4 thinly sliced chicken breasts
1 tablespoon Italian seasoning
2 tablespoons butter
8 ounce sliced mushrooms
1/2 cup chicken broth
1/2 cup shredded mozzarella cheese
Fresh chopped parsley for garnish

Steps:

  • Preheat oven to 375 degrees. Salt and pepper chicken breasts and evenly season with Italian seasoning. In a large skillet over medium high heat add the butter. Brown each side of the chicken and place in 9x13 inch baking dish.
  • Add the mushrooms, and chicken broth and simmer until tender. Add to baking dish. Bake for 15 mins uncovered. Top with cheese and bake an additional 5 until cheese is melted and chicken is cooked throughout. Garnish with fresh chopped parsley.

6 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon paprika
1/2 pound fresh mushrooms, sliced
1 tablespoon butter
1/2 cup sherry or chicken broth
3 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup shredded part-skim mozzarella cheese

Steps:

  • Arrange chicken in a 13x9-in. baking dish coated with cooking spray. Sprinkle with paprika. Bake, uncovered, at 350° for 15 minutes., Meanwhile, in a large nonstick skillet, saute mushrooms in butter for 5 minutes. Add the sherry or broth, green onions, garlic, salt and pepper. Bring to a boil. Pour over chicken. , Bake until a thermometer reads 165°, 10-15 minutes longer. Top with cheese. Bake for 3-5 minutes or until cheese is melted.

2 tbsp olive oil
500g boneless, skinless chicken thigh
flour, for dusting
50g cubetti di pancetta
300g small button mushroom
2 large shallots, chopped
250ml chicken stock
1 tbsp white wine vinegar
50g frozen pea
small handful parsley, finely chopped

Steps:

  • Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.
  • Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

1 ½ pounds boneless chicken breast, cut into strips
8 ounces cremini mushrooms, sliced
5 ounces oyster mushrooms, stemmed and sliced
4 ounces shiitake mushrooms, stemmed and sliced
1 clove garlic, finely chopped
2 tablespoons all-purpose flour
½ cup white wine
2 cups chicken stock
½ teaspoon ground sage
salt and ground black pepper to taste
¼ cup heavy whipping cream
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a very large skillet over medium heat. Add chicken strips; cook and stir until browned, 1 to 2 minutes per side. Transfer to a casserole baking dish.
  • Place cremini mushrooms, oyster mushrooms, shiitake mushrooms, and garlic in the same skillet; cook and stir until tender, about 5 minutes. Stir in flour until well-incorporated. Slowly mix in white wine. Add chicken stock, sage, salt, and black pepper; bring sauce to a simmer and cook, until thickened, about 5 minutes. Remove from heat and stir in heavy cream.

4 skinless, boneless chicken breast halves
2 eggs, beaten
1 cup seasoned bread crumbs

20 g dried porcini mushrooms
olive oil
4 higher-welfare chicken thighs, boned, skinned and cut into bite-sized pieces
sea salt
freshly ground black pepper
2 cloves of garlic, peeled and finely sliced
350 g mixed fresh mushrooms, cleaned and torn
200 ml white wine
320 g dried spaghetti
300 ml single cream
150 g Parmesan cheese, grated
1 sprig of fresh basil, leaves picked

Steps:

  • I remember meeting a lovely old couple outside my parents' pub and when they heard I was going to Italy they told me to make sure I cooked turkey tetrazzini - I hadn't a clue what they were talking about and then, by chance, I saw a recipe for chicken tetrazzini in an old Italian cookbook and it's great - really tacky but gorgeous! Here's my version...
  • Preheat the oven to 200ºC/400ºF/gas 6. Put your porcini mushrooms in a bowl and pour over just enough boiling water to cover them (approx. 150ml/5½fl oz). Put to one side to soak for a few minutes. Heat a saucepan big enough to hold all the ingredients, and pour in a splash of olive oil. Season the chicken pieces with salt and pepper and brown them gently in the oil. Strain the porcini, reserving the soaking water, and add them to the pan with the garlic and fresh mushrooms. Add the wine, with the strained porcini soaking water, and turn the heat down. Simmer gently until the chicken pieces are cooked through and the wine has reduced a little.
  • Meanwhile, cook the spaghetti in plenty of boiling salted water according to the packet instructions and drain well. Add the cream to the pan of chicken, then bring to the boil and turn the heat off. Season well with salt and freshly ground black pepper. Add the drained spaghetti to the creamy chicken sauce and toss well. Add three-quarters of the Parmesan and all of the basil and stir well. Transfer to an ovenproof baking dish or non-stick pan, sprinkle with half the remaining cheese and bake in the oven until golden brown, bubbling and crisp. Divide between your plates, drizzle with extra virgin olive oil and sprinkle with the rest of the cheese before serving.

4 tablespoons extra-virgin olive oil
4 garlic cloves, thinly sliced
1 pinch crushed red pepper flakes
One 28-ounce can crushed tomatoes
One 15-ounce can crushed tomatoes
1 cup fresh ricotta
1 pound dried medium shells
1 pound cremini mushrooms, sliced
2 cups shredded rotisserie chicken, skin and bones discarded
1 1/2 cups shredded mozzarella
1 cup grated Parmesan
1 1/2 cups shredded Italian fontina cheese

Steps:

  • Preheat oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Stir in the ricotta and season with salt and pepper.
  • While the sauce simmers, heat the remaining 2 tablespoons oil in a large skillet over medium high heat. Add the mushrooms and 1/4 teaspoon salt and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Transfer the mushrooms to a large bowl.
  • Cook the shells in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the mixing bowl along with the mushrooms.
  • Add the tomato sauce, rotisserie chicken, the mozzarella and half of the parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the fontina cheese and the remaining Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest for about 10 minutes before serving.

  • Lay the chicken breast flat in a baking dish. Cover with mushroom mixture.

Unsalted butter, for the casserole dish
1 tablespoon olive oil
1/2 cup finely chopped onions
2 cups sliced mushrooms
4 bone-in, skin-on chicken breasts or thighs (or a combination)
Kosher salt and freshly ground black pepper
1 1/2 cups rice
1 cup white wine
One 10.5-ounce can cream of mushroom soup

Steps:

  • Preheat the oven to 350 degrees F. Butter a casserole dish and set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the onions and cook until beginning to soften, 2 to 3 minutes. Add the mushrooms and cook until golden, about 4 minutes.
  • Sprinkle the chicken liberally with salt and pepper. Push the onions and mushrooms to the side of the skillet, add the chicken skin-side down and and cook until the skin is browned, about 4 minutes. Remove the chicken to a plate.
  • Stir the rice into the onion and mushroom mixture and cook for 1 minute. Stir in the wine, bring to simmer and simmer for 1 minute. Stir in the soup and 1 1/2 cans of water and bring to a simmer.
  • Pour the rice mixture into the buttered casserole dish. Place the chicken on top skin-side up and cover with a lid or foil. Bake, stirring in more water 1/2 cup at a time if the casserole starts to dry out, until the rice is tender, about 30 minutes.

2 leeks, washed and thickly sliced
2 parsnips, peeled and cut into chunks
4 bay leaves
8 garlic cloves, unpeeled
1 onion, peeled and chopped
2 sprigs thyme
200 g mushrooms, cleaned
1 kg chicken piece, skin removed
1 sweet potato, peeled and chopped
salt and pepper

Steps:

  • Heat oil in large ovenproof dish. Fry leeks, parsnips, bay leaves, garlic and onion until they turn golden.
  • Add thyme and mushrooms and fry for a further minute.
  • Add sweet potato chunks and sit chicken pieces on top of the vegetables. Pour enough boiling water over to nearly cover the chicken.
  • Bake in 170c oven for 1hr, or until chicken is cooked through. Add salt and pepper to taste.
  • This can be served with couscous or whatever takes your fancy.

8 ounces sharp cheddar cheese, shredded
1 (6 ounce drained weight) jar sliced mushrooms, drained
3/4 cup chopped yellow onion

1/2 sleeve round buttery crackers (such as Ritz), crushed (about 15 crackers)*

Steps:

  • Preheat your oven to 375 degrees F. Spray a 2-quart baking dish with cooking spray.

8 ounces fresh mushrooms ((sliced))
1 ounce onion
1 ¼ cups pot barley ((rinsed))
3½ cups chicken broth
2 ounces thick bacon ((diced))
Salt & pepper ((to taste))
1 tablespoon chives for garnish ((optional))

Steps:

  • Preheat oven to 425º F.
  • Cut the chicken into bite size pieces, slice the mushrooms, rinse the barley, dice the bacon and onion, measure out chicken broth.
  • In a skillet or dutch oven heat the bacon over medium heat. Cook for about 4 minutues.
  • If there is too much fat, you can soak some up with a paper towel. Add the onion and cook for about 3 minutes to soften.
  • Add the diced chicken, and cook for about 4 minutes so meat is no longer pink.
  • Toss in the sliced mushrooms and cook for about 4 minutes so they start to cook down and release liquid.
  • Remove the pan from the heat.
  • If you have used a dutch oven, you can continue with the recipe in the same pot. If you have used a skillet, prepare a casserole dish with cooking spray.
  • Add the rinsed barley, chicken broth and seasonings to the cooked ingredients. Combine and place in the casserole dish, or leave in the dutch oven.
  • Cover and place in the oven. Bake for about 1 hour.
  • Remove from oven, dish into bowls and garnish.

1.5 lbs boneless skinless chicken breasts
1/2 tsp sea salt, or to taste
1/4 tsp ground black pepper, or to taste
1/4 cup gluten-free flour + 1 Tbsp gluten-free flour for the sauce
2 Tbsps clarified butter or ghee, divided
1 lb mixed mushrooms, sliced if needed (use any of your favorites, I used champignon and shimeji)
4 fresh garlic cloves, minced
1-1/2 cups low-sodium chicken bone broth or stock
1/3 cup freshly shredded mozzarella cheese
fresh curly parsley, chopped
avocado oil

Steps:

  • Preheat your oven to 375 degrees f.
  • Spray or brush a 9 x 13 baking dish with avocado oil.
  • If your chicken breasts are thick, then slice them in half right down the center to create nice thin breasts so they cook evenly.
  • Season the chicken with sea salt and pepper on both sides and add the flour to a shallow dish.
  • Lightly coat your chicken on all sides with flour.
  • Melt 1 Tablespoon of your ghee/butter in a large skillet over medium heat. Add in the chicken in 2 separate batches and cook for 2 minutes until golden brown then flip and cook for 2 minutes on the other side. Add the remaining 1 Tablespoon of butter for your second batch.
  • Transfer your golden brown chicken to your prepared baking dish.
  • In the same preheated skillet add in your mushrooms and sauté for 3-4 minutes.
  • Add in the minced garlic and cook for 1 minute more.
  • In a small bowl whisk the stock/broth together with 1 Tablespoon of flour until there are no visible lumps.
  • Pour this stock mixture into your skillet and bring to a simmer, stirring to remove any brown bits from the bottom of the pan.
  • Pour this mushroom sauce over the chicken in the baking dish then sprinklewith cheese.
  • Bake for 15-17 minutes, or just until chicken is cooked through and cheese is melted.
  • Sprinkle with freshly chopped parsley and serve hot.
