2 cups milk
1 large egg
1/4 cup flour
1 cup sugar
1 1/2 tablespoons finely grated orange rind
1 cup heavy cream
1 1/2 cups sugar
1 1/2 cups light corn syrup
1/4 cup butter
2/3 cup heavy cream
1/4 cup bourbon

Steps:

  • Pour the milk into a saucepan, and bring to a simmer.
  • Combine the egg, flour and 1/2 cup of the sugar in the bowl of an electric mixer. Start beating the mixture until it is thoroughly blended, and pour in the hot milk. Pour and scrape the sauce into a saucepan, and start beating over moderate heat. Cook until the mixture is thickened and smooth.
  • Put the remaining 1/2 cup of sugar into a small nonstick skillet, and cook, stirring, until the sugar is melted and starts to take on a light caramel color. Immediately add the orange rind, and blend, stirring constantly. Remove from the heat. Immediately add the caramel-orange mixture to the sauce and blend.
  • Line a mixing bowl with a sieve, and pour the sauce into it, pressing all around with the sides of a rubber spatula to extract as much flavor as possible from the orange rind. Discard the rind.
  • Add the 1 cup of heavy cream, and stir. Let cool. Pour the mixture into the container of a hand-cranked or electric ice cream maker, and freeze according to the manufacturer's instructions.
  • Meanwhile, to prepare the butterscotch sauce, put the 1 1/2 cups of sugar into a 12-inch nonstick skillet, and cook, stirring, until the sugar is melted and becomes a dark caramel in color. Add the corn syrup, stir to blend, and remove from the heat. Stir in the butter to blend. Stir in the 2/3 cup of cream and the bourbon. Spoon the sauce over the ice cream and serve.

4 inch piece vanilla bean or 1 1/2 teaspoons vanilla extract
1 cup whole milk
1 cup sugar
2 cups heavy cream
1 egg
2 egg yolks

Steps:

  • 3. Remove 1/2 cup hot milk mixture from saucepan and add slowly to beaten egg yolks while whisking vigorously. Whisk this mixture back into saucepan. Over low heat, cook mixture until it reaches 180 degrees on an instant-read thermometer, stirring constantly (about 5 minutes). Custard should not boil or bubble. If mixture starts to give off a fair amount of steam, take off heat for a few moments and stir vigorously. 4. Combine remaining 1/2 cup sugar with 1/4 cup water in small saucepan over medium heat. Do not stir but swirl pan vigorously until sugar dissolves. Increase heat to high and bring syrup to boil. Cover and cook for 2 minutes. Uncover and continue to cook until syrup takes on color. Swirl pan constantly at this point, moving pan off and on heat to slow down cooking. Remove from heat when syrup is dark and mahogany-colored. Pour into custard mixture (make sure there is a lot of extra room in the saucepan-the custard will bubble and froth) and whisk for about a minute. (The sugar syrup will harden at first and then dissolve as you whisk.) 5. Pour custard through fine-mesh strainer into nonreactive bowl. Remove vanilla pod from strainer and add to mixture. If using vanilla extract, add it to the custard now. Place bowl into a large bowl filled halfway with ice water to cool. When mixture reaches room temperature, cover bowl with plastic wrap and refrigerate. It is best to refrigerate mixture overnight or for at least 6 hours. 6. When chilled, remove vanilla pod (if using), stir, and place into ice-cream machine. Follow manufacturer's directions. When done, place ice cream in the freezer to freeze solid. (The ice cream will still be soft after churning in the machine.)

Big pinch of salt
Good quality vanilla ice cream, for serving

Steps:

  • Add the butter, sugar, corn syrup and heavy cream to a medium-size saucepan and cook while stirring over medium heat for 5 to 7 minutes.
  • Once the butterscotch appears syrupy and thick, remove the saucepan from the heat and carefully stir in the bourbon. (It will sputter and boil when you do this.) Stir in a big pinch of salt and let cool slightly before serving.
  • Serve the butterscotch over good vanilla ice cream.

1 cup firmly packed brown sugar
2 tablespoons butter
1 tablespoon vanilla
1 1/2 cups whipping cream
2 cups half-and-half or 2 cups light cream
6 large egg yolks

Steps:

  • In a 1 to 2-quart pan over medium heat, stir brown sugar, butter and vanilla until butter is melted, sugar is dissolved and mixture is bubbly, 3 to 4 minutes.
  • Whisk in 1/2 C.
  • whipping cream until smooth.
  • Remove butterscotch mixture from heat.
  • In a 3-4 quart pan over medium high heat, combine remaining 1 cup whipping cream and the half-and-half, bring to a simmer.
  • Beat egg yolks to blend in a bowl.
  • Whisk 1/2 cup of the warm cream mixture into the eggs yolks, then pour egg yolk mixture into the pan with the remaining cream mixture.
  • Stir constantly over low heat just until mixture is slightly thickened, 2 to 4 minutes.
  • Immediately remove from heat.
  • Pour through a fine strainer into a clean bowl and whisk in butterscotch mixture.
  • Chill until cold, stirring occasionally, about 2 hours, or cover and chill up to 1 day.
  • Freeze mixture in an ice cream maker according to manufacturer's instructions.
  • Serve softly frozen, or transfer ice cream to an airtight container and freeze until firm, at least 6 hours or up to 1 week.

BOURBON BUTTERSCOTCH ICE CREAM

10g / 2 teaspoons butter
290g / 1½ cups cream
150g / ¾ cup dark brown sugar, tightly packed
20g / 2 Tablespoons bourbon
3g / ½ teaspoons kosher or sea salt
380g / 2 cups milk
50g / ¼ cup glucose syrup
100g / about 5 large egg yolks
texture agent of your choice (see below)

Steps:

  • Prepare the bourbon butterscotch. Place the butter in a medium heavy-bottomed saucepan over medium heat. Cook until the butter melts, sizzles, and begins to take on a brown, nutty color. When it's richly browned but not burnt, add the cream, brown sugar, bourbon, and salt. Cook the sauce, stirring occasionally to help dissolve the sugar, over medium-high heat until it comes to a boil. Transfer the sauce to a bowl and put it in the refrigerator to cool below 100°F, or body temperature.
  • Prepare an ice bath. Fill a large bowl two-thirds of the way with very icy ice water and place it in the refrigerator. Boil the milk and glucose. Put the milk and glucose in a medium heavy-bottomed saucepan, and place it over medium high heat. Cook, whisking occasionally to discourage the milk from scorching, until the mixture comes to a full rolling boil, then remove the pot from heat.
  • Temper the yolks and cook the custard. In a medium bowl, whisk the yolks. Add ½ cup of the hot dairy mixture to the yolks while whisking so the hot milk doesn't scramble the yolks. Pour the tempered yolks back into the pot of hot milk while whisking. Place the pot over medium-low heat and cook, stirring and scraping the bottom of the pot constantly with a rubber spatula to avoid curdling.
  • Chill. When you notice the custard thickening, or the temperature reaches 180°F on a kitchen thermometer, immediately pour the custard into a shallow metal or glass bowl. Nest the hot bowl into the ice bath, stirring occasionally until it cools down.
  • Mix the butterscotch into the custard and strain. When the custard is cool to the touch (50°F or below), remove the bowl from the ice bath and add the chilled butterscotch sauce, whisking until evenly combined. Strain it through a fine-mesh sieve to remove any bits of egg yolk. (Straining is optional, but will help ensure the smoothest ice cream possible.)
  • Cure. Transfer the cooled base to the refrigerator to cure for 4 hours, or preferably overnight. (This step is also optional, but the texture will be much improved with it.)
  • Churn. Place the custard base into the bowl of an ice cream maker and churn according to the manufacturer's instructions. The ice cream is ready when it thickens into the texture of soft-serve ice cream and holds its shape, typically 20 to 30 minutes.
  • Harden. To freeze your custard ice cream in the American hard-pack style, immediately transfer it to a container with an airtight lid. Press plastic wrap directly on the surface of the ice cream to prevent ice crystals from forming, cover, and store it in your freezer until it hardens completely, between 4 and 12 hours. Or, feel free to enjoy your ice cream immediately; the texture will be similar to soft-serve.

75g butter
175g short-grain pudding rice
140g light muscovado sugar
500ml double cream
1 tsp vanilla extract
600ml full-fat milk

Steps:

  • Heat the butter in a wide, shallow saucepan until starting to sizzle, then add the rice. Toast the rice gently for about 4 mins in the butter until just starting to turn light brown, then scatter over 100g of the sugar and cook for a few mins more until the sugar is starting to dissolve.
  • Pour in the cream, stir and boil until all the sugar has dissolved into a thick butterscotch sauce, then gradually stir in 500ml of the milk and the vanilla extract. Simmer everything gently for about 45 mins, stirring often. If towards the end of the cooking time the liquid is too thick and the rice isn't cooked yet, add another 100ml milk and carry on cooking. The finished consistency should be like a really creamy risotto.
  • When the pudding is cooked, tip it into a shallow, heatproof serving dish. Scatter the rest of the sugar over the top, and grill or blowtorch until sizzling and just starting to burn. Leave the sugar to form a crisp layer and serve hot or cold straight from the dish.
