1/2 cup good olive oil
1 tablespoon red wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon honey
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon minced shallot
4 ounces (5 cups) mesclun mix

Steps:

  • In a small bowl, whisk together the oil, vinegar, mustard, honey, salt, pepper and shallots until the vinaigrette is emulsified.
  • Toss the greens with enough dressing to moisten and serve immediately.

1 tablespoon butter
3 -4 shallots, peeled and thinly sliced
2 tablespoons cornstarch
2/3 cup dry red wine or 2/3 cup white wine
1 (10 1/2 ounce) can beef broth or 1 (10 1/2 ounce) can chicken broth
1 -2 tablespoon Dijon mustard
1 tablespoon fresh chives, chopped
1/4 teaspoon pepper

Steps:

  • In a medium saucepan, melt butter or margarine; saute shallots for 3 minutes over medium-high heat.
  • Stir cornstarch into wine; add to pan with beef broth, mustard to taste, chives and pepper.
  • Cook and stir until mixture thickens; simmer 3 minutes to reduce slightly.
  • Taste for seasoning.
  • Serve over burgers, steaks, fish or BBQ chicken.

1/4 cup white wine vinegar, champagne vinegar, or aged sherry wine vinegar
2 to 3 teaspoons Dijon mustard
1 teaspoon kosher salt
Freshly ground black pepper
2 tablespoons finely minced shallots
2/3 cup extra-virgin olive oil

Steps:

  • In a small mixing bowl, whisk together the vinegar, mustard, salt, and pepper to taste. Stir in the shallots. Gradually whisk in the oil to make a smooth dressing. Use immediately or store covered, in the refrigerator, for up to a week.

1/2 cup dry white wine
1/4 cup chopped shallots
1 cup whipping cream
2 tablespoons Dijon mustard
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh dill

Steps:

  • Boil white wine and shallots in heavy medium saucepan over high heat until liquid evaporates, about 4 minutes. Reduce heat to medium-high. Add whipping cream and simmer until reduced to 1 cup, about 2 minutes. Add Dijon mustard, basil and dill. Simmer 2 minutes to blend flavors. Season sauce to taste with salt and pepper.

250 g shallots, sliced
2 tablespoons olive oil
1 garlic clove, slightly crushed (Not minced)
1 sprig rosemary
5 tablespoons balsamic vinegar
400 ml red wine
400 ml beef stock
2 tablespoons butter
ground black pepper

Steps:

  • Saute the shallots in a medium saucepan with the oil, over high heat for 3 minutes until lightly brown. Stir them all the time and adjust heat if they start to get too brown. Season with ground black pepper and then add the garlic and rosemary. Continue cooking for 3 more minutes. Stir all the time and adjust the heat to keep from getting too brown.
  • Pour in the vinegar and cook until it evaporates to a syrup, then pour in the wine and cook until reduced by 2/3.
  • Pour in the stock and bring to a boil. Turn down the heat and simmer until reduced by 2/3 again, to around 250 ml.
  • Remove the garlic and rosemary.
  • Add a little salt if necessary.
  • Finally whisk in the butter.
  • Serve over steak before serving.

This classic French sauce from Gordon Ramsay is just perfect with a rib-eye steak

250g shallot, sliced
4 tbsp olive oil
1 garlic clove, lightly crushed
sprig rosemary
5 tbsp balsamic vinegar
400ml red wine
400ml beef stock or brown chicken stock, preferably homemade
knob of butter

Steps:

  • Sauté 250g sliced shallots in a medium saucepan with 4 tbsp olive oil over a high heat for about 3 mins until lightly browned, stirring often.
  • Season with ground black pepper and add 1 lightly crushed garlic clove and a sprig of rosemary.
  • Continue cooking for a further 3 mins, stirring often to prevent the shallots burning.
  • Pour in 5 tbsp balsamic vinegar and cook until evaporated away to a syrup, then pour in 400ml red wine and cook until reduced by two thirds.
  • Pour in 400ml beef or brown chicken stock and bring to the boil.
  • Turn down the heat and simmer until reduced by two-thirds again, to around 250ml. Remove the garlic and rosemary.
  • Add a little salt to taste and finally 'monte' (whisk) in a knob of butter. Add any juices from the steaks just before serving.

1 1/2 lbs salmon fillets
1/2 teaspoon salt, divided
1 tablespoon olive oil
3 tablespoons cold butter (divided)
1 small shallot, finely chopped
1/2 cup white wine
1 tablespoon Dijon mustard
2 tablespoons roughly chopped fresh dill
1/8 teaspoon black pepper
1 cucumber, thinly sliced (for garnish)
fresh dill sprig (for garnish)

Steps:

  • Season salmon with 1/4 t. salt and place on broiler pan (I line my pan with nonstick aluminum foil). Broil salmon on high for about 10 minutes, until cooked throughout.
  • While salmon cooks, put oil and 1 T. of butter in saucepan and heat over medium-high heat until butter melts. Add shallot and cook for about 1 minute, until soft and opaque. Pour in wine and reduce by half, 3-4 minutes.
  • Turn heat down heat to low and stir in mustard, dill, pepper, and the remaining salt. Whisk until well combined. Remove from heat and add butter in pieces to the sauce until melted and blended inches.
  • Place the salmon on serving platter and spoon the sauce over the top. Garnish with dill and cucumber, if desired.

  • Melt 2 tablespoons butter in skillet over medium-high heat until foaming. Brown chicken in two batches until golden brown and crisp, 2-3 minutes per side. Set aside.
  • If pan is dry, add last tablespoon of butter. Lower heat to medium and sauté shallots, stirring occasionally, for 10-12 minutes, until softened and starting to caramelize.
