RANCH STEW AKA COWBOY STEW

Ranch Stew Aka Cowboy Stew image

This is one of my family favorites that I have made for years. It is super easy to throw together and contains ingredients that I always have on hand. When I make this I have to double the recipe because it tastes even better the next day! Ranch Style beans are a western style pinto bean made with a flavorful sauce. They add a lot of the flavor to this recipe so try not to substitute them if possible.

Everyone will love Slow Cooker Ranch Style Beans. The slow cooker does all the work for this delicious meal. Try Crock pot ranch style beans recipe.

Provided by Eating on a Dime

Categories     Main Course

Time 8h15m

Number Of Ingredients 10

1 pound dried pinto beans
6 ounces tomato paste
½ cup chopped onions
1 clove minced garlic
1 tablespoon chili powder
dash crushed red pepper flakes
1 teaspoon salt
1 teaspoon cumin
½ teaspoon dried marjoram
7 cups water

Steps:

  • Place all of the ingredients in the crock pot in order. I like to put the water in last because it tends to 'mix' everything nicely together.
  • If you do not like to mince garlic yourself, you can substitute 3-4 teaspoons of bottled minced garlic. (This is an indulgence, but it is a big convenience and sometimes you can find it marked down. Plus, one little bottle will last a long time.)
  • Cook on low 8 hours or high for 5 hours.
  • Serve hot and toss a pinch (or two) of shredded cheese on top for a little extra yum!

SPRING HILL RANCH'S BEEF TONGUE STEW

Spring Hill Ranch's Beef Tongue Stew image

This recipe is for a Basque tongue stew. It is a wonderful traditional beef stew which I learned to cook while living in northeastern Nevada. If you've never used beef tongue as an ingredient before, handling it takes a little getting used to. You simply have to forge onward and get over it! LOL! The flavor is similar to goat,...

Provided by Wiley P

Categories     Beef

Time 2h15m

Number Of Ingredients 15

2 1/2 to3 lb beef tongue
2 medium carrots, chopped
15-20 sprig(s) fresh parsley
2 medium bay leaves
15 peppercorns
1 medium white onion, peeled and quartered
FOR THE SAUCE:
1/4 c olive oil
8 clove garlic, peeled and crushed
2 medium white onions, peeled and diced (about 2 cups)
1 large green bell pepper, diced (about 1 1/2 cups)
1 can(s) (28 ounces) diced tomatoes, drained
1/4 c chopped parsley (or 2 tablespoons dried parsley flakes)
5 c beef broth or stock
we often throw 2 or 3 chopped potatoes in while making the sauce

Steps:

  • 1. Place the beef tongue, chopped carrots, parsley, bay leaves, pepper corns and quartered onion in a 6 qt pot (or pressure cooker) with sufficient water to cover. Bring to a boil, then reduce to rolling simmer covered for 2 1/2 hours. If cooking in a pressure cooker, cook at high pressure (15 psi) for 60-75 minutes, then allow pressure to release normally.
  • 2. Remove the tongue. Peel off the skin and trim the underside a bit. Discard the first 1/4" slice from the back. Then cut 1/4" slices crosswise to tip of tongue. You then add these slices to the prepared sauce (directions following) and simmer covered for about 45 minutes after which you continue simmering for one hour uncovered, stirring occasionally. Then serve the slices covering them with the sauce.
  • 3. For the sauce: While the tongue is cooking, in a 6 quart saucepan sauté the garlic, onion and green pepper in oil. Add the tomatoes, and parsley. Simmer until the tomatoes are tender, about 10 minutes. Add the beef stock, cover the pot and simmer it for 1 hour. Remove the cover and simmer it for another hour to allow reduction and thickening, stirring occasionally. Add the tongue slices as described above to finish the cooking process.

MARY AND CHARLIE CHARLES' HOPKINS COUNTY STEW

Mary and Charlie Charles' Hopkins County Stew image

Provided by Food Network

Categories     main-dish

Time 4h

Yield 10 plus gallons

Number Of Ingredients 12

10 large frying chickens
2 gallons cream-style canned corn
3 (28-ounce) cans whole tomatoes
2 (46-ounce) cans vegetable juice (recommended: V-8 brand)
2 (46-ounce) cans tomato juice
20 pounds Irish potatoes, diced
8 pounds onions, diced
1 (2-ounce) bottle chili powder (recommended: Mexene brand)
1 small bottle seasoning salt (recommended: Morton brand)
1 cup sugar
Salt and pepper
Butter

Steps:

  • Cook chicken until tender in a 10-gallon (or larger) cast iron pot outdoors, over a hardwood fire. Use just enough water to cover the chicken as it simmers. When chicken is tender, remove it from pot and reserve broth. There should be about 4 gallons left after chicken is finished cooking. Bone, skin and dice chicken into bite-sized pieces.
  • Place diced chicken, cream-style corn, tomatoes, vegetable juice, tomato juice, potatoes, onions, chili powder, and seasoning salt into the pot of reserved broth and heat over open fire stirring frequently to prevent scorching until potatoes are tender. Add sugar, then season with salt and pepper, to taste. Continue to simmer stew over fire pit until serving time.
  • Transfer to individual bowls and melt a small amount of butter into stew just before serving. Serve with crackers or cornbread, cheddar cheese and dill pickles.

SMALL CROCK POT BEEF STEW

Small Crock Pot Beef Stew image

Provided by Dan Mikesell AKA DrDan

Categories     Main Course

Time 8h30m

Number Of Ingredients 15

1 ½-2 lbs boneless beef chuck-eye roast (trimmed and cut into 1 inch chunks)
2 teaspoons vegetable oil
1 onion (diced)
2 cloves garlic (minced or pressed)
3 oz tomato paste
1 cup low-sodium beef broth
1/2 lb red or Yukon gold potatoes (cut into 1-inch chunks)
2 carrots (peeled cut into 1/2 inch medallions)
2 tablespoons soy sauce
1 tablespoons Minute tapioca
1 bay leaves (Optional)
1/4 teaspoon dried thyme (Optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cups frozen peas

Steps:

  • Start by trimming about 1 1/2 to 2 pounds of boneless chuck roast or use stew meat if you are lazy. Give it a light dusting of flour and place in hot oil over medium-high heat in the large nonstick pan. Brown for about 7-8 minutes. Move the meat to the crock pot but keep any liquid in the pan.
  • While browning meat, peel 2 carrots and cut into 1/2 inch thick medallions. Scrub 1/2 pound of red or Yukon gold potatoes and cut them into chunks. Other potatoes could be used but if using russet potatoes, peel also.
  • Dice 1 medium onion. Crush or mince 2 cloves of garlic. Add onion, 3 oz. of tomato paste, and 1/4 tsp salt into the hot pan. Cook until onions are soft and lightly browned. Add the garlic for the last minute.
  • When the onion is ready, add 1 cup of beef broth to the pan and scrape any brown bits from the bottom of the pan.
  • Add all ingredients except the peas in the crock pot, stir well. Cook on low for 8 hours or high for 4 hours. Add the frozen peas for the last hour of cooking.
