Healthy Fish Tacos with Mango Salsa image

A very healthy and Hawaiian-style fish taco. For a heartier taco add some coleslaw on top of the mango salsa. If you don't have Mahi-Mahi, substitute any firm, thick white fish.

1 mango - peeled, seeded, and chopped
2 avocados - peeled, pitted, and chopped
1 cup chopped tomato
½ cup diced red onion
½ cup diced red pepper
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons canola oil
2 tablespoons brown sugar
1 lime, juiced
1 teaspoon cider vinegar
1 dash hot pepper sauce, or to taste
salt and ground black pepper to taste
8 taco shells
4 (6 ounce) mahi mahi fillets, cut into 1-inch slices
1 teaspoon ground black pepper
1 teaspoon paprika
½ teaspoon salt
2 tablespoons olive oil

Steps:

  • Stir mango, avocado, tomato, red onion, red pepper, parsley, canola oil, brown sugar, lime juice, cider vinegar, hot pepper sauce, salt, and ground black pepper together in a bowl. Refrigerate salsa for at least 1 hour.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat taco shells in preheated oven until crisp, about 5 minutes.
  • Season mahi mahi with 1 teaspoon ground black pepper, paprika, and 1/2 teaspoon salt.
  • Heat olive oil in a skillet over medium-high heat. Cook mahi mahi in olive oil until fish flakes easily, about 3 minutes per side.
  • Place mahi mahi slices in taco shells and top with mango salsa.

1 pound cooked small shrimp
1 tablespoon olive oil, or to taste
3 cloves garlic, minced
salt to taste
2 tomatoes, diced
1 mango, diced
1 avocado, diced
½ green bell pepper, diced
3 tablespoons lime juice
1 green chile pepper, diced
1 teaspoon white sugar
2 cups chopped fresh cilantro
¼ cup tequila
3 tablespoons lime juice
12 warm corn tortillas, or as needed

Steps:

  • Combine shrimp, olive oil, garlic, and salt in a bowl. Let sit while you prepare the salsa.
  • Combine tomatoes, mango, avocado, bell pepper, 3 tablespoons lime juice, chile pepper, and sugar in a bowl. Mix until salsa is evenly combined.
  • Heat a large skillet over medium heat. Add shrimp; cook and stir until moisture evaporates, 3 to 5 minutes. Stir in cilantro, tequila, and 3 tablespoons lime juice.
  • Serve hot shrimp and salsa over corn tortillas.

2 tablespoons lime juice
fresh cilantro, a small bunch, finely chopped
1 teaspoon ground cumin
1 teaspoon dried ancho chile powder
1/2 teaspoon fine sea salt
26 ounces raw shrimp, shelled
2 -4 tablespoons vegetable oil
8 -10 corn tortillas, warmed
sour cream, to serve
fresh ground black pepper
1 mango, flesh finely diced
3 kiwi fruits, flesh finely diced
1 small red onion, finely chopped
1 fresh green chile, very finely chopped
fresh cilantro, a few sprigs, finely chopped
1 lime, juice of

Steps:

  • To prepare shrimp--combine the lime juice, cilantro, cumin, chili powder, and salt in a bowl.
  • Add the shrimp and toss well to coat evenly.
  • Cover and set aside until needed.
  • To prepare salsa--put the mango, kiwis, onion, chili, cilantro, and lime juice in a small bowl.
  • Mix well to combine and set aside until needed.
  • Heat the oil in a large frying pan set over high heat.
  • Add as many shrimp as will fit in a single layer--you may need to work in batches.
  • Cook for about 5 minutes until pink and cooked through; season with pepper to taste.
  • To serve, put a generous helping of the shrimp in the middle of each tortilla; top with a spoonful of the Mango-Kiwi Salsa and sour cream.
  • Serve immediately with extra sour cream and salsa on the side.
