1 container Minute® Ready to Serve Chicken Rice Mix
1/3 cup cooked, diced chicken
1/4 cup sliced snow peas
1 Tbsp sliced red onion
2 Tbsps sesame-ginger salad dressing
2 cups salad greens
1 Tbsp sliced almonds
1/4 cup Mandarin orange segments

Steps:

  • Heat rice according to package directions. In medium bowl, combine rice, chicken, snow peas, onions and dressing; blend well. Serve on bed of salad greens and top with almonds and orange segments.

1 cup white wine or chicken broth
1 tablespoon lemon juice
1 garlic clove, minced
3/4 teaspoon ground ginger, divided
1-1/4 pounds boneless skinless chicken breasts
3 cups chicken broth
1-1/2 cups uncooked long grain rice
1 package (10 ounces) frozen peas, thawed
1/2 cup sliced green onions
1/2 cup diced celery
2 tablespoons diced sweet red pepper
2 tablespoons diced green pepper
DRESSING:
1/4 cup cider vinegar
2 tablespoons Dijon mustard
1 tablespoon reduced-sodium soy sauce
1 tablespoon olive oil
1 tablespoon sesame oil
2 teaspoons honey
1 garlic clove, minced
Dash ground ginger

Steps:

  • In a large nonstick skillet, combine the wine, lemon juice, garlic and 1/4 teaspoon ginger. Bring to a boil; reduce heat. Add chicken; poach, uncovered, over medium-low heat for 15 minutes or until a thermometer reads 170°. Remove chicken from cooking liquid; cool., In a large saucepan, bring broth and remaining ginger to a boil. Stir in rice. Reduce heat; cover and simmer for 15-20 minutes or until liquid is absorbed and rice is tender. Fluff with a fork., Transfer to a large bowl; cool. Add the peas, onions, celery and peppers. Cut chicken into bite-size pieces; add to rice mixture and toss., Whisk the dressing ingredients; drizzle over salad and toss to coat.

1/4 cup vegetable oil
3 tablespoons toasted sesame oil
3 tablespoons lemon juice
3 tablespoons soy sauce
1 tablespoon sugar
1/2 teaspoon ginger powder
1 teaspoon fresh minced garlic (optional)
1 1/2 cups cooked wild rice
2 cups chopped cooked chicken (or use turkey)
1/4 cup sliced water chestnuts (or to taste)
1 small onion, chopped
2 celery ribs, finely chopped
1 1/2 cups fresh snow peas (lightly steamed, or use frozen thawed)
salt and black pepper
1 cup crispy chow mein noodles (optional or to taste)
green onion, chopped

Steps:

  • For the dressing; whisk all ingredients together until the sugar is completey dissolved; let stand at room temperature for 45 minutes to blend flavors (or chill overnight) before using.
  • For the salad; Place the cooked wild rice, cooked chicken or turkey, water chestnuts, chopped onion, celery and snow peas in a large glass salad bowl; toss to combine.
  • Pour the dressing over; toss to combine well and chill for about 2 hours.
  • Just before serving, toss again and season with salt and black pepper.
  • Sprinkle with crispy noodles and green onions.
  • Delicious!

If you like chicken salad, you'll love this one! It is good plain with crackers or served in a pita or a croissant. It is wonderful for women's luncheons. Everyone loves it.

1 cup uncooked wild rice
2 cups diced cooked chicken (or 1 large can of chicken, drained)
1 cup red grapes, halved
1 cup sliced water chestnuts
1/2 cup mayonnaise
1/4 cup chopped red onion
1/2 teaspoon lemon juice
1 cup cashews or 1 cup almonds
1/2 cup craisins (optional)
salt and pepper, to taste

Steps:

  • Cook rice according to package directions. Drain and cool to room temperature. Add rest of ingredients in a large bowl and mix well. Cover and chill a couple hours before serving (overnight is fine).
  • Tips: I have been using the Uncle Ben's 90 second microwave pouch for the rice part. I use the long grain and wild rice mix.
  • I also think it tastes better with canned chicken.

1/2 cup sour cream
1/2 cup finely chopped celery

Steps:

  • Prepare rice according to package directions, chill.
  • In a small mixing bowl, combine mayonnaise, sour cream, and chicken.

Good served over Rice or your favorite Oriental Side dishes. This is really simple and quick to make.

2 lbs boneless skinless chicken thighs
2 tablespoons garlic, minced
3 green onions, chopped
6 teaspoons ginger powder
1/4 cup soy sauce
8 tablespoons chicken broth
3 tablespoons oyster sauce
3 tablespoons rice wine
3 teaspoons light soy sauce
1 teaspoon Splenda sugar substitute
1 tablespoon cornstarch, dissolved in water

Steps:

  • Marinate chicken thighs in the dark soy sauce for at least 1 hour.
  • Heat oil in a large frying pan over medium heat. Add in garlic and ginger. Saute long enough to allow the ginger and garlic to release their aroma.
  • Add in the chicken and saute until golden brown.
  • Add in green onions, chicken broth, oyster sauce, rice wine, light soy sauce and Splenda.
  • Stir well.
  • Once the sauce starts to boil, about 3-5 minutes, mix in the cornstarch to thicken the sauce.
  • Serve and enjoy.

1/8 to 1/4 tsp crushed red pepper flakes
Salad:
1 pkg long grain and wild rice (including seasoning packet, if provided)
1 cup of chopped cooked chicken
2oz (1/2 cup) fresh pea pods, trimmed and halved (I like more!)
1/4 cup finely chopped celery
1/4 cup sliced green onions (scallions)
1/2 to 1 green or red (or yellow or orange) bell pepper
1 8oz can water chestnuts, chopped
1 Tbsp sesame seed, toasted

Steps:

  • In a small jar with a tight-fitting lid, combine all dressing ingredients; shake well. Set aside. Cook rice as directed on the package; cool. In a medium bowl, combine cooked rice, chicken, pea pods, celery, green onions, bell pepper, and water chestnuts. Pour dressing over salad; toss gently to coat. Cover, refrigerate several hours to blend flavors. Sprinkle with toasted sesame seed before serving.
