PINEAPPLE BROWN SUGAR-GLAZED BONELESS HAM
Boneless smoked ham makes a holiday centerpiece that's as easy to serve as it is to prepare. Dressed in pineapple rings and studded with cloves and maraschino cherries, it is a nostalgic dish that is classic and timeless. Finished with brown sugar glaze it comes out of the oven glossy and golden.

- Let the ham sit at room temperature for about 30 minutes. Preheat the oven to 350 degrees F.
- Place the ham on a cutting board. Using a sharp paring knife, score the top and sides in a diagonal crosshatch pattern about 1/4 inch deep. Push the cloves into the ham if using, placing them at the intersections of the cuts. Put the ham, scored side-up, on a rack set in a roasting pan.
- Drain the pineapple rings, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water into the bottom of the pan and tent the ham loosely with foil. Roast until an instant-read thermometer inserted in the thickest part of the ham registers 130 degrees F, about 1 hour.
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Bring to a simmer and cook, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the ham and carefully brush a third of the glaze all over. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes before slicing.

- Preheat the oven to 400 degrees F. Butter two 9-by-13-inch baking dishes with 1 tablespoon butter each.
- Stir together the Parmesan, thyme leaves, 1/3 cup of the heavy cream, half of the garlic, 1/2 teaspoon salt and some pepper in a medium bowl. Add the Yukon gold potatoes, toss to coat and spread evenly in one of the prepared baking dishes.
- Stir together the brown sugar, maple syrup, cinnamon and 1/2 teaspoon salt in a medium bowl. Add the yams, toss to coat and spread evenly in the other prepared baking dish.
- Cover both baking dishes with aluminum foil and bake for 20 minutes. Remove the foil and continue to bake until the potatoes and yams are tender when pierced with a fork, an additional 5 to 8 minutes. Let cool slightly. Reduce the oven temperature to 325 degrees F.
- Stir together the cream cheese, Gruyere, nutmeg, remaining 1/4 cup heavy cream, remaining garlic, 1/2 teaspoon kosher salt and a few cracks pepper in a medium bowl. Add the spinach and stir to combine and coat.
- Position the ham flat-side down on a cutting board with the fat cup facing up. Using a sharp knife, cut 1/2-inch-wide slices across the length of the ham about three-quarters of the way down through the ham.
- To assemble: Fill the space between the first 2 slices of ham with some of the creamed spinach, pressing to even out the filling. Skip 3 slices (so there are 2 spaces in between) and fill the next space with more of the creamed spinach. Continue in the same manner, dividing the creamed spinach evenly among every third space. Fill each space next to the creamed spinach with a layer of the scalloped potatoes, dividing the scalloped potatoes evenly among every third space. Fill each space next to the scalloped potatoes with a layer of the candied yams, until all the spaces are filled.
- Place the ham on a rack in a roasting pan, add 2 cups of water to the bottom and tent the ham loosely with aluminum foil. Bake until the ham is heated through and the potatoes are slightly golden, about 1 hour 15 minutes.
- In the meantime, melt the remaining 2 tablespoons butter in a skillet over medium-low heat. Add the shallot and cook until softened, about 5 minutes. Add the honey and heat through, whisking to combine. Season with a few cracks of pepper.
- Remove the foil and brush about half the glaze over the top of the ham. Return to the oven until the glaze is thick, glossy and deep golden, about 10 minutes more. Carefully transfer to a platter and pour the remaining glaze over top.

- Preheat oven to 350F and set out a large roasting pan.
- To a small bowl, add the brown sugar, thyme, allspice, cinnamon, orange zest, and stir to combine.
- Rub this all over the ham.
- Tightly wrap the ham in heavy duty nonstick foil and place it in the roasting pan. Bake for 30 minutes covered. While the ham bakes, make the glaze.
- Combine all ingredients in a small saucepan on the stove. Bring to a boil, and then reduce the heat to a low and allow the mixture to simmer on low for about 15 minutes, or until glaze has reduced in volume and thickened some; set aside off the heat.
- After the ham has been baking 30 minutes, remove it from the oven, carefully peel back the foil, evenly sprinkle the 1/4 cup crushed pineapple and juice associated, reseal the foil, return it to the oven, and bake it covered for 10 minutes. When done, the internal temp should be at 140F. Tips - Don't overbake so your ham doesn't dry out. Also remember that the internal temp will continue to rise even out of the oven, so I feel safe pulling mine out at about 135F.
- After this second baking of 10 minutes, remove it from the oven and turn the broiler to 500F.
- Peel back the foil, and carefully drizzle the orange pineapple glaze all over the ham.
- Place it uncovered under the broiler for just 3 to 4 minutes. Tip - Don't leave the kitchen and keep a very watchful eye on it so it doesn't burn! You want the glaze to caramelize but it can burn easily, in just one minute, and will taste terrible so be extremely careful and vigilant!
- Allow ham to rest for about 15 minutes before slicing and serving. Extra ham will keep airtight in the fridge for up to 5 days and in the freezer for up to 4 months.

- Preheat oven to 325°F.
- Using a sharp knife, score the ham into a diamond pattern about 1/4-inch deep and 1-inch apart.
- Stud the ham with whole cloves in the center of each diamond.
- Place ham fat side up in a shallow roasting pan (for easy clean-up line pan with aluminum foil, or use a heavy-duty disposable aluminum pan).
- Bake ham for 2 1/2 hours.
- Meanwhile, stir together the brown sugar, bourbon, orange marmalade, crushed pineapple, and prepared mustard. Heat to boiling over medium-high heat, stirring until sugar has dissolved.
- Remove ham from the oven.
- Spoon half of the glaze/sauce over the ham.
- Decorate ham with pineapple rings, using a few toothpicks to hold ring in place. Place a cherry in the center of each ring, and attach it with a toothpick.
- Return ham to the oven and bake for another 20 to 30 minutes.
- Transfer ham to a platter and allow to rest for 10 minutes before carving (be sure to remove all toothpicks).
- Pass the remaining sauce at the table.
