Chandra Moskowitz, this is a FAB-U-LOUS recipe....even if health or calorie-consciousness isn't important. These onion rings had a crunchy, super-tasty outer shell and the sweet onions cooked perfectly and were a terrific contrast, even though they were baked. I HIGHLY recommend that you try this recipe...you'll be hooked.

- Preheat oven to 450 degrees farenheit. Line a rimmed 12 x 18 inch baking sheet with parchment paper sprayed with cooking spray and set aside.

- In the other bowl, mix the breadcrumbs and salt. Drizzle in the olive oil and mix well.
- Arrange your bowls and pan from left to right as they will be used.
- Dip each onion ring into the batter, tapping any excess off, then transfer into the bread crumbs and use your "dry" hand to sprinkling a handful of crumbs over the inside and outside of the onions so that each is covered thoroughly.
- Carefully transfer each onion ring to the baking sheet, creating only a single layer per sheet.
- Spray the onion rings lightly with nonstick cooking spray and bake for 8 minutes, Flip carefully and bake for another 6-8 minutes. The rings should be varying shades of brown, and crisp. Taste one to check for doneness. Serve immediately.

Steps:
- Adjust oven racks to lower-middle and upper-middle positions and heat oven to 450 degrees.
- Place 1/4 cup flour in shallow baking dish. Beat egg and buttermilk together in medium bowl. Whisk remaining 1/4 cup flour, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon pepper into buttermilk mixture.
- Pulse saltines and chips together in food processor until finely ground and place in separate shallow baking dish.
- Pull apart the rings in each round, discarding any that are less than 2 inches in diameter. Working one at a time, dredge each onion ring in flour, shaking off excess. Dip in buttermilk mixture, allowing excess to drip back into bowl, then drop into crumb coating, turning ring to coat evenly. Transfer to large plate and repeat with remaining onion rings.
- Pour 3 tablespoons oil onto each of two rimmed baking sheets. Place in oven and heat until just smoking, about 8 minutes. Carefully tilt heated sheets to coat evenly with oil, then arrange onion rings on sheets.
- Bake, flipping onion rings over and switching and rotating position of baking sheets halfway through baking, until golden brown on both sides, about 15 minutes. Transfer onion rings to plates lined with paper towels to drain briefly. Serve immediately.
