OSSO BUCO WITH RISOTTO MILANESE



Osso Buco with Risotto Milanese image

Osso buco is Italian comfort food at its best, but it is also elegant enough to serve at any gathering. A rich and creamy saffron risotto is the classic accompaniment. Traditionally it's served with a long, thin spoon sticking straight out of the bone, so you can enjoy the savory marrow inside.

4 veal osso buco, about 1-inch thick, each tied around the middle
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
All-purpose flour, for dredging
1 medium onion, chopped
1 medium carrot, chopped
1 stalk celery, chopped
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
1/2 cup dry white wine
2 cups canned whole plum tomatoes, crushed by hand
2 cups low-sodium chicken broth
2 fresh bay leaves
4 cups low-sodium chicken broth
1 teaspoon saffron threads
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
Kosher salt and freshly ground black pepper
1 1/2 cups arborio rice
1/2 cup dry white wine
2 tablespoons unsalted butter, cut into pieces
1/2 cup grated Parmesan
1/2 cup fresh Italian parsley, chopped
1 large garlic clove, very finely chopped
Finely grated zest of 1 lemon

Steps:

  • For the osso buco: Sprinkle the veal with salt and pepper and heat the oil in a large Dutch oven over medium heat. Spread some flour on a plate, then dredge the veal in the flour on all sides and add to the oil. Brown well on both sides, 2 minutes a side. Remove to a plate.
  • Add the onion, carrot and celery to the pot and cook, stirring, until the onion wilts, about 4 minutes. Stir in the rosemary and thyme. Add the white wine, increase the heat and boil until reduced by half, about 2 minutes. Add the tomatoes, broth and bay leaves. Reduce the heat so that the liquid is simmering gently, and nestle in the veal. Add water, if necessary, to come three-quarters of the way up the sides of the meat. Cover and cook until the veal is tender and a paring knife inserted in the meat slides out easily (insert the knife in several pieces to make sure all are done), 1 hour 15 minutes to 1 hour 30 minutes. Remove the veal to a plate.
  • Strain the sauce into a fat separator, pressing on the solids. Wipe out the Dutch oven. Pour the defatted sauce back into the Dutch oven and reduce over high heat until thickened and the sauce just coats the back of a spoon. Cut the strings on the osso buco and return the meat to the sauce. Remove from the heat, cover and keep warm while you make the risotto.
  • For the risotto Milanese: Combine the broth and 2 cups water in a medium saucepan. Bring to a simmer and add the saffron, then turn the heat very low to just keep warm. Heat a medium Dutch oven over medium heat, then add the olive oil. When the oil is hot, add the onion, 1/2 teaspoon salt and several grinds of black pepper; cook until softened but not browned, 4 to 5 minutes.
  • Add the rice and cook, stirring, to coat the grains in the oil, about 2 minutes. Add the white wine, bring to a simmer and cook until absorbed, about 2 minutes. Add enough of the hot broth to just cover the rice. Simmer, stirring occasionally until almost totally absorbed. Continue to add broth and stir until the rice is creamy and al dente, about 18 minutes from the first addition. (The risotto will be a bit soupy at this point.)
  • Remove from the heat. Stir in the butter and Parmesan until melted and creamy. Season with salt and pepper.
  • For the gremolata: Combine the parsley, garlic and lemon zest in a small bowl.
  • Spoon the risotto into 4 shallow wide bowls. Top each serving with a piece of osso buco and spoon the sauce over the top. Sprinkle with the gremolata.

RISOTTO WITH PEAS AND SAUSAGE

Vegetables as seasonal as a maypole shape this risotto. There is a bit of veal for those who desire a more substantial plate of food, but it's optional. For vegetarians, the broth does not have to be chicken. Omit the butter and cheese, and you're in vegan territory. As for the rice, regular arborio works fine though Vialone Nano, the elegant variety that is preferred in Venice for risotto with peas, is my choice for added culture, not necessarily flavor.

4 to 4 1/2 cups chicken or vegetable stock
2 tablespoons extra-virgin olive oil
1 cup finely chopped leeks, whites with a little green
3 cloves garlic, slivered
5 ounces weisswurst, casing removed and diced, or 5 ounces finely diced veal shoulder (optional)
1 1/2 cups Vialone Nano or arborio rice
1/2 cup dry white wine
3/4 cups shelled English peas (12 ounces in the pod)
Salt and ground black pepper
1 tablespoon grated lemon zest
1 tablespoon unsalted butter
1/3 cup shredded pecorino cheese
1 tablespoon minced chives

Steps:

  • Place stock in a saucepan and keep on low heat.
  • Heat oil in a separate heavy 3-quart saucepan. Add leeks and garlic and sauté on medium-low until leeks are translucent. Stir in sausage or veal, if using. Cook 2 to 3 minutes. Add in rice and cook a few minutes, stirring, until grains start to whiten. Add wine and cook until it's nearly evaporated.
  • Add a 1/2 cup of the warm stock and the peas. Stir and cook at a steady simmer until the stock has nearly evaporated. Add another 1/2 cup of the stock, stir from time to time until it's nearly evaporated. Keep this up until the rice is almost al dente, the peas are tender and there's only a little stock left. Season to taste with salt and pepper. Fold in lemon zest and remaining stock; the result should be creamy. Cook another minute or two. Fold in butter.
  • Divide risotto among 4 to 6 shallow soup plates. Top each portion with cheese and chives. Serve.

8 veal cheeks
Salt and freshly ground black pepper
Vegetable oil, for searing
2 slices bacon, chopped
1 onion, chopped, plus 1/2 onion, diced
1 carrot, peeled and chopped
1 stick ginger, chopped
4 cups red wine
3/4 cup soy sauce
Skin from 1 whole pineapple
4 cups veal stock
2 to 3 tablespoons butter, plus 1 tablespoon
1 cup arborio rice
2 1/2 cups chicken broth
1 can coconut milk
1/2 cup diced papaya
1 tomato, diced
2 sprigs mint, chopped
2 sprigs cilantro, chopped
Serving suggestions: parsnip chips or fried shallots.

Steps:

  • Preheat the oven to 300 degrees F.
  • Season the veal cheeks with salt and pepper on both sides. Heat a large skillet over medium-high heat, and then add enough oil to lightly coat the skillet. Let the oil heat, and then add the veal to the pan, and sear it on all sides until browned.
  • In a Dutch oven or oven-safe pot, cook the bacon slowly over low heat. Add the chopped onion, carrot, and ginger, and cook for 4 minutes. Add the wine, soy sauce, and pineapple skin, and bring to a boil. Add the veal stock, and return to a boil. Add the seared veal cheeks, and place pot in the oven to braise for 2 1/2 hours.
  • Closer to serving time, make the risotto. In a medium saucepot, sweat the remaining diced onion in 2 to 3 tablespoons butter for 2 minutes over medium heat. Reduce the heat to low. Add the risotto rice, and stir with a wooden spoon to coat it in the butter. Slowly add the chicken broth in 2 equal additions, not adding the second addition until the first has been almost completely absorbed. Stir constantly during the entire process. After all of the chicken broth has been absorbed, add the coconut milk, and then add enough of the braising liquid until the risotto is cooked to your taste. Fold in the remaining 1 tablespoon butter, papaya, tomato, and herbs. Serve immediately.
  • Place the risotto in the center of a plate and place 2 veal cheeks on top. Garnish parsnip chips or fried shallots, if desired.

This is one of my ways of making risottos. This one has more Dalmatian approach with herbs and olive oil and tomatoes. North Croatian way would be with Hungarian paprika and other herbs and spices. You cal also use beef, horse or pork meat.

300 g veal (muscles for paprikas, II class meat)
100 g onions
1 garlic clove
300 g rice (Arborio)
200 g plum tomatoes
4 tablespoons olive oil
1/2 cup wine (white, dry)
7 g salt
5 g pepper
1/2 teaspoon basil (dry)
1/2 teaspoon marjoram (dry)
1 teaspoon oregano (dry)
100 g parmesan cheese (grated)

Steps:

  • Cut veal muscles into small pieces (as for paprikas).
  • Mince onion very finely. (If you use fresh plum tomato first soak them 2-4 minutes in hot water, remove skin and "shave the best red part from it", remove seeds and cut into small pieces. If you use canned tomato, skip this part.).
  • Sauté onion on olive oil until translucent, add meat and sauté 5-7 minutes. Add wine and sauté until alcohol evaporates (2 min.).
  • Add finely minced garlic and tomato. Season with some of basil, marjoram and oregano (the rest add at the end). Season with salt and pepper. Stir well and cook about 20 minutes or until all liquid evaporates.
  • Add rice and water as manufacturer suggests (Remember that you may have some water already in the pot, so count this water out). Cook until rice is done (20 min.).
  • Before end you may add some of basil, oregano and marjoram if you did not put all at the beginning. Serve hot with grated parmesan.

This is my own recipe, opening night was 15 years ago (I don't remember what was the occasion), and since than this meal was always marked as excellent. I prepare it for special days: birthdays, promotions, as a gift, or just for fun. Anyone who reads this recipe can change fillings, no hard feelings Use imagination.

800 g boneless veal steaks
Worcestershire sauce
salt
pepper
1/2 cup mustard
50 g ham (Croatian pr ut)
10 g black olives
50 g goat cheese or 50 g sheep's milk cheese
1 teaspoon dried thyme
1 cup flour
1/2 cup olive oil
2 cups red wine (red if you want dark sauce, white = white sauce) or 2 cups white wine (red if you want dark sauce, white = white sauce)
3 g green peppercorns (green,berries)
2 cups beef stock
1/2 lemon (sliced in rounds)
1 cup sour cream
1/2 cup fresh parsley leaves

Steps:

  • Hit the veal steaks hard to make large thin steaks.
  • Pour over each few drops of Worcestershire sauce, salt, pepper and mustard.
  • Than put on each steak sliced ham ("pršut"), cheese, olive and thyme. Close the steaks and tide each with a thread like a parcel.
  • Roll each stake in flour and fry them in a pan (use olive oil, but not too much).
  • When steaks become brownish, pour wine and cook 10 minutes. Pour beef stock and add 2 lemon rounds.
  • Cook about 30 min, or until meat is soft; than take out the meat, put 2 teaspoons of mustard in sauce, cook two more minutes, add cream and put back the meat. Cook two minutes.
  • Serve with fresh parsley leaves on it. I recommend cranberry jam with it.
