Spinach/Strawberry Salad image

An absolutely delightful and tasty salad, especially when fresh baby spinach and strawberries are available. This recipe was given to me by a famous Chef in Palm Springs, CA. This is a must to make.

Provided by William Uncle Bill

Categories     Strawberry

Time 22m

Yield 4-6 serving(s)

Number Of Ingredients 14

8 cups fresh Baby Spinach, about 8 ounces
2 cups sliced fresh strawberries, about 8 ounces
1/2 cup slivered almonds
1/4 cup granulated sugar
1 tablespoon water
5 teaspoons balsamic vinegar (12 year old is best)
2 teaspoons Worcestershire sauce
2 teaspoons liquid honey
1 1/2 teaspoons poppy seeds
3 teaspoons finely chopped fresh chives
3 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • SALAD: Break off root ends and tough stems (if any) and discard.
  • Place spinach in a large bowl, add ice and cover with water; set aside to chill.
  • SUGARED ALMONDS: In a small saucepan, combine almonds, sugar and water.
  • Cook over medium-low heat for 5 to 7 minutes or until sugar is almost completely melted and nuts are golden, stirring occasionally- (there will be unmelted sugar on nuts).
  • Spread almonds on a large plate; let cool and then break into small pieces.
  • (Make ahead, as nuts can be stored in an air-tight container for about 3 days).
  • DRESSING: In a small bowl, whisk together balsamic vinegar, Worcestershire sauce, honey, poppy seeds and chives.
  • Drizzle in olive oil and whisk until blended.
  • Now whisk in Dijon mustard until well blended.
  • Whisk in salt and pepper to taste.
  • Remove spinach leaves from water, pat dry on paper towelling and break into pieces.
  • Add to a large mixing bowl.
  • Add sliced strawberries and toss lightly to mix.
  • Add dressing and toss gently until spinach and berries are lightly coated.
  • Add almonds, toss lightly and serve.
  • TIP: Packaged ready-to-use baby spinach can be found in the produce section of most supermarkets.
  • There are 8 cups of baby spinach in (one- 6 ounce) package.
  • NOTE: Only make enough salad that will be eaten at this one time serving. The salad will get somewhat soggy if kept for another day.

SPINACH AND STRAWBERRY SALAD WITH FETA CHEESE

Spinach and Strawberry Salad with Feta Cheese image

Besides the variations on the dressing, I added feta cheese to the salad. It was scrumptious! Even spinach haters ate it up! I made this for a party and there were a lot more servings as a buffet item than 8.

SPINACH STRAWBERRY SALAD

Spinach Strawberry Salad image

The best ever Spinach Strawberry Salad with balsamic poppy seed dressing, pecans, and feta. Beautiful, healthy, and always a crowd pleaser!

Provided by Erin Clarke / Well Plated

Categories     Salad

Time 20m

Number Of Ingredients 12

3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
  • Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
  • Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
  • Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette image

This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

Delicious colorful light salad. I have also served with chicken tenders. Strawberries are my favorite especially when in season, but you can use any fruit desired. It takes a little while to make the spiced pecans, but is well worth it or you can also toast the pecans instead of using spiced version.

(Salad can be dairy-free when not using feta.)Dig in!What Do you Need To Make Strawberry Spinach SaladTwo of the main ingredients to make Strawberry and Spinach Salad are in the name i.e. fresh spinach and strawberries. Here is the list of all ingredients you need:Fresh Spinach - I prefer to use triple-washed, pre-packed baby spinach. Ready to use greens is my secret to including a salad in dinner or packing a salad for lunch. It is the main ingredient in any healthy salad. I clearly eat more salads when I don't have to spend time washing and prepping greens.StrawberriesFeta Cheese Walnuts - Use toasted or raw. I used raw walnuts for this spinach salad.Blueberries are just to add color contrast. Optional but add summer colors on the salad plate and the antioxidants. Also great for Red, White and Blue celebration salad. (hint hint)Sweet and Tart Salad Dressing such as Raspberry Dressing (recipe follows)Raspberry Vinaigrette DressingRaspberry Dressing is our favorite salad dressing for spinach salad. In winters, I often use Kraft's Raspberry Dressing. In summers, when fresh berries are easy to find and economical.. I love making raspberry dressing at home. Here is the ingredients you need to make Raspberry Vinaigrette Dressing:Homemade raspberry vinaigrette dressing is a two-in-one salad dressing recipe. Without raspberries, this is a tangy honey-mustard dressing with earthy shallots. Add raspberries and this is a bright and vibrant Raspberry Vinaigrette Dressing. (If making just honey-mustard dressing, add more honey as per taste.)To make the dressing:Honey Mustard Dressing with Shallots: In a small bowl, mix all the main ingredients for raspberry dressing; honey, red wine vinegar, olive oil, mustard, salt and pepper. Whisk to emulsify oil with mustard and vinegar. Add shallots and adjust salt to taste.Raspberry Dressing: Using a fork smash raspberries. Mix with the vinaigrette until well combined. You can also make raspberry dressing in a food processor or blender. If using food processor blender, add all raspberry vinaigrette dressing ingredients except oil and berries. With motor running, add oil in a slow stream to emulsify. Once vinaigrette is ready. Add raspberries and pulse few more times until vinaigrette is smooth. Raspberry dressing stays good for 3-4 days. (refrigerated) Tip: For freshest and bright flavor of raspberries, make vinaigrette dressing up-to a week ahead. Add smashed raspberries just before using dressing for salad.More Salad Dressing for Strawberry Spinach SaladHonestly, a good sweet and tart dressing takes spinach strawberry salad to whole new deliciousness. Categories     dinner,fruit,kid-friendly,North American, nuts, side, vegetables, vegetarian

Yield 4 servings

Number Of Ingredients 12

¼ cup coarsely chopped pecans (50ml)
2 Tbsp granulated sugar (30ml)
2 Tbsp water (30ml)
1 Tbsp balsamic vinegar (15ml)
1 Tbsp liquid honey(15ml)
½ tsp Dijon mustard (2ml)
pinch salt (pinch)
¼ cup extra virgin olive oil (50ml)
4 cup baby spinach (about 4 oz/100g) (1L)
1 cup sliced strawberries (250ml)
2 kiwis, peeled and sliced (2)
¼ cup soft black pepper cheese, (50ml) such as Boursin or crumbled chevre (optional)

Steps:

  • Place pecans, sugar and water in a small saucepan set on medium heat. Stir to dissolve sugar. Simmer mixture, stirring occasionally, until golden and pecans are coated, about 5-7 minutes. Transfer to a parchment-lined baking sheet and cool. Crumble and set aside.
  • In a small bowl, whisk the vinegar with the honey, Dijon and salt. Slowly whisk in the oil until well combined. To serve, divide spinach among salad plates and top with strawberries, kiwis and sugar pecans. Drizzle with vinaigrette and garnish with the crumbled cheese, if using.
  • Tip: This salad is delicious with or without the cheese. For variety, a mild blue cheese such as cambozola could be used in place of the black pepper cheese or chevre. You could also cut the amount of strawberries in half, and make up the difference with raspberries or blueberries.
