Quick Yogurt Scones image

Easy to make with staple ingredients, these scones are wonderful for breakfast or with a nice cup of hot tea or coffee. The recipe came from a cookbook called "Stand By Your Pan: Country Music Cookbook" by Diane Pfeifer. Her funny alternative country-music-inspired title for the recipe is "Diggin' Up Scones" :)

3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
6 tablespoons cold margarine
2 tablespoons brown sugar
1 1/4 cups plain low-fat yogurt
2 eggs
1/2 cup raisins

Steps:

  • Preheat oven to 400 degrees. Grease a large baking sheet.
  • Sift together the flour, baking powder, baking soda, and salt With a pastry cutter, cut the flour mixture together with the cold margarine and brown sugar until well blended.
  • In a small bowl beat together the yogurt and 1 egg. Pour into the pastry mixture. Add raisins and stir just until mixed.
  • Drop by rounded 1/4-cup measures onto the prepared baking sheet. Beat remaining egg and brush onto tops of scones. Bake for 12-15 minutes. Serve warm.

  • Add yogurt all at once, stir with fork to make a soft slightly stick dough.
  • Cut in to rounds and bake 425F degrees for 12-15 minutes or until cooked.

1/3 cup plus 2 teaspoons sugar, divided
2-1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

3/4 cup orange yogurt
1/4 cup orange juice
2 teaspoons grated orange zest

Steps:

  • In a bowl, combine the flour, 1/3 cup sugar, baking powder, baking soda and salt; cut in butter until crumbly. In another bowl, whisk the yogurt, orange juice and zest; stir into dry ingredients just until moistened. Turn onto a floured surface; knead 10 times., Transfer dough to a greased baking sheet. 3 tablespoons freshly grated orange zest (from about 2 navel oranges)
1 1/2 cups dried currants
1 cup plus 2 tablespoons well-shaken buttermilk
2 large eggs
1/4 cup granulated raw sugar (turbinado or Demerara)

Steps:

  • In a bowl of a standing mixer fitted with paddle attachment stir together flour, granulated sugar, baking powder, baking soda, and salt. Add butter and zest and beat until mixture resembles coarse meal. Beat in currants. In a bowl whisk together buttermilk and eggs and add to flour mixture, beating just until a dough forms.
  • Preheat oven to 350°F. and line 2 baking sheets with parchment paper. On each sheet arrange six 1/2-cup mounds of dough about 1 inch apart. Sprinkle mounds with raw sugar and chill 15 minutes.

1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
6 tablespoons chilled butter, cut into pieces
1 cup plain yogurt
1 egg, beaten
1 teaspoon lemon zest
3/4 cup dried fruit

Steps:

  • Preheat oven to 425 degrees.
  • In a mixing bowl, mix the flour, baking powder, baking soda and salt. Mix well. Stir in the sugar. Cut in the butter until the mixture is crumbly.
  • In a small bowl, stir the yogurt into the beaten egg. Add to the crumbly mixture from Step 1. Add the lemon zest and dried fruits. Mix lightly.
  • Separate the dough in half. Turn each half onto a lightly floured surface. Pat each half into a circle about 1/2" thick, using a little extra flour to keep the dough from sticking to your hands and the surface.
  • Bake each half 10-12 minutes or until lightly browned. While still warm, cut each circle into 8 wedges. Let cool thoroughly.

1/2 cup orange juice, fresh is best
1/4 cup plain yogurt or 1/4 cup milk
1 large egg
1/2 teaspoon almond extract
3 cups flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons butter
1/2 cup sugar
1/2 cup almonds, finely chopped
1 tablespoon orange peel, grated

Steps:

  • Preheat oven to 375 degrees.
  • Mix together liguids with egg and extract, beat well with a fork (a 2 cup measuring cup is perfect for this.).
  • Mix together in a separate bowl flour, baking powder and soda, and salt.
  • Cut in butter until fine granules form.
  • Stir in sugar, almonds and orange peel.
  • Add egg mixture and stir with a fork until a soft dough forms, add a little extra milk if needed.
  • Turn out onto a board and give 5-6 kneads.
  • Divide dough in half and pat into circles on an ungreased cookie sheet; cut each circle into 6-8 wedges, depending what size scone you want.
  • For crisper scones seperate wedges on the sheet.
  • Bake about 25 minutes or until medium brown.
