ITALIAN MAC AND CHEESE
This Italian Mac and Cheese with mozzarella and parmesan has a golden crispy breadcrumb topping, broiled for only a few minutes so it's not dry!

Steps:
- Cook pasta according to directions until al dente in salted water.
- Meanwhile, melt 2 tablespoons of the butter in a large oven-safe skillet. Add the flour (2 tablespoons) and stir to coat in the butter, and continue to cook, stirring, for about 1 minute. Gradually pour in the milk (2 cups) and whisk to combine so there are no clumps of flour. Continue heating and whisking until thickened a bit (about 2 minutes). Stir in the mozzarella cheese (8 oz.), half of the parmesan cheese (1/4 cup), and half of the fresh parsley (2 tablespoons). Whisk until fully combined.
- In a small bowl, melt the remaining 2 tablespoons of butter. Add the breadcrumbs (1 cup), the rest of the parmesan (1/4 cup), the rest of the parsley (2 tablespoons), the garlic powder (1 teaspoon), and plenty of black pepper. Stir until breadcrumbs are well-coated in the butter.
- When pasta is done cooking, drain it or use a slotted spoon to transfer it over to the cheese sauce. Stir to coat. It will seem really thick- don't worry, it will thin out as the pasta and any water clinging to it settles in.
- Sprinkle the breadcrumb mixture on top of the pasta and cheese sauce.
- Broil for 5-10 minutes close to the top of the oven, rotating the skillet if necessary and checking to make sure it doesn't burn. Once the breadcrumbs are golden-brown, remove from oven, place a handle cover or towel on the skillet's handle, and serve the mac and cheese sprinkled with more fresh parsley, if desired.

When my grown children come home for visits, they always ask me to make this bread along with their favorite spaghetti dinner. In between times, the easy-to-prepare loaf is a hit at church socials and potluck suppers.

- In a large bowl, dissolve yeast in warm water. Add 2 cups flour, 1/4 cup butter, egg, sugar, salt and seasonings. Beat at low speed until mixed, about 30 seconds; increase speed to medium and continue beating for 2 minutes. Stir in remaining flour and 1/3 cup cheese; beat until smooth. , Cover bowl and let rise in a warm place until doubled, about 1 hour. Stir batter 25 strokes. Spread batter into a greased 1-1/2-qt. casserole; brush with melted butter and sprinkle with the remaining cheese. Cover and let rise until doubled, about 30 minutes. , Bake at 350° about 35 minutes or until golden brown. Cool on wire rack 10 minutes before removing from the casserole.

ITALIAN RICOTTA PARMESAN BREAD
Steps:
- In the stand up mixer add the water and sprinkle the yeast on top, let it sit for about 10 minutes, then stir, add the flour, ricotta, parmesan, olive oil and salt on top. Start to knead on low speed #1 for about 1-2 minutes then increase the speed #2 and continue until the dough is soft and elastic, 6-8 minutes.
- Move the dough to a lightly floured flat surface and stretch and fold a few times, shape into a ball. Place the dough in a lightly oiled bowl, rolling the dough to cover lightly in oil, cover the bowl and place in a warm draft free area to rise until doubled in bulk, approximately 2 hours.
- Move the dough to a lightly floured flat surface, shape into desired shape, log or boule, place in a lightly oiled* dutch oven or oven safe covered casserole dish, sprinkle the top with flour (use rice or semolina if you don't have it then all purpose or bread will work, cover with plastic and let rise 1 hour.
- Pre-heat oven to 400F (200C).
- Score the bread, then place the covered pot in the oven and bake, for 25-30 minutes, remove the lid and continue to bake for 10-15 minutes or until the loaf is done. Immediately move the baked loaf to a wire rack to cool completely before serving. Enjoy!
