1 Honeybell orange, juiced
1/4 cup olive oil
1 tbsp white wine vinegar
1 tbsp fresh rosemary, finely chopped
1/2 tsp sweet Hungarian paprika
1/4 tsp kosher salt
1/8 tsp dried mustard

Steps:

  • Combine all ingredients in a small bowl. Whisk together. Store in an airtight container in the fridge for up to a week.

1 qt. (4 cups) HEINZ Distilled White Vinegar
6 fresh rosemary sprigs
1 orange

Steps:

  • Cook vinegar in saucepan until it reaches 190°F. Meanwhile, rinse rosemary, then orange. Cut orange lengthwise in half, then slice crosswise. Place rosemary, then oranges evenly in 3 warm sterilized pint-size jars.
  • Pour vinegar into jars, filling to within 1/4 inch of rims; cover with lids.
  • Let stand in cool dark place 3 to 4 days.
  • Pour vinegar mixture through cheesecloth-lined fine-mesh strainer into sterilized decorative bottles. Discard strained solids. Cover bottles with lids. Let stand at room temperature up to 1 month before using as desired.

Low-fat tender chicken in a rich gravy with rosemary and balsamic vinegar

4 boneless skinless chicken breasts
2 tbsp olive oil
3 tbsp balsamic vinegar
150ml/¼ pint fresh orange juice
150ml/¼ pint chicken stock
2 tsp chopped fresh rosemary leaves
1 tsp light muscovado sugar
knob of butter
orange segments and fresh rosemary sprigs to garnish
boiled rice and green salad to serve

Steps:

  • Put the chicken between pieces of cling film and flatten slightly by bashing with a pan. Unwrap and sprinkle on both sides with pepper. Heat the oil in a pan over a medium heat, then fry the chicken for 5 minutes, turning halfway through.
  • Pour 2 tbsp vinegar over the chicken, add the orange juice and stock and sprinkle with the rosemary and salt. Bring to the boil, lower the heat and bubble gently for 5 minutes until tender, spooning with the sauce frequently and turning chicken halfway through.
  • Stir in the sugar, butter and rest of the vinegar, then sizzle for a few minutes until reduced and glossy.
  • Put the chicken in a serving dish, spoon the sauce over and garnish with orange and rosemary. Serve with rice and a crisp green salad.

1 sprig fresh rosemary
2 strips orange zest
2 cloves garlic

Steps:

  • Pour the rice vinegar through a funnel into a 20-ounce bottle. Gently add the rosemary, orange zest and garlic cloves to the bottle until completely submerged. Add a tight-fitting spout with a rubber stopper. You can use the vinegar right away or refrigerate it for up to 1 month to allow the flavors to marry and infuse the vinegar. The longer the vinegar sits, the more the flavors will infuse.

10 pitted oil-cured black olives
6 blood oranges
6 Cara Cara oranges

Steps:

  • Pour vegetable oil into a small heavy saucepan to a depth of 1". Prop deep-fry thermometer in oil so bulb is submerged; heat oil over medium heat to 350°F. Add four 3" rosemary sprigs to oil and fry until crisp and bright green, 10-15 seconds. Transfer to a paper towel-lined plate; season lightly with kosher salt. Add 10 pitted oil-cured black olives to oil; fry until bubbling stops, about 4 minutes. Place on plate with rosemary. Strip rosemary leaves from sprigs; mince. Chop olives. Using a small, sharp knife, cut peel and white pith from 6 blood oranges and 6 Cara Cara oranges. Cut crosswise into 1/2" rounds; arrange on a platter. DO AHEAD: Oranges, rosemary, and olives can be prepared 6 hours ahead. Cover and chill orange slices. Separately store rosemary and olives airtight at room temperature.
  • Season oranges lightly with salt and freshly ground black pepper; drizzle with 2 tablespoons extra-virgin olive oil. Sprinkle chopped rosemary and olives over oranges.

1/2 cup chopped celery
Salt to taste, if desired
2 small oranges, peeled and sliced
3/4 pound cooked shrimp with spices (see recipe)
1 bunch watercress, rinsed and drained well, tough stems trimmed and discarded
1 tablespoon red-wine vinegar
3 tablespoons olive oil
1/4 teaspoon paprika
Salt to taste, if desired
Freshly ground pepper to taste
1/2 teaspoon finely chopped garlic
1/2 teaspoon chopped fresh rosemary leaves or 1/4 teaspoon dried

Steps:

  • Put the celery in a saucepan and add cold water to cover and salt to taste. Bring to the boil and simmer about 30 seconds. Drain and set aside to cool.
  • Arrange alternating, overlapping layers of oranges and shrimp on a bed of watercress. Sprinkle with the chopped celery.
  • In a small bowl, blend the vinegar with the oil, paprika, salt, pepper, garlic and rosemary. Pour the sauce over the salad and serve at room temperature.
