1 can (20 oz.) DOLE® Pineapple Slices
1/2 cup teriyaki sauce
2 pounds ground turkey or chicken
1 teaspoon grated fresh ginger
1/2 cup panko bread crumbs
8 whole grain hamburger buns
8 slices Cheddar or Monterey Jack cheese

Steps:

  • Drain pineapple; reserve 1/2 cup juice. Reserve 2 pineapple slices for snack or other use.
  • Stir together teriyaki sauce and reserved pineapple juice in small bowl.
  • Mix together turkey, ginger, bread crumbs and 1/4 cup teriyaki mixture. Shape into 8 patties.
  • Grill patties, brushing with remaining teriyaki mixture, until brown and cooked through. Place pineapple slices on grill and cook until lightly golden brown.
  • Serve burgers on buns with cheese and pineapple.
  • Tip: To make 4 servings, use 1 can (8 oz.) DOLE® Pineapple Slices and cut remaining ingredients in half.

1 can (8 ounces) sliced pineapple
1/2 cup dry bread crumbs
1/2 cup sliced green onions
1/2 cup chopped sweet red pepper
1 tablespoon reduced-sodium soy sauce
1/4 teaspoon salt
1 pound lean ground turkey
2 tablespoons reduced-sodium teriyaki sauce
4 sesame hamburger buns

Steps:

  • Drain pineapple, reserving 1/4 cup juice (discard remaining juice or save for another use); set pineapple aside. In a large bowl, combine the bread crumbs, onions, red pepper, soy sauce, salt and reserved pineapple juice. Crumble turkey over mixture and mix well. Shape into 4 patties., On a lightly oiled grill rack, grill, covered, over medium heat for 3 minutes on each side. Brush with teriyaki sauce. Grill 4-6 minutes longer on each side or until a thermometer reads 165° and juices run clear., Grill pineapple slices for 2 minutes on each side, basting occasionally with teriyaki sauce. Warm buns on grill; top each with a burger and pineapple slice.

2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1/4 teaspoon Hungarian hot paprika
1/2 pound ground dark meat turkey
1/2 pound ground white meat turkey
1 small onion, finely chopped
2 carrots, shredded
1 green bell pepper, seeded and finely chopped
3 heaping tablespoons grated Parmesan
1/2 cup chopped cilantro leaves
1 tablespoon Hungarian hot paprika
1/2 teaspoon Hungarian sweet paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon dried habanero powder
1/4 teaspoon powdered ginger
1/4 teaspoon curry powder
Pinch salt and freshly cracked black pepper

Olive oil, as needed
4 slices provolone
4 organic onion buns
1 avocado, halved, pitted, peeled and sliced
1 tomato, sliced

Steps:

  • Aioli: Combine the mayonnaise, mustard and paprika in a small bowl. Cover and refrigerate until ready to use.
  • Burger:
  • Preheat a grill to medium-high heat.
  • Combine the ground turkey, onion, carrot, bell pepper, Parmesan and all of the seasonings in a large bowl. Lightly whisk the egg separately and then fold it in to the meat mixture. Form the turkey into patties. Lightly brush grill grates with olive oil, then arrange the patties on the grill and firmly close the grills lid. Cook while making sure the patties obtain grill marks, about 6 to 8 minutes. Gently flip each burger over and continue grilling. Add the provolone after 3 minutes and shut the lid once more to melt the cheese, an additional 2 to 3 minutes. Remove the patties from heat and keep them warm by casually tenting them in foil. Reduce the grills heat to medium, add another brush of olive oil and arrange the buns on grill, toasting them until they are heated through and slightly crispy, about 2 minutes. Assemble the burgers by spreading the Paprika Aioli onto the bottom halves of the buns, and topping it with the meat patties. Garnish with a slice of avocado, a slice of tomato and a helping of alfalfa sprouts. Cover with the bun tops and enjoy!

1/2 cup minced onions
4 cloves garlic, minced
1 pound ground bison meat
1 teaspoon tomato paste
1/4 teaspoon ground cumin
1/4 teaspoon sea salt
Pinch ground black pepper
Pinch cayenne pepper
1/2 teaspoon Dijon mustard
1/4 teaspoon tomato paste
1 large egg yolk
1 clove garlic, minced
2 tablespoons canola oil
2 tablespoons olive oil
1 teaspoon lemon juice
Cayenne pepper
Sea salt
4 leaves iceberg lettuce
2 small tomatoes, cut into 1/4-inch rounds
1/8 small red onion, shaved
Kale chips, for serving

Steps:

  • For the burgers: Heat the coconut oil in a large nonstick skillet set over medium heat. Cook the onions and garlic, stirring occasionally, until translucent, 3 to 4 minutes. Transfer to a large bowl and cool for 5 minutes.
  • Add the bison, tomato paste, cumin, salt, black pepper and cayenne pepper to the onion mixture, and stir to combine. Form into four 1-inch-thick burgers. Place the skillet back over high heat, add the burgers and cook until an instant read thermometer registers 160 degrees F, 5 to 6 minutes per side. Remove from the pan and rest the burgers for 3 to 5 minutes.
  • For the aioli: In a small bowl whisk together the mustard, tomato paste, yolk and garlic. While whisking continually, slowly drizzle in the canola and olive oils, until all the oil is incorporated and the mixture is thick and glossy. Whisk in the lemon juice and season with cayenne pepper and salt.
  • Place each patty in a lettuce leaf, then top with tomato slices, shaved red onion and 2 teaspoons of the spicy aioli; wrap the burgers in the lettuce and serve with kale chips.

When I got married, 30 years ago, my husband was in the military and these were all the ingredients I had available at the time. I just put them together, and they have been a family favorite ever since. In the winter, I make them in the broiler in the oven.

1 pound ground sirloin
8 pineapple slices, canned or fresh
8 hamburger buns
pineapple juice from can or fresh pineapple
1 cup ketchup
1/4 cup barbeque sauce
salt and pepper

Steps:

  • Divide ground sirloin into eight 1/2" balls and eight patties. Place patties on grill and add sauce on each pattie, grill for a couple of minutes turn over add more sauce. Put one ground sirloin ball into each hole in pineapple slices. Place on grill, add sauce, and grill a couple minutes more before turning over and adding more sauce. Place buns on grill to warm. Place one pattie and one pineapple slice between two buns and serve.
  • Sauce: in saucepan over medium heat, add ketchup, barbeque sauce and pineapple juice and bring to boil.
