2 lbs. red potatoes, unpeeled and sliced thinly (up to 3 lbs. can be used per size of pan / can sub ipeeled/i russet potatoes) *see notes
2 Tbl. butter
1 medium-sized white onion, diced
1 lb. lean ground beef
2 cups whole milk
1 cup heavy cream
1/3 cup flour
1/2 tsp. coarse ground black pepper, or to taste
1 1/2 tsp. salt
1/2 tsp. garlic powder
1 1/2 cups shredded extra-sharp cheddar cheese
1 1/2 cups shredded mozzarella and provolone blend cheese (I used Sargento's Off the Block Traditional)

Steps:

  • Preheat oven to 350º F. *If using a 9 x 13 baking dish, grease with butter or cooking spray.
  • Heat the 2 Tbl. butter in cast iron skillet. Add onions and cook for 1 to 2 minutes. Add beef and cook until no longer pink. Move skillet from heat, and with a slotted spoon remove beef and onions from skillet and place into a medium sized bowl. Pour out grease from skillet. Wipe out skillet with paper towel and butter insides and bottom if using to bake in.
  • In large bowl, whisk flour, salt, garlic powder and black pepper with milk and cream until completely combined.
  • Using a mandoline (or kitchen knife), slice potatoes into 1/8-inch slices. Layer 1/3 of the potato slices into the cast iron skillet (or baking dish). Sprinkle on 1/3 of the beef mixture, then 1/3 of the cheeses, then pour on 1/3 of the cream and milk mixture.
  • Repeat this twice more, ending with a sprinkling of cheese and a pouring on of the rest of the cream mixture. Cover skillet (or baking dish) with lid or foil and bake for 1 hour. Remove lid or foil, and bake for an additional 35 - 45 minutes or until potatoes are tender. (*Test with a knife. If a knife inserted near center goes through like butter with no resistance, potatoes are tender.) *I added an additional 1/2 cup cheese on top during last 15 minutes.)
  • Let rest for at least 15 minutes before serving.
  • *Garnish with a little snipped green onion or chopped parsley if you'd like.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, brown the ground beef; drain fat.

  • Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

Sliced potatoes in a delicious creamy sauce on the bottom then topped with a ground beef mixture --- instead of layering the potatoes you can just mix them with the sauce in a large bowl transfer to the baking dish then top with the ground beef mixture either way is fine but the potatoes will cook a little faster if mixed with the sauce --- feel free to throw in some cooked chopped green beans, mushrooms, corn niblets to the ground beef mixture or whatever you wish, I also like sprinkle some grated cheddar cheese over the potato mixture before topping with the ground beef and then again after the casserole has been cooked, this casserole is very versatile and you don't have to worry about the exact amounts --- to save time you may cook the ground beef mixture a day ahead and refrigerate, all ingredients may be reduced to half if desired to yield 4-6 and baked in a smaller baking dish--- NOTE some of the reviewers are stating that the potatoes are taking a long time to cook so you may want to pop them in the microwave first just to soften slightly,

1 medium onion, chopped
1 small green bell pepper, seeded and chopped (optional)
4 garlic cloves, finely chopped (or to taste)
1/2 teaspoon dried chili pepper flakes (adjust to taste) (optional)
1 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
1/2 teaspoon fresh ground black pepper (or to taste)
5 -6 russet potatoes (peeled and sliced thinly, or use as many as desired)
2 cups shredded cheddar cheese (or to taste)
2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted (using any other flavor of soup will not be as good)
1 small onion, chopped (about 1/3 cup)
3/4 light cream

Steps:

  • In a skillet cook the ground beef with onion, bell pepper and chili flakes (if using) until no longer pink; drain fat over a colander.
  • Return to pan and add in garlic, season salt and black pepper; cook stirring with a wooden spoon until the meat is lightly browned (I usually add in about 1-2 tablespoons bacon fat that I keep frozen in my freezer to the meat while browning for added flavor and it also helps to brown the meat) set aside.
  • For the sauce; in a medium bowl mix together the undiluted soup with onion, milk, sour cream, Parmesan cheese, garlic powder, seasoned salt and black pepper to taste; mix well to combine.
  • In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top.
  • Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills.
  • Bake covered with foil for about 1 hour at 350 degrees F.
  • Uncover and continue baking for another 20-30 minutes or until the potatoes are tender (baking time will vary depending on the thickness of your sliced potatoes).

14 ½ oz diced tomato, 1 can, drained
4 tablespoons fresh parsley, chopped, divided
1 teaspoon paprika
½ teaspoon pepper
6 cups spinach
2 cloves garlic, minced
1 cup ricotta cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Using a knife or mandolin cut the potatoes into slices ⅛-inch (3 mm) thick.
  • On a parchment paper-lined baking sheet, sprinkle half of the Parmesan cheese and spread until it is evenly covering the parchment paper.
  • Place the potatoes over the parmesan so each potato is overlapping the previous potato both vertically and horizontally. Continue until the entire pan is filled with potatoes.
  • Sprinkle to rest of the Parmesan evenly over the potatoes. Season with 1 teaspoon of salt. Bake for 30 minutes, until golden and the potatoes are flexible and slightly crispy.
  • In a skillet heat 2 tablespoons of olive oil over medium heat. Once the oil begins to shimmer, add the onions, and cook until caramelized, about 15 minutes.
  • Add the beef break up and mix with the onion until cooked. Mix in the tomatoes, 3 tablespoons of parsley, paprika, 1 teaspoon of salt, and pepper. Stir, cooking until the beef is browned and cooked through. Remove from heat.
  • In a skillet heat 2 tablespoons of olive oil over medium heat. Add the spinach, cook until wilted. Add 1 teaspoon of salt and the garlic. Stir to combine. Remove from heat.
  • In a bowl combine the spinach mixture and the ricotta. Set aside.
  • Evenly spread the spinach mixture over the cooked potato sheet.
  • Evenly spread the beef mixture over the spinach. Sprinkle mozzarella over the beef.
  • Take one end of the potato sheet holding the parchment paper begin rolling upward, making sure the ingredients are not coming out the ends.
  • Once the it is completely rolled place the potato roll on the parchment paper and bake for 15 minutes.
  • Sprinkle with parsley for garnish. Slice and serve immediately.

Steps:

  • In a large skillet, heat the olive oil over medium heat until shimmering. Add the onion and cook until golden, about 5 minutes.
  • Add the ground beef and break apart, then cook for 3 minutes until the meat is no longer pink. Add the pepper, salt, garlic powder, paprika, and tomatoes. Mix thoroughly.
  • Add the spinach and cook until just wilted, about 2 minutes. Remove the pan from the heat, cover, and set aside until ready to use.
  • Preheat the oven to 350˚F (180˚C).

1 medium brown onion (chopped)
1 tbsp olive oil
pinch of salt
pinch of ground black pepper
1 tsp garlic powder
2 tbsp all purpose flour
1/2 cup sweet marsala wine ((See Note 1))
1/2 cup beef broth
1/2 cup cheddar cheese (shredded)
1 4.7 oz box of scalloped potatoes ((See Note 2))
1/3 cup milk
2 cups boiling water
1 tbsp butter
parsley for garnish (chopped)

Steps:

  • Preheat oven to 450°F. In a large skillet over medium high heat add the oil and sauté the onion for 3 minutes. Add the ground beef, salt, pepper and garlic powder. Break up the ground beef with a spoon and brown for several minutes.
  • Deglaze the pan with the marsala wine and reduce to half. Sprinkle the flour on top of meat and stir. Cook for 2 minutes and then add beef broth. Stir as sauce will thicken. Cook for 2 minutes.
  • Pour meat mixture into a 9x9" casserole dish (or 2 smaller individual ones as pictured) coated with cooking spray and add the cheddar cheese on top.

Scalloped Potatoes are a delicious side dish recipe made with thinly sliced potatoes layered with a creamy onion sauce and baked in the oven.

1/4 cup butter
1 cup diced yellow onions
1/4 cup all purpose flour
1 cup chicken broth
2 cups milk
1 tsp salt

  • Preheat oven to 400F.
  • Cut the potatoes into 1/8 inch slices.
  • Dump the butter into a large pot on the stove over medium heat.
  • Once the butter is melted, add the diced onions to the pot and stir well.
  • Continue cooking until the onions are translucent.
  • Add the flour to the pot and stir well.

1/2 teaspoon hot sauce

3 cups cheddar, divided (shredded)

3 pounds russet potatoes, (peeled and thinly sliced)

  • Preheat oven to 350°F.
  • In a large skillet, cook and crumble beef with onion, garlic, 1 1/2 teaspoon salt, and 1/2 teaspoon pepper, until there is no longer any pink in the beef. Drain off excess grease. Stir in Worchestershire.

1 onion, finely diced
4 pounds potatoes, peeled
Salt and pepper
8 ounces cheddar cheese, shredded (about 2 cups)
1 10.75-oz can condensed Cheddar Cheese soup
1 12-oz can evaporated milk
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray a 13x9 baking dish with cooking spray and preheat oven to 350 degrees.
  • Add ground beef and onion to a large skillet, season with salt and pepper then cook until ground beef is cooked though and crumbled. Drain fat then set aside.
  • Cut potatoes into thin slices (less than 1/4 inch). Add one layer of potato slices to the bottom of the baking dish. Sprinkle potatoes with salt and pepper.
  • Top potatoes with 1/4 of beef mixture. Top beef with 1/4 of shredded cheese. Repeat this process three more times.
  • Combine condensed cheddar soup, evaporated milk, milk, salt and pepper then whisk until smooth. Pour mixture over potato/beef/cheese layers.
  • Cover dish tightly with aluminum foil then bake at 350 degrees for one hour. Remove foil then continue baking for an additional 15-20 minutes or until potatoes are tender and dish is light golden brown and bubbly.

1 pound lean ground beef
1 medium onion (finely diced)
1/4 cup butter
2 medium cloves garlic (minced)
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup chicken broth
1 teaspoon dried thyme leaves
1 teaspoon fine sea salt (plus more to taste)
1/2 teaspoon dried parsley
1/2 teaspoon ground black pepper (plus more to taste)
3 pounds russet potatoes (sliced into rounds about 1/4" thick - to stop them from browning keep them submerged in a bowl of water until you're ready to assemble the casserole, about 8 - 9 medium size potatoes) *
1 1/2 cups freshly shredded sharp cheddar cheese (divided)

Steps:

  • Preheat the oven to 350 F (176 C).
  • Heat a large nonstick skillet over medium heat, add the ground beef and onion, and cook until the beef is no longer pink (about 10 minutes). Once it's finished cooking, remove the beef from the pan, discard any grease, and wipe out the skillet.
  • Return the skillet to the stove on medium heat, and add the butter. Once the butter is melted, add the garlic and saute for about 2 minutes (or until it's aromatic).
  • Turn the heat down to medium-low and whisk in the flour (mix until the flour and butter have combined and reached an even texture). In a large bowl (or large liquid measuring cup), mix together the milk and chicken broth, then whisk the liquid into the butter and flour roux, about 1/3 cup at a time at a time. In between each addition of liquid, whisk until the sauce has reached a smooth consistency. Continue until all the liquid is incorporated into the sauce.
  • Once all the liquid has been added and the sauce is smooth, whisk in the parsley, thyme, salt, and pepper. Bring sauce to a light boil over medium-high heat for about 1 minute to thicken, then stir in 1 cup of the shredded cheese.
  • Lightly grease an 13 x 9 casserole dish and lay 1/3 of the potatoes evenly along the bottom of the pan. Sprinkle the potatoes with salt and pepper, then spread 1/3 of the sauce and 1/3 of the ground beef evenly over the potatoes.
  • Repeat this step two more times, creating 3 layers. Add the rest of the shredded cheese to the top layer. Cover the casserole with aluminum foil (make sure that the foil isn't touching the casserole so that the cheese doesn't stick to it), and bake for 1 hour.
  • After 1 hour, remove the foil from the dish, and bake for another 15 minutes. Finish it off by broiling it for 3 - 4 minutes (or until the cheese is bubbling and golden brown in some areas).
  • Carefully remove the casserole from the oven and allow it to rest for 15 minutes before serving.

1 box of Idahoen Homestyle scalloped potatoes
1 bag of frozen mixed veggies - 1 1/2 cups worth or 1 1/2 cup of canned and drained mixed veggies
2 lbs of lean hamburger meat cooked, drained
1 1-2 cups of shredded cheese
1 tbsp of dried onion
1 tbsp of garlic pepper
salt to taste

Steps:

  • Start by following your boxed potatoes and get it mixed up in a 3-5 qt casserole dish. Then add your cups of frozen or canned mixed veggies, and mix them in fairly well. Pop it in the oven and bake it according to you scalloped potatoes bake time. While its baking cook up your hamburger, season it with the seasoning listed, drain and set aside. When the scalloped potatoes/veggies are done baking, pull the dish out and add in your hamburger meat. I mix it around pretty well. I top it with the cheese (add more if you would like) and I bake it for about 8 more mins. (until cheese is gooey on top) You can serve this with a dollop of sour cream on top if you choose.
