Our Favorite Sour Milk Cornbread image

Yield Serves 6-8

Number Of Ingredients 6

1 1/2 cups fine-ground white cornmeal
1 teaspoon salt
1 teaspoon Homemade Baking Powder (see note)
1 3/4 cups soured milk or buttermilk
2 eggs, lightly beaten
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 450°
  • Mix the cornmeal, salt, and baking powder together in a bowl. Stir the milk into the beaten eggs, and pour over the dry ingredients in batches, stirring vigorously to make a smooth glossy batter.
  • Cut the butter into pieces and put it in a 10-inch cast-iron skillet or baking pan. Put the skillet in the preheated oven, and heat until the butter is melted and foaming. Remove from the oven, and swirl the butter all around the skillet to coat the bottom and sides thoroughly. Pour the remaining melted butter into the cornbread batter, and stir well until the butter is absorbed into the batter. Turn the batter into the heated skillet, and put in the oven to bake for 30-40 minutes, until cornbread is golden brown and crusty on top and pulls away from the sides of the skillet.
  • Remove the skillet from the oven, and turn the cornbread out onto a plate. Allow to cool for 5 minutes before cutting into wedges. Serve the cornbread while it is hot.

Yield Makes 1 loaf

Number Of Ingredients 8

2 cups sour milk
1 teaspoon baking soda
2 eggs
1/2 teaspoon salt
1 teaspoon sugar
1/4 cup all-purpose flour, sifted
1 1/2 cups cornmeal, sifted
1/4 cup shortening melted

Steps:

  • In a mixing bowl blend the milk with the baking soda. In a separate bowl beat the eggs. Add the salt and sugar. Blend in the milk mixture, flour, and cornmeal. Stir in the melted shortening. Mix lightly but thoroughly.
  • Pour the batter into a hot, greased shallow baking pan. Bake at 375° for about 25 to 35 minutes or until golden.

I have tried so many cornbread recipes!! They all seem to be missing...something, some are too dry, some too sweet, some are just plain not tasty! This is a mix of all of those different recipes, that I have been working on to be the perfect fit for our tastes. Hope you enjoy it too!

1 (8 ounce) box Jiffy cornbread mix
1 (8 ounce) box jiffy yellow cake mix
2 eggs
1 -2 teaspoon sugar (depending on how sweet you like your cornbread)
1/2 cup water or 1/2 cup milk
1/4 cup sour cream
3/4-1 cup sweet frozen white corn

Steps:

  • Pre-heat 375 degrees.
  • Mix jiffy box mixes first.
  • Add in sugar, eggs, and sour cream.
  • Add in enough milk or water to make it a pancake like consistency.
  • Add in frozen corn (no need to defrost).
  • Pour into 8X8 glass dish.
  • Bake for 25-30 minutes or until done (toothpick center).
  • Enjoy!

This is the best cornbread I have ever had. Ever. No exceptions. As written, the recipe makes two pans...so you might want to halve it if you have a smaller family.

1/2 cup canola oil
1/4 cup sucanat or 1/4 cup brown sugar
4 eggs
1 cup sour cream
1 cup low-fat milk or 1 cup nonfat milk
1 2/3 cups whole wheat pastry flour
1 2/3 cups yellow cornmeal
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Whisk together oil and sugar until well blended.
  • Add eggs, 2 at a time, and beat well after each addition.
  • Whisk in sour cream and milk.
  • Add dry ingredients and beat just until blended.
  • Let batter rest for 15 minutes.
  • Spoon into 2 sprayed 9-inch pans (either round or square) and bake at 425 for 15-17 minutes.
  • Let cool a few minutes, then turn onto a rack and slice, and serve hot with butter and honey!

1 cup whole milk

Steps:

  • In a bowl, combine flour, cornmeal, sugar, baking powder and salt. Add the milk, eggs and shortening; beat for 1 minute. Pour into a greased 9-in. square baking pan. Bake at 425° for 20-25 minutes or until bread is golden brown and tests done.
