PARMESAN CRUSTED CHICKEN
Parmesan crusted chicken with chicken, parmesan cheese, and breadcrumbs may only be 4 ingredients but it makes the most delicious dinner!

Steps:
- Slice each chicken breast half lengthwise so you have a total of 8 long and thin chicken cutlets.
- In one bowl whisk together mayonnaise and ½ cup parmesan cheese. In a second larger bowl mix together breadcrumbs and remaining ¼ cup parmesan cheese.
- Slather each cutlet in the mayonnaise mixture, then press into breadcrumb mixture, making sure to coat chicken on all sides.
- Place chicken in a roasting pan (or lipped baking sheet) and sprinkle with garlic salt.
- Bake at 425F for 25 - 30 minutes until browned and crispy and chicken has reached a safe internal temperature of 165F.

- Heat oven to 400°. Line a large baking pan with foil and lightly grease or spray with nonstick cooking spray.
- Wash chicken thighs and trim excess fat and skin. Remove skin, if desired. Pat dry and sprinkle with salt and pepper.
- Combine the melted butter with mustard, honey or syrup, and garlic powder in a shallow bowl. In another shallow bowl, combine the panko crumbs with shredded Parmesan, paprika, 3/4 teaspoon salt, 1/4 teaspoon pepper, and parsley.
- Brush or rub the chicken thighs with the butter and mustard mixture then press all sides in the panko mixture to coat thoroughly. Place on prepared baking sheet. Bake for 40 to 50 minutes, or until juices run clear when chicken is pierced with a fork.
NIF'S PARMESAN CHICKEN THIGHS
Made this up for company tonight and we really liked the results. The fresh bread crumbs and fresh parmesan really made this dish. I recommend cooking them on a rack so the coating is nice and crispy. Enjoy!

- Preheat oven to 375F and cut chicken thighs in half. Line a baking sheet with tin foil and set a rack on it.
- Mix egg and milk in a shallow dish and season with salt and pepper.
- Mix bread crumbs, parmesan cheese, Italian seasoning and seasoning salt in another shallow dish.
- Dip chicken in egg mix and place in bread crumbs. Press bread crumb mixture into thighs. Place thighs on rack and spray with olive oil.
- Bake for 30 minutes or until chicken reaches an internal temperature of 170°F.
