OVEN FRIED CHICKEN

Oven Fried Chicken image

Provided by Food Network Kitchen

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 12

3 pounds bone-in chicken parts, skin removed (breasts halved crosswise)
2 cups dill pickle juice (from a 32-ounce jar of pickles)
2 large eggs
1 tablespoon Dijon mustard
2 cups rice cereal squares
1/2 cup vegetable oil
1 cup panko breadcrumbs
Kosher salt and freshly ground pepper
1 teaspoon garlic powder
1 teaspoon celery seeds
1 teaspoon dried dill
Ranch dressing, for serving

Steps:

  • Place the chicken in a large resealable plastic bag set in a baking dish. Pour the pickle juice into the bag. Seal the bag and massage gently. Refrigerate 1 to 2 hours.
  • Meanwhile, whisk the eggs and mustard in a medium bowl; set aside. Pulse the rice cereal in a food processor to make fine crumbs. Heat 1/4 cup vegetable oil in a medium skillet over medium heat. Add the cereal crumbs, panko, 3/4 teaspoon salt and a few grinds of pepper. Cook, stirring frequently, until the crumb mixture is a deep golden brown, 6 to 8 minutes. Transfer to a medium bowl and stir in the garlic powder, celery seeds and dill. Let cool to room temperature.
  • Place a rimmed baking sheet on the lowest oven rack and preheat to 425 degrees F. Remove the chicken from the pickle juice and pat dry with paper towels. One piece at a time, dip the chicken in the egg mixture, letting any excess drip off, then coat in the crumb mixture, pressing with your hands to adhere.
  • Remove the hot baking sheet from the oven and brush with the remaining 1/4 cup vegetable oil. Place the chicken on the baking sheet and bake until golden and a thermometer inserted into the breasts registers 160 degrees F and the thighs 170 degrees F, 30 to 35 minutes. Serve with ranch dressing.

BISCUIT-WRAPPED FRIED CHICKEN

Biscuit-Wrapped Fried Chicken image

Provided by Food Network Kitchen

Categories     appetizer

Time 3h

Yield 24 pieces

Number Of Ingredients 18

1 cup buttermilk
1/2 cup Frank's RedHot, Texas Pete or Louisiana hot sauce
Kosher salt
14 ounces skinless, boneless chicken thighs (2 to 3 large)
2 cups all-purpose flour, plus more for dusting
Kosher salt
1 tablespoon baking powder
2 teaspoons sugar
1 cup half-and-half
2 cups all-purpose flour
2 teaspoons paprika, plus more for sprinkling
1 teaspoon cayenne pepper
1 teaspoon chopped fresh thyme
Freshly ground black pepper
Vegetable oil, for frying
Kosher salt
5 tablespoons unsalted butter, melted
2 tablespoons honey

Steps:

  • Marinate the chicken: Whisk the buttermilk, hot sauce and 1 teaspoon salt in a medium bowl. Cut the chicken into 24 small pieces (about 3/4 by 2 inches each) and add to the marinade; cover and refrigerate at least2 hours or overnight.
  • Make the dough: Whisk the flour, 1 teaspoon salt, the baking powder and sugar in a large bowl. Slowly pour in the half-and-half, stirring with a wooden spoon until a rough dough forms. Turn out onto a lightly floured surface and knead until the dough comes together, about 1 minute. Pat into a rectangle, then roll out until it's 8 by 12 inches (about 1/8 inch thick). Cut the dough into 24 strips (about 1 by 4 inches each) and set on a parchment-lined baking sheet; refrigerate 30 minutes.
  • Fry the chicken: Combine the flour, paprika, cayenne, thyme and 1 teaspoon black pepper in a large bowl. Heat about 2 inches of vegetable oil in a deep skillet over medium heat until a deep-fry thermometer registers 360 degrees F. Working in batches, remove the chicken from the marinade, letting the excess drip off. Toss in the seasoned flour, then fry, turning occasionally, until golden brown and just cooked through, about 3 minutes. Remove with a slotted spoon and drain on paper towels; sprinkle with salt.
  • Preheat the oven to 375 degrees F. Wrap a strip of chilled dough around each piece of fried chicken, pressing lightly to seal; set on the baking sheet, seam-side down. Brush the dough with 2 tablespoons of the melted butter and sprinkle with salt and paprika. Bake until golden brown, about 12 minutes. Combine the remaining 3 tablespoons melted butter and the honey; brush onto the biscuits while still hot.

LINDY BOGGS'S OVEN-FRIED CHICKEN

Lindy Boggs's Oven-Fried Chicken image

Lindy Boggs, who represented New Orleans in Congress for 18 years, was as astute in the kitchen as she was in politics, and deployed the knowledge that she had gained growing up on a Louisiana plantation in both. Mrs. Boggs, a Democrat who championed women's economic concerns, did all the cooking for her yearly garden soirees, which were attended by more than 1,000 guests. Here is her easy recipe for oven-fried chicken, which should be for anyone afraid of stovetop frying. It is a weeknight recipe from a busy woman who cooked, and governed, with confidence and grace.

MY OVEN "FRIED" CHICKEN AND BISCUITS

My Oven

I usually do this with chicken breast, boneless or bone-in. You can do it with whatever parts you like. I've been making my oven "fried" chicken like this since the '60s! This may sound like a lot of work, but it just takes more time to write it out than to do it. NOTE: See the comment of Jacqueline in KY dated June 10. She warns about expired biscuit mix.

Provided by Nana Lee

Categories     Chicken

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 8

6 chicken pieces, preferably bone-in skin on breasts
1 1/2 cups biscuit mix
1/3 cup solid shortening
1/3 cup butter, not margarine
milk
salt
pepper
poultry seasoning

Steps:

  • IMPORTANT! THE TIMING FOR THIS RECIPE IS BASED ON USING GOOD SIZED CHICKEN BREAST WITH SKIN AND BONE-IN. IF USING OTHER PARTS, ADJUST THE TIME ACCOURDINGLY.
  • Put the 1/3 cup of shortening and 1/3 cup butter in 9x13-inch baking pan lined with foil. I use solid Crisco.
  • Put baking pan into cold oven and heat oven to 400°F.
  • Meanwhile, put biscuit mix and seasonings in large plastic bag.
  • Put one piece of chicken in bag and shake to coat.
  • Do this for all pieces.
  • When 400°F is reached, remove the pan from the oven.
  • Place chicken pieces "skin" side down in hot pan.
  • Bake for approx 35 minutes.
  • Meanwhile, using the Bisquick left in the bag, add enough Bisquick and milk to make a recipe of biscuits per directions on box.
  • You can make drop or rolled biscuits.
  • When the time is up on the chicken, remove the pan from the oven, turn the pieces over and CROWD them over to one short side of pan.
  • On other side, place or drop biscuits close together in all those gorgeous juices.
  • Put back into oven and bake for 15 or more minutes, until biscuits are done.
  • There is no need to butter THESE biscuits, they have soaked up all the juices etc from the baking pan!
  • ENJOY!

2 (8 ounce) boneless, skinless chicken breasts
⅔ cup buttermilk
1 tablespoon Buffalo sauce
1 ½ teaspoons garlic powder
1 cup all-purpose flour
1 teaspoon poultry seasoning
½ teaspoon ground black pepper
¼ cup olive oil, or as needed

Steps:

  • Slice each chicken breast horizontally into 2 thin fillets. Place chicken in a resealable zip-top bag with buttermilk, Buffalo sauce, and garlic powder. Seal the bag and shake to blend ingredients and evenly coat the chicken. Refrigerate for at least 2 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, poultry seasoning, and pepper in a shallow dish or pie plate. Blend with a fork or whisk.
  • Remove chicken from the marinade and shake off excess. Dip chicken in the breading mixture until well and evenly coated on both sides. Discard the remaining marinade.
