EASY POTATO SOUP

Steps:

• Cook potatoes according to package directions.
• While potatoes are cooking, saute onion in a large Dutch oven. Add cooked potatoes to the onion. Add chicken stock, half-and-half, butter, and a teaspoon of salt to the pot. Bring to a simmer and cook for about 15 minutes, until butter is melted and soup thickens slightly.
• Using immersion blender, blend the soup until pureed as much as you like. Stir in sour cream until completely blended into soup. Add additional salt and pepper to taste.
• Serve with baked potato toppings: cheese, bacon, green onions.

ORE-IDA LOADED POTATO SOUP RECIPE

Steps:

• Microwave potatoes as directed on package. (Do not mash.)
• Cook pasta sauce, broccoli, milk and seasonings in medium saucepan on medium heat 4 to 5 min. or until heated through, stirring frequently. Add potatoes; stir. Simmer on medium-low heat 5 min., stirring frequently.
• Serve soup topped with remaining ingredients.

EASY CROCK POT POTATO SOUP RECIPE - (3.8/5)

Steps:

• Put the Ore Ida hash brown potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper. Cook on low for 8 hours or until hash browns potatoes are tender. An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving. Once the cream cheese is completely mixed in, it's ready to serve. Top with cheddar cheese and some additional bacon bits.

• Mix cream cheese, sour cream and pepper in slow cooker sprayed with cooking spray until blended. Gradually stir in milk.
• Add potatoes, cheese and bacon; mix well. Cover with lid.
• Cook on LOW 3 to 4 hours (or on HIGH 1 to 2 hours), stirring after each hour.
• Sprinkle with onions before serving.

SUPER EASY HASH BROWNS POTATO SOUP

Steps:

• Saute onion in butter or oil until transparent.
• Add broth, bring to boil.
• Add hash browns, bring to boil.
• Add soups (don't dilute) and milk, bring to boil.
• Add Cheese and Heat until cheese melts. Optional, serve with bacon bits on top.

SLOW-COOKER LOADED POTATOES O'BRIEN SOUP

Steps:

• Mix Neufchatel, sour cream and dressing mix in slow cooker sprayed with cooking spray until blended. Gradually stir in milk, then broth.
• Add potatoes, cheese and bacon bits; mix well. Cover with lid.
• Cook on LOW 3 to 4 hours (or on HIGH 1 to 2 hours), stirring after each hour.
• Sprinkle with onions before serving.
