SPINACH/STRAWBERRY SALAD
An absolutely delightful and tasty salad, especially when fresh baby spinach and strawberries are available. This recipe was given to me by a famous Chef in Palm Springs, CA. This is a must to make.

Steps:
- SALAD: Break off root ends and tough stems (if any) and discard.
- Place spinach in a large bowl, add ice and cover with water; set aside to chill.
- SUGARED ALMONDS: In a small saucepan, combine almonds, sugar and water.
- Cook over medium-low heat for 5 to 7 minutes or until sugar is almost completely melted and nuts are golden, stirring occasionally- (there will be unmelted sugar on nuts).
- Spread almonds on a large plate; let cool and then break into small pieces.
- (Make ahead, as nuts can be stored in an air-tight container for about 3 days).
- DRESSING: In a small bowl, whisk together balsamic vinegar, Worcestershire sauce, honey, poppy seeds and chives.
- Drizzle in olive oil and whisk until blended.
- Now whisk in Dijon mustard until well blended.
- Whisk in salt and pepper to taste.
- Remove spinach leaves from water, pat dry on paper towelling and break into pieces.
- Add to a large mixing bowl.
- Add sliced strawberries and toss lightly to mix.
- Add dressing and toss gently until spinach and berries are lightly coated.
- Add almonds, toss lightly and serve.
- TIP: Packaged ready-to-use baby spinach can be found in the produce section of most supermarkets.
- There are 8 cups of baby spinach in (one- 6 ounce) package.
- NOTE: Only make enough salad that will be eaten at this one time serving. The salad will get somewhat soggy if kept for another day.

- Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
- Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
- Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
- Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

- Make the dressing: Put the oil, vinegar, honey, mustard, egg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a blender and blend until smooth. Stir in the poppy seeds. Refrigerate until ready to serve.
- Make the salad: Put the strawberries in a nonreactive heatproof bowl. In a small saucepan over medium heat, combine the vinegar, 1/2 cup water, the bay leaf, sugar, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a low boil and allow the sugar to dissolve. Pour over the strawberries and let stand about 20 minutes. Remove the bay leaf and drain the strawberries, discarding the liquid.
- In a large salad bowl, combine the spinach, red onion, mushrooms and pickled strawberries. Pour the dressing over the salad, toss well and serve immediately.
SPINACH AND STRAWBERRY SALAD WITH WARM BACON VINAIGRETTE
Steps:
- Put the spinach, strawberries and shallots in a large bowl.
- Toast the almonds in a small skillet over medium heat, stirring until golden brown, about 2 minutes. Transfer to a bowl or plate and set aside to cool.
- Put the bacon in a cold medium skillet; cook over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. With a slotted spoon, transfer to a paper-towel-lined plate; leave the bacon fat in the pan.
- Take the skillet off the heat and stir in the mustard and sugar until the sugar is dissolved. Add the vinegar and then whisk in the olive oil. Season with 1/4 teaspoon salt and pepper to taste.
- Add the bacon and almonds to the salad, pour over the bacon vinaigrette, and toss to coat. Serve immediately.
STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE
This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. - Smash half of the raspberries using a fork and reserve rest for the salad. Sliced the strawberries, slice feta, mince shallots. Set aside.
- In a small bowl, add all dressing ingredients with half of the salt. Don't add raspberries. Whisk to emulsify oil with vinegar and mustard until vinaigrette is thick. Add smashed raspberries and mix well. Taste and add more salt to taste. See Note 1 and 2.
- In a large salad bowl or platter, arrange spinach leaves. To with sliced strawberries, blueberries (if using), remaining raspberries, walnuts and crumbled feta. Drizzle few tablespoon of dressing on the top. Serve remaining table-side for self serving. Enjoy!

- Place pecans, sugar and water in a small saucepan set on medium heat. Stir to dissolve sugar. Simmer mixture, stirring occasionally, until golden and pecans are coated, about 5-7 minutes. Transfer to a parchment-lined baking sheet and cool. Crumble and set aside.
- In a small bowl, whisk the vinegar with the honey, Dijon and salt. Slowly whisk in the oil until well combined. To serve, divide spinach among salad plates and top with strawberries, kiwis and sugar pecans. Drizzle with vinaigrette and garnish with the crumbled cheese, if using.
- Tip: This salad is delicious with or without the cheese. For variety, a mild blue cheese such as cambozola could be used in place of the black pepper cheese or chevre. You could also cut the amount of strawberries in half, and make up the difference with raspberries or blueberries.
