SOUS VIDE LEMON-BUTTER SHRIMP

These tender and juicy shrimp are infused with the wonderful flavors of thyme, lemon, and Creole seasoning. They are so easy to make, they practically cook themselves! You never have to eat chewy, rubbery shrimp again when using the sous vide method.

1 pound large shrimp, peeled and deveined
½ teaspoon Creole seasoning (such as Tony Chachere's®), or more to taste
8 1/2-inch wide strips lemon zest
3 sprigs fresh thyme
2 ounces chilled butter, cut into 4 to 6 slices

Steps:

  • Set up a large pot or water bath and place your sous vide cooker into the water. Set temperature to 135 degrees F (57 degrees C) according to manufacturer's directions.
  • Combine shrimp and Creole seasoning in a bowl and toss to coat. Place shrimp in a single layer inside a large vacuum bag. Place lemon peel, thyme, and butter evenly on top. Seal the bag using a vacuum sealer.
  • Place bag into the water and set timer for 30 minutes.
  • Remove cooked shrimp from bag and serve. Sprinkle additional Creole seasoning on top, if desired.

Serve these scallops with lots of crusty bread as an appetizer or on a grilled steak for surf and turf.

6 sea scallops
salt and ground black pepper to taste
½ tablespoon olive oil
1 teaspoon garlic, finely minced
¼ cup dry white wine
2 tablespoons lemon juice
2 tablespoons butter
½ teaspoon dried parsley
1 pinch Cajun seasoning
1 tablespoon finely chopped green onion tops

Steps:

  • Fill a medium pot with warm water, attach the sous vide and set temperature to 123 degrees F (51 degrees C) and timer to 30 minutes.
  • Remove the tough muscle from the side of the scallops, if present, and lightly season with salt and pepper. Transfer scallops in a resealable plastic bag and remove all the air using the water immersion method.
  • Place the scallops in the pot when the temperature has reached 123 degrees F (51 degrees C). Cook until timer goes off.
  • Remove scallops from the bag and pat dry; if scallops are wet, they will not sear well.
  • Heat oil in a small skillet over medium-high heat until it shimmers. Add scallops and sear until lightly brown, about 2 minutes. Turn and cook for 1 more minute. Remove from skillet and move to a warmed dish.
  • Add garlic to skillet and cook until fragrant, about 30 seconds. Deglaze skillet with white wine and lemon, scraping up any browned bits. Mix in parsley and Cajun seasoning; simmer sauce for 2 minutes. Stir in butter until just melted. Spoon sauce over scallops, sprinkle with green onion tops, and serve.

6 tablespoons dry white wine
1 teaspoon white wine vinegar
1 lemon, juice and zest of, reserved for garnish
3 ounces unsalted butter, chilled and cubed
fresh ground black pepper
1 teaspoon olive oil
4 1/2 ounces button mushrooms
7 ounces jumbo shrimp, cooked
4 ounces asparagus tips, cooked

Steps:

  • Place the wine and vinegar in a small saucepan over a moderate heat and reduce to 2 tablespoons. Add the lemon juice.
  • Gradually whisk in the butter over a low heat, one cube at a time until slightly thickened and glossy.
  • Remove from the heat, add seasoning to taste, then set to one side.
  • Heat the oil, add the mushrooms and cook for 4-5 minutes, stirring occasionally until golden. Add the shrimp and asparagus, heat through and transfer to a warmed serving plate.
  • Serve straight away with the warm lemon butter sauce poured over.
