- For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
- For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
- In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
- Set aside 2 tablespoons for topping later.
- Place salmon fillets inside the bowl and make sure each side is covered with sauce.
- Sear the salmon 2-3 minutes on each side.
- Brush the tops with the sauce set aside.
- With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
- Drain under cold water to stop the cooking.
- In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
- On each plate, serve a filet of salmon and scoop of broccoli.
- Top with reserved marinade and sprinkle parsley for garnish.

- Preheat the oven to 400 degrees F (200 degrees C).
- In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.
- Place the dish in the preheated oven, and roast for about 25 minutes, or until the onions are browned and tender. Remove the dish from the oven, and increase the temperature to 450 degrees F (220 degrees C).
- Push the onion and orange slices to the outer edge of the baking dish, and place the salmon fillets in the center. Season with the remaining half of the herb mixture. Whisk together the orange juice, lemon juice and honey in a small bowl. Pour evenly over the salmon.
- Bake for 12 to 15 minutes in the preheated oven, or until the salmon is opaque in the center. Remove fillets to a serving dish, and discard the roasted orange. Garnish fillets with roasted onions and fresh orange slices.

- Heat butter (or oil) in a pan or skillet over medium-high heat. Sear salmon skin-side up for 3-4 minutes. Flip and sear for 2 minutes.
- Pour in the orange juice and allow to reduce to half the quantity (it takes about 1 minute to reduce down if your pan is hot enough). Add the garlic and cook until fragrant (30 seconds). Move the salmon to the sides of the pan and add in the honey and soy sauce, stirring well to combine all of the flavours together.
- Bring to a simmer until reduced to a nice syrup (this takes about another 30 seconds to 1 minute), and move the salmon around in the sauce to evenly coat. Remove from heat once the salmon is cooked to your liking.

- Preheat oven to 400F., with the oven rack in the centre of the oven.
- Add a little olive or cooking oil onto a baking sheet and use a brush to evenly coat the bottom of the baking sheet. Set aside.
- Pat the salmon or trout fillets dry with paper towel. Brush the top of the salmon lightly with olive oil, then season with salt and freshly ground pepper. Lay the fillets onto the prepared baking sheet, skin side down.
- Make the sauce by stirring together all the sauce ingredients. Set aside until needed.
- *Note: Baking time will vary depending on the size/thickness of your fish. Your first baking period should produce a fish that is cooked/lighter coloured on the outside, but still not quite cooked through the thickest part. Extend your baking time if needed.When oven is preheated, place the salmon into the oven and roast for 10 minutes. (Fish should be cooked-looking on the outside edges with the thicker middle still a little pink at this point). Remove from oven and baste the fish generously with some of the sauce and place a few orange slices on top, if desired. Return to the oven for an additional 5 minutes. Watch closely so the sauce doesn't begin to scorch, as that will introduce a bitter taste to the sauce.

- Squeeze the orange and have ready the juice.
- Place in a pan the olive oil and let it heat for a while. If it is possible, choose to use a grill type pan (that is not with a flat surface). This will give a better look to your fillets.
- As soon as the oil is hot enough place your fillets in the pan. Let them cook for 2-3 minutes on one side and then turn it over to cook both sides. When you turn it over, season with salt and pepper and add the half portion of ginger over the two fillets.

- In a medium bowl, whisk together honey and hot water until the honey dissolves. Add the ginger, garlic, orange juice, orange zest, soy sauce, rice vinegar, red pepper flakes, and ½ teaspoon salt, and whisk to combine.

- Creamy (Beer) Mustard Sauce. We love this very simple sauce and use our homemade beer mustard to make it. Use your favorite whole grain mustard instead and if you are craving a bit of heat add cayenne.
- Gose Beurre Blanc. This sauce is a fun, simplified take on the classic French beurre blanc. We use lacto soured Gose ale which provides acidity and gives the sauce a unique depth.
- Lemon Butter Thyme Sauce. This silky sauce can be made with fresh thyme or the dried version. If you want to play up the lemon essence consider adding minced preserved lemon rind along with the garlic.
- Spinach Cream Sauce. Flavor infused and loaded with wilted spinach. Recipe here.
- Garlic Parmesan Cream Sauce. Do not skip the flour addition in this one – it is needed to assist the cheese in blending with the hot sauce base. If you need a gluten free option, substitute with corn starch.

- For the fish: Julienne the orange zests and blanch them in boiling water for 2 minutes. Remove and set aside for later use. Remove the white outer part from the oranges. Slice the oranges (into approximately 3/8-inch slices).
- Grease the bottom of a baking pan. Add the salmon and season to taste. Cover the fillets with a pinch of crushed coriander seeds, half of the zests, shallots, and the oranges slices. - Make the sauce by bringing the white wine, orange juice, saffron, sugar and shallot to a boil in a small pot. Simmer strongly for 5 minutes, then turn off the heat and puree the sauce in a blender. Return it to the pot and turn the heat to low. Add salt to taste and keep warm, but don't boil it.
- Cook in the greens in 2 tablespoons of butter or oil over high heat in a large saute pan, stirring constantly until they wilt. Add the splash of water, the orange zest and some salt and cover the pot. Lower the heat to medium-low and steam the greens for 2 minutes. Turn off the heat.
- Sear the fish by heating the remaining butter in a pan large enough to hold the fish -- if you don't have such a pan, put a baking sheet in the oven and set the oven to 200°F so you can keep the fish warm as you do this in batches. Heat the butter over high heat until it stops frothing. Pat the fish dry with paper towels and set it skin-side down in the hot butter. Turn the heat down to medium-high for a typical trout fillet (like you see in the picture) or to medium if you are working with a thicker piece of fish.
- Let the fish cook undisturbed for 2 minutes, then use a large spoon to baste the meat side of the fish with the hot butter. Do this constantly for 90 seconds, then give it a rest. Thin pieces of trout will only need this quick basting to cook through, but thicker pieces of fish will need a second or even third round of basting. When you are done basting, salt the meat side. The skin side should lift off the pan easily after about 4 to 5 minutes of steady cooking. The moment you take the fish off the heat, salt the skin side.
