2 cups all-purpose flour
2 teaspoons smoked paprika
4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Steps:

  • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  • In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  • In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  • Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  • Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

I saw this is America's Test Kitchen today and they looked so delicious! They used Regular Lay's potato chips and saltine crackers for their breading, but they didn't say how much, I am guessing at least 1/2 cup of each.

4 -5 large yellow onions, enough to make about 24 rings
3/4 cup buttermilk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne (if you like some heat) (optional)
1 egg
1/4 cup flour
1/2 cup lay's regular potato chips
1/2 cup saltine crackers
3 teaspoons oil

Steps:

  • Heat oven to 450°F When hot, oil two baking sheet with the oil and place into the oven to get hot, about 8 minutes.
  • Cut off the ends of the onions and peel the outer layer off. Slice into 2 Inch thick slices. Remove the inside layers to created the rings.
  • In a food processor, combine the potato chips and the saltine crackers and mix fine into crumbs. Lay them into a medium sized bowl.
  • In another separate bowl, combine the buttermilk, egg, and salt, pepper, and cayenne and stir to combined.
  • In a small bowl add the 1/4 cup of flour.
  • Now to assemble the onion rings. Dip each ring into the flour first to get it dried. Dip them into the buttermilk mixture and then into the crumb mixture.
  • Lay them onto a dish.
  • Remove the baking sheets from the oven and place the rings on the hot pans, allowing enough room to fry. There should be 12 rings on each sheet.
  • Place back in the oven and cook for about 8 minutes. Remove them from the oven and turn each ring to assure both sides get fried. Place back in the oven and continue cooking for about 8-10 minutes and golden brown.
  • Allow to cool for a few minutes and enjoy!

1 large sweet onion, sliced into 1/2-inch rounds
1 cup nonfat buttermilk
1/4 cup cornstarch
1/3 cup all purpose flour
3/4 cup yellow cornmeal
1/4 finely grated Parmesan cheese
1 Tablespoon Miss Brown's House Seasoning (recipe follows)
Olive oil cooking spray
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  • Stir together the buttermilk and cornstarch in a shallow bowl.
  • Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  • Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

BEER-BATTERED ONION RINGS

You probably don't want to know you can make better-than-restaurant quality onion rings in your own kitchen, but these are the best onion rings I've ever had. The recipe is from Cook's Country June/July 2009 from America's Test Kitchens. Make sure you don't soak the onion rounds longer than 2 hours or they will turn soft and become too saturated to crisp properly. Cider vinegar may be used in place of malt vinegar. Use a candy thermometer to make sure the oil gets to 350 degrees. According to Cook's Country, ordinary yellow onions will produce acceptable rings but sweet onions are preferred. The beer soaking with vinegar and salt softens and flavors the raw onion. If the batter is too thick, the rings will be doughy. Too thin, and it will run off. Add the beer gradually until the batter falls from the whisk to form a ribbon trail. Fry the battered onion rings in small batches and transfer them one at a time to the hot oil so they don't stick together.

Steps:

  • Place onion rounds, 2 cups beer, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper in zipper-lock bag. Refrigerate 30 minutes or up to 2 hours.
  • Heat the oil in a large Dutch oven over medium-high heat to 350 degrees.
  • While oil is heating, combine flour, cornstarch, baking powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper in large bowl.
  • Slowly whisk in 3/4 cup beer until just combined (some lumps will remain).
  • Whisk in remaining beer as needed, 1 tablespoon at a time, until batter falls from whisk in steady stream and faint trail across surface of batter.
  • Adjust oven rack to middle position and heat oven to 200 degrees.
  • Remove onions from refrigerator and pour off liquid.
  • Pat onion rounds dry with paper towels and separate into rings.
  • Transfer 1/3 portion of rings to batter.
  • One at a time, carefully transfer battered rings to oil.
  • Fry until rings are golden brown and crisp, about 5 minutes, flipping halfway through frying.
  • Drain rings on paper towel-lined baking sheet, season with salt and pepper, and transfer to oven.
  • Return oil to 350 degrees and repeat with remaining onion rings and batter.
  • Serve.

1 yellow onion - ends trimmed off, peeled, and cut crosswise into 1/2-inch slices
2 egg whites
2 tablespoons milk
1 pinch cayenne pepper, or to taste
3 cups panko bread crumbs, or more if needed
½ cup all-purpose flour
salt and ground black pepper to taste
cooking spray

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Separate onion slices into individual rings.
  • Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
  • Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.

1 large egg, at room temperature
1/2 cup buttermilk, at room temperature
1/4 teaspoon cayenne pepper
salt & fresh ground pepper
30 saltine crackers
4 cups kettle-cooked potato chips, crumbled into smaller pieces
2 large yellow onions, cut evenly into 1/2-inch-thick rounds
6 tablespoons vegetable oil

Steps:

  • Adjust oven racks to lower-middle and upper-middle positions and heat oven to 450 degrees.
  • Place 1/4 cup flour in shallow baking dish. Beat egg and buttermilk together in medium bowl. Whisk remaining 1/4 cup flour, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon pepper into buttermilk mixture.
  • Pulse saltines and chips together in food processor until finely ground and place in separate shallow baking dish.
  • Pull apart the rings in each round, discarding any that are less than 2 inches in diameter. Working one at a time, dredge each onion ring in flour, shaking off excess. Dip in buttermilk mixture, allowing excess to drip back into bowl, then drop into crumb coating, turning ring to coat evenly. Transfer to large plate and repeat with remaining onion rings.
  • Pour 3 tablespoons oil onto each of two rimmed baking sheets. Place in oven and heat until just smoking, about 8 minutes. Carefully tilt heated sheets to coat evenly with oil, then arrange onion rings on sheets.
  • Bake, flipping onion rings over and switching and rotating position of baking sheets halfway through baking, until golden brown on both sides, about 15 minutes. Transfer onion rings to plates lined with paper towels to drain briefly. Serve immediately.
