ORANGE, WALNUT AND BACON WATERCRESS SALAD

Orange, Walnut and Bacon Watercress Salad image

Simple tangy salad with crunchy, oily walnuts making it more of an indulgence, than a neccesary chore. The measurements are less than exact as I don't know how juicy your oranges will be and everyone likes their salad dressing their own way.

Provided by Bromleygirl

Categories     Lunch/Snacks

Time 25m

Yield 2 serving(s)

Number Of Ingredients 7

100 g watercress
25 g walnuts
100 g unsmoked streaky bacon
1 -2 orange
1 -2 tablespoon walnut oil
balsamic vinegar
chili flakes (optional)

Steps:

  • Peel the oranges and cut out the segments, catching the juice as you go. Set aside.
  • Chop the bacon finely and start to fry in a pan (I don't use any oil as the fat from the bacon will run.).
  • When the bacon is nearly cooked to your likeing, throw the walnuts in the pan.
  • While they are browning off, divide the watercress into two bowls and place the orange segments on top.
  • Add the chili flakes to the pan if using and tip the contents onto the salad leaves and oranges.
  • Make the dressing by adding the walnut oil to the captured orange juice, adding the balsamic if you think neccesary. Whisk vigorously and season-remember bacon is pretty salty. Drizzle dressing over the salads.

BACON-WATERCRESS SALAD

Bacon-Watercress Salad image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 14

6 slices bacon
3 oranges
1 clove garlic, coarsely chopped
Kosher salt
2 tablespoons red wine vinegar
Freshly ground pepper
1/3 cup extra-virgin olive oil
1 medium bunch watercress, tough stems removed
1 cup fresh parsley leaves
1 small head escarole, outer leaves removed, torn
1/3 cup roughly chopped toasted hazelnuts
1/3 cup roughly chopped dried dates
1/3 cup crumbled blue cheese
Toasted cornbread, for serving (optional)

Steps:

  • Cook the bacon in a large skillet over medium-high heat until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
  • Meanwhile, segment the oranges: Cut the ends off, then cut away the peel and white pith. Working over a bowl, cut along both sides of each membrane with a paring knife to remove the segments, allowing them to drop into the bowl. Discard any seeds.
  • Put the garlic on a cutting board and sprinkle with 1/4 teaspoon salt, then mash into a paste with the flat side of a large knife. Whisk the vinegar and garlic paste in a large bowl and season with salt and pepper, then whisk in the olive oil. Add the watercress, parsley and escarole and toss to coat. Divide the salad among plates and crumble the bacon on top. Sprinkle with the oranges, hazelnuts, dates and blue cheese. Serve with cornbread, if desired.

WATERCRESS, ROCKET, SWEET PEAR, WALNUT AND PARMESAN SALAD

Watercress, Rocket, Sweet Pear, Walnut and Parmesan Salad image

Provided by Jamie Oliver

Time 15m

Steps:

  • What a pukka combination, simple and classy. Don't try to make this when you feel like it, make it when you can buy perfect pears, otherwise it will taste naff. For 1 person I normally use around 1/2 a pear, 2 big handfuls of watercress and 2 big handfuls of rocket. If the pear skins are nice I just give them a wash, if not I remove them with a peeler. Then cut them in 1/2 and deseed. It doesn't really matter how you cut them up. Sometimes in big rough chunks, maybe sliced up or even grated. Then place into a bowl with the watercress and rocket. The pepperiness of the leaves works so well with the sweetness of the pear. Drizzle with good extra-virgin olive oil just to coat, a small squeeze of lemon juice (because the pear juice is slightly acidic but very tasty), and season well with salt and freshly ground black pepper. Toss all this together and serve. Shave over Parmesan or pecornio, crumble your nuts over and tuck in. I love this salad with roasted meat or as a starter on its own.

Soft-boiled egg, bacon & watercress salad image

Crispy bacon and a perfectly cooked egg with oozing yellow yolk is a brunch staple - this version teams it with watercress

Provided by Good Food team

Categories     Breakfast

Time 15m

Number Of Ingredients 9

2 large eggs , at room temperature
1 shallot , very finely chopped
1 tbsp red wine vinegar
1 heaped tsp wholegrain mustard
2 tbsp rapeseed oil
handful chives , snipped (optional)
4 thick rashers streaky smoked dry-cured bacon
2 slices good white crusty bread (ideally sourdough)
2 good handfuls British watercress , thick stems removed

Steps:

  • Put the eggs in a pan of cold water and bring to the boil. Boil for 3 mins, then lift into a bowl of iced water and cool completely. Very carefully peel away the shells. Leave the eggs in the iced water until you finish the recipe, or for up to 1 hr ahead.
  • Mix the shallot with the vinegar and a pinch of salt, then set aside for a few minutes to soften. Whisk in the mustard, oil and chives, if using, to make a dressing.
  • Heat the grill to low-medium and cook the bacon until crisp right through. Remove the bacon, then brush the bacon juice and fat all over the bread. Grill the bread for about 1 min on each side until crisp, then cut into soldiers and keep warm.
  • Just before serving, bring the pan of water back to the boil and add the eggs. Boil for 1 min to reheat. Toss the dressing with the watercress and divide between 2 plates. Top with an egg and 2 rashers of bacon, with the toast to the side. The egg yolks will still be runny inside.
